2 pounds red-skinned sweet potatoes
2 tablespoons olive oil
2 tablespoons honey
1 teaspoon fresh lemon juice
1/2 teaspoon salt

Steps:

  • Preheat oven to 350 degrees F.
  • Peel and cut the sweet potatoes into 1-inch pieces and put in a 9 by 13 baking dish. In a small bowl whisk together olive oil, honey and lemon juice. Pour mixture over potatoes and toss to coat. Sprinkle with the salt, and bake, stirring occasionally, for about 1 hour, until potatoes are tender.

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish.
  • In a large bowl, stir together the honey, butter and salt. Add the sweet potatoes, and stir to coat. Transfer to the prepared baking dish. Pour any liquid from the bowl over the potatoes.
  • Cover, and bake for 30 minutes in the preheated oven, basting frequently.

6 tablespoons butter

  • In a small micorwave safe bowl combine butter, honey and lemon juice.
  • Microwave until butter melts, add cinnamon.

  • Preheat the oven to 400 degrees F. Line a rimmed baking sheet with foil.
  • Pierce the sweet potatoes all over and heat in the microwave on high, turning them over halfway through, until cooked through, 8 to 12 minutes. (Some potatoes will cook faster than others. 3 tablespoons butter
1/2 cup orange juice
3 tablespoons honey
2 tablespoons brandy
1/2 teaspoon salt
1/4 teaspoon nutmeg
1/2 cup granulated sugar
4 tablespoons butter, melted
1/2 cup walnuts, chopped

Steps:

  • Boil the sweet potatoes in water until tender. Then drain and mash them.
  • Add the butter, orange juice, honey, brandy, salt and the nutmeg.
  • Place in a buttered casserole dish.
  • Preheat the oven at 180C or 350°F.
  • Combine the sugar, the butter and the walnuts. Sprinkle over the potato mixture.
  • Place into the oven and cook for 45 minutes.
