½ cup small pearl tapioca
1 mango - peeled, seeded and diced
14 ice cubes
½ cup coconut milk

Steps:

  • Fill a pot with water and bring to a rolling boil over high heat. Once the water is boiling, stir in the tapioca pearls, and return to a boil. Cook the tapioca pearls uncovered, stirring occasionally, about 10 minutes. Cover and remove from heat, allowing pearls to rest for 30 minutes. Drain well in a colander set in the sink, then cover and refrigerate.
  • Place mango and ice in a blender and blend until smooth. Divide chilled tapioca pearls in 2 tall glasses, then layer the mango mixture over and top each glass with a 1/4 cup of coconut milk.

  • 'Pineapple' bun. The boh loh baau (literally meaning "pineapple bun") is the holy grail of what may generously be termed the Hong Kong school of baking.
  • Cha siu baau. All steaming goodness and sweet pork. Barbecued pork stuffed into a bun deserves its very own shout-out here. Because, when we break open a soft white steamed bun and see the glistening mauve filling of diced cha siu with extra barbecue sauce spilling out and sniff the heady perfume of wine, soy, and hints of caramel, we're moved.
  • Miniature wife cakes. Much as we love traditional Chinese pastries, their heavy combination of lard and sweet pastes made from various beans and roots don't exactly make for easy snacking.

  • Bring a pot of water to a boil, add tapioca pearls (or sago). Cover and cook over a low heat for 15 minutes or so until the pearls are transparent but still have a white spot in the middle. Remove from the heat and set aside covered for a further 5-10 minutes until they are completely transparent (see note 1).
  • Meanwhile, prepare the fruit. Cut the flesh of mangoes into cubes. Set ¼ of them aside. Put the remainder of the cubes into a blender. Add coconut milk and cream (or milk). Blend to a very fine texture. Add some sugar if you prefer it a bit sweeter.
  • When the tapioca pearls are ready to use, rinse them under cold water. Drain well, then place into serving bowls. Pour mango puree on top then garnish with the remaining mango cubes and grapefruit.
