HONEYED TAHINI BUTTER-SPREAD-DIP

Honeyed Tahini Butter-Spread-Dip image

Here's a simply delicious smooth and creamy sesame honey spread for your toast, or for dipping (try pita bread chunks, dates or banana slices). Ingredient quantities are estimates, adjust to your tastes. Inspired by breakfast at Café Shosh (the old one, on Rechov Ha-Palmach) in Jerusalem, where on a single plate you'd get eggs made to order, chopped tomato & cucumber salad, yogurt, toast, jam, and a lovely honeyed tahini spread. From Sweet Amandine. Enjoy! Per Wikipedia: Tahini is an excellent source of copper, manganese and the amino acid methionine, and a source of the healthy fatty acids omega-3 and omega-6. Tahini's relatively high levels of calcium and protein make it a useful addition to vegetarian and vegan diets, as well as to raw food diets when eaten in its unroasted form. Tahini made from raw sesame seeds is lower in fat than tahini made from roasted seeds. Compared to peanut butter, tahini has higher levels of fiber and calcium and lower levels of sugar and saturated fats.

TWISTED SPICED BREAD WITH HONEY & TAHINI BUTTER

Twisted spiced bread with honey & tahini butter image

Bake this Middle Eastern-inspired loaf to serve for a festive brunch. To make things extra indulgent, spread thick slices with our moreish honey and tahini butter

Provided by Esther Clark

Categories     Afternoon tea, Breakfast, Brunch

Time 1h15m

Yield Serves 10-12

Number Of Ingredients 18

120-140ml whole milk
50g unsalted butter , cubed
300g strong white bread flour , plus extra for dusting
50g golden caster sugar
½ tsp fine sea salt
7g sachet fast-action dried yeast
1 medium egg , lightly beaten
oil , for the bowl
50g unsalted butter , softened
2 tbsp sesame seeds , toasted
50g light brown soft sugar
3 tsp cinnamon
¼ tsp ground cardamom
70g salted butter , softened
2 tbsp runny honey
2 tbsp tahini
75g golden icing sugar
sesame seeds , for sprinkling (optional)

Steps:

  • Warm 120ml milk and the butter in a small saucepan until melted. Leave to cool to lukewarm.
  • Combine the flour, sugar, salt and yeast in the bowl of a stand mixer. Make a well in the centre and pour in the egg and warmed milk, then mix until just combined. If it seems a little dry, add an extra 20ml milk. Knead the mixture on a gentle speed using a dough hook for 5-8 mins, or until the dough is smooth and springs back when pressed. If you don't have a stand mixer, combine everything in a bowl, then knead on a lightly floured surface for 8-10 mins. Shape the dough into a ball and leave to prove in a large, lightly oiled bowl covered with a tea towel for 1 hr-1 hr 30 mins, or until doubled in size.
  • To make the filling, combine the ingredients and set aside.
  • Line a large baking sheet with baking parchment. Roll the proved dough out on a lightly floured surface to a 40cm square. Spread the filling evenly over the dough using a palette knife, leaving a 2cm border around the edge. Roll the dough up into a tight log, starting with the end furthest from you - it should measure roughly 40cm in length. Cut the dough log in half lengthways down the middle so you have two long pieces laying beside each other, horizontally, cut-side up. Pinch together at both ends, then pick up the ends and twist the pieces around each other, as though you're making a rope.
  • Transfer the loaf to the prepared sheet. Loosely cover and let it prove in a warm place until doubled in size again, about 45 mins-1 hr. Heat the oven to 180C/160C fan/gas 4.
  • Put the sheet in the centre of the oven and bake for 35-40 mins, covering loosely with foil if it starts to become too dark during baking. When ready, the loaf should be golden and sound hollow when tapped on the bottom. Leave to cool slightly for 15 mins if you're serving it warm, or leave to cool completely on a wire rack.
  • To make the tahini butter, mix the ingredients with a pinch of salt using a wooden spoon until combined. To make the icing, mix the sugar with 1 tbsp warm water until smooth, adding more if it's too thick. Drizzle over the loaf and sprinkle with the sesame seeds, if using. Slice the loaf and serve with the honey & tahini butter. Best eaten the day it's made.

CARAMELISED HONEY AND TAHINI COOKIES

Caramelised honey and tahini cookies image

Use up that jar of sesame paste in the back of your cupboard to bake these decadent honey and tahini biscuits. They're sweet, salty and totally addictive

Provided by Liberty Mendez

Categories     Afternoon tea, Treat

Time 30m

Yield Makes 18

Number Of Ingredients 10

150g honey
150g salted butter , cubed
75g dark brown soft sugar
75g caster sugar
100g tahini
1 large egg , plus 1 large yolk
250g plain flour
¼ tsp bicarbonate of soda
1 tsp sea salt flakes
1 tbsp mixed black & white sesame seeds

Steps:

  • Bring the honey to a boil in a small pan set over a medium-high heat. Boil for 5 mins until it has darkened and smells nutty - don't worry if it looks quite dark, this will add flavour. Whisk briefly, then remove from the heat and carefully whisk in the butter until melted. Transfer to a heatproof bowl and leave to cool.
  • Tip both the sugars, tahini, egg and yolk into the bowl with the honey mix, then beat to combine. In a separate bowl, mix the flour and bicarb together, then gradually pour the wet ingredients into the dry and mix until it comes together into a dough. Chill for 3 hrs, or overnight.
  • Heat the oven to 180C/160C fan/gas 4 and line two baking trays with baking parchment. Roll the dough into 18 even balls (weigh for accuracy, if you like - they should be around 45g each), and arrange on the trays spaced 5cm apart. Gently press down with the back of a spoon to slightly flatten the tops, then sprinkle over the sea salt flakes and sesame seeds and bake for 10-12 mins.
  • Tap the tray on a work surface to slightly flatten the cookies. Leave to cool on the trays for 10 mins, then transfer to a wire rack to cool completely. Will keep in an airtight container for up to three days.

8 WAYS TO USE TAHINI - SERIOUS EATS
8-ways-to-use-tahini-serious-eats image

From seriouseats.com
Author Lee Zalben
  • Dip raw veggies in it. For a simple snack, reach for tahini instead of ranch dressing next time you're looking for a dip for crudités. Add lemon juice, salt, and a dash of pepper or hot sauce for extra flavor.
  • Spread it on toast. On whole wheat bread, perhaps with a little honey or agave syrup, tahini can be part of a balanced breakfast.
  • Drizzle it on falafel. For a no-stress summer meal, warm up store-bough frozen falafel and stuff it a pita. Thin out your tahini by adding add a few tablespoons of hot water and lemon juice and then drizzle it over the sandwich.
  • Use it to make Tarator sauce. Tarator is a little-known but much-loved multipurpose sauce that's particularly tasty for dipping grilled chicken or steamed vegetables.
  • Dress your salad with it. Give your balsamic dressing a break and try a tahini-based salad dressing instead. For an easy recipe, combine 1⁄2 cup tahini and 1⁄2 cup olive oil with 2 teaspoons apple cider vinegar, 2 teaspoons of lemon juice, and 2 teaspoons of grated ginger in a blender.
