- Preheat an oven to 375 degrees F (190 degrees C). Prepare a baking sheet with cooking spray. Arrange the bacon on the prepared baking sheet, and sprinkle with 2 tablespoons brown sugar. Bake in the preheated oven until the bacon is crispy and the brown sugar is caramelized, 10 to 15 minutes. Immediately remove the bacon to a cutting board; cut into small pieces and set aside.
- Preheat a waffle iron; grease with cooking spray.
- Whisk the flour, 1/2 cup brown sugar, baking powder, baking soda, and salt together in a large bowl. Beat the eggs, buttermilk, vegetable oil, and vanilla together in a separate bowl; fold the wet mixture into the flour mixture. Add the bacon and stir, being careful to not over mix.
- Ladle the batter into the preheated waffle iron and cook until golden brown; serve hot.

- Preheat oven to 350 degrees F. Lightly grease 3-quart oven-safe casserole (8 x 10-inch or similar) with 1/2 tablespoon butter. In large bowl, whisk together egg yolks, buttermilk, cream, 1/3 cup syrup, vanilla and salt; reserve.
- On ungreased rimmed baking pan, spread waffle pieces in even layer and bake for 12-15 minutes or until crisp and lightly toasted. Increase oven temperature to 375 degrees F.
- Add waffle pieces and bacon to buttermilk mixture and toss to coat evenly. Pour into prepared casserole and tightly cover with foil.
- Bake for 45-50 minutes and remove foil. Melt remaining butter and brush over top of casserole and bake, uncovered, for another 10-15 minutes or until top is crisp and toasted. Top with fresh berries and remaining maple syrup, dusting with powdered sugar if desired, and serve warm.

- Heat oven to 350°F. Lightly grease 10x6-inch (1 1/2-quart) glass baking dish with shortening or cooking spray.
- Spread waffle pieces in even layer on ungreased cookie sheet. Bake 15 minutes or until crisp.
- Increase oven temperature to 375°F. In large bowl, beat egg yolks, salt, milk, whipping cream, maple syrup and vanilla with whisk until well combined. Carefully stir in waffle pieces and bacon until evenly coated. Let stand at room temperature 30 minutes to 1 hour, stirring every 10 to 15 minutes.

- Spray a waffle iron with nonstick cooking spray and preheat it.
- Sift together the flour, baking powder and 1/2 teaspoon salt in a medium bowl. Beat the egg whites in a second medium bowl until stiff.
- Beat the egg yolks with the milk and butter in a large bowl. Add the flour mixture, stirring until just blended. Fold in the beaten egg whites.
- Place 2 halves of a bacon slice in each waffle grid and close the cover. Cook for 1 minute and then add a scant 1/2 cup batter to each waffle grid. Bake until golden brown, about 5 minutes. Serve with maple syrup.

- Heat a waffle iron to medium heat. Lay the bacon on the waffle iron and close lid. Cook for 2 1/2 minutes. Move the bacon pieces so the unseared areas now come in direct contact with the metal. Close the lid and cook for another 2 1/2 to 5 minutes, depending on desired crispness. Transfer the bacon to a paper towel lined plate. Reserve rendered fat for another use. Depending on bacon, you will have 1 to 3 tablespoons of fat.

Recently I have been puzzled when I read about an IBM Watson recipe "African style tiramisu with blue cheese". I didn't find this recipe, but I started reflecting about this combination. I had blue cheese and bacon at home, and decided to make my own "Watson style" waffle recipe. With the ingredients you can make 8 large Belgian waffles. With the cheese and the bacon they become really hearty. You can eat them immediately. Real Belgian waffles are made upside down. After you have filled it with the batter, you have to turn it upside down, so that it can distribute equally. After a few minutes you can return and continue to bake until ready.
