Number Of Ingredients 11

1 pound ground beef
1 pound ground pork
8 to 10 Anaheim chiles, roasted, peeled and chopped or 3 cans (4 ounces each) chopped green chiles, drained
4 medium potatoes, peeled and diced
1 can (28 ounces) diced tomatoes, undrained
2 cups water
1 garlic clove, minced
1 teaspoon salt, optional
1/2 teaspoon dried oregano
1/4 teaspoon pepper
1/4 teaspoon dried coriander

Steps:

  • In a large stockpot or Dutch oven, brown beef and pork; drain. Add remaining ingredients. Cover and simmer for 45 minutes.

2 pounds cut up pork, chicken, or beef
Oil
3 heaping tablespoons flour
1 tablespoon fresh chopped garlic
2 1/2 cups chicken bouillon
One 14 1/2-ounce can crushed tomatoes
2 large potatoes, diced
1 (2 pound) package thawed Chile Products of New Mexico Green Chile with or without the juice
Salt
1 teaspoon kitchen bouquet
Shredded cheese, optional
Warm tortillas or crusty bread, optional

Steps:

  • Brown pork, chicken, or beef in oil. Sprinkle flour over the meat and add chopped garlic according to your taste. Add chicken bouillon, crushed tomatoes, potatoes, and Green Chile. Add salt to taste. Bring to a slow boil and simmer until meat and potatoes are tender, about 45 minutes. The secret is to add a teaspoon of kitchen bouquet at almost the end of cooking, which brings out the flavor even more! You can sprinkle shredded cheese on top if you like and serve with warm tortillas or crusty bread.

1 tablespoon chili powder

Steps:

  • Crumble ground beef in microwave-safe casserole.
  • Add onion; microwave, covered, on high for 15 minutes.
  • Drain; break meat into pieces.
  • Combine all ingredients in slow cooker.
  • Cook on Low for 4 to 5 hours.
  • Garnish with sour cream, chopped green onions, grated cheese, or sliced ripe olives, if your diet allows.

This is a recipe that I modified when my husband was diagnosed with diabetes. In the past I added potatoes, which cooked apart and thickened the stew. But since white potatoes were out of our diet, I needed something to thicken it. I read that oatmeal is great for thickening soup, so I gave it a try...it worked like a charm! Makes 4 generous servings at 4 WW points per serving.

6 ounces lean pork roast, cubed
2 tablespoons flour
1/2 teaspoon salt
1/4 teaspoon pepper
1 tablespoon oil (I use safflower)
3 (14 ounce) cans chicken broth (I use low-fat)
1 medium onion, chopped
3 (4 ounce) cans whole green chilies, chopped
1 (10 ounce) can Rotel Tomatoes, undrained
1 (15 ounce) can hominy, drained
1/2 cup quick oats
3 garlic cloves, crushed
salt
pepper

Steps:

  • Combine flour with salt and pepper.
  • Lightly dust cubed pork with flour.
  • Brown pork in hot oil over medium-high heat until browned.
  • Add chicken broth, onion, green chiles, Rotel tomatoes, hominy, oats & garlic.
  • Salt & pepper to taste.
  • Bring to a boil and simmer 3 to 4 hours. I usually cover the soup until the last hour, then remove the lid so the soup will cook down a little.

  • In a large pot over medium heat, warm the oil. Add the fresh garlic and onion and sauté until translucent, approximately 2-3 minutes.
  • Add the dusted pork and cook until browned, approximately 5 minutes. Add the chiles, enchilada sauce, stock and salt and bring to a boil. Cover and simmer on low for 45 minutes.
  • Add the potatoes and raise heat to boil. Reduce to a simmer and cook until the potatoes are tender, approximately 15 minutes. Enjoy!

  • Trim fat from meat. Cut the meat into 1/2-inch pieces. Cook half of the meat in a large skillet in hot oil over medium-high heat until browned.
