Steps:
- Heat oven to 300°F.
- Cover rimmed baking sheet with foil; spray with cooking spray. Place popcorn in large bowl.
- Cook butter and corn syrup in small saucepan on low heat until butter is melted, stirring occasionally. Add sugar, cream and dry gelatin mix; cook and stir 2 to 3 min. or gelatin is completely dissolved. Bring to boil on medium heat, stirring constantly; simmer on low heat 5 min., stirring frequently. Remove from heat. Add food coloring; mix well. Pour immediately over popcorn; toss to evenly coat popcorn with glaze. Spread onto prepared baking sheet, using 2 forks to evenly spread popcorn onto bottom of prepared baking sheet.
- Bake 20 min.; cool completely.
- Meanwhile, place sprinkles in small bowl. Melt chocolate as directed on package. Dip tops of ice cream cones, 1 at a time, into chocolate, then into sprinkles, gently tapping cone after dipping in chocolate to remove any excess chocolate. Place in single layer in parchment-lined pan. Refrigerate until chocolate coating is firm. Reserve remaining melted chocolate for later use.
- Pour reserved melted chocolate into small resealable plastic bag; cut small piece off one bottom corner of bag. Use to secure candy eyes to cones as shown in photo. Draw the mouths with remaining chocolate. Let stand 15 min. or until chocolate is firm.
- Break glazed popcorn into small pieces; place in prepared cones. Serve any remaining glazed popcorn on the side.

CARAMEL APPLE MONSTER MUNCH
Make sure to use stove-popped popcorn for this recipe--not the microwave type--to ensure that your munch will be extra crisp and delicious.

Steps:
- Heat the oil in a large heavy-bottom pot over medium heat until very hot and shimmering. Add the popcorn and immediately cover with a lid. Shake the pot constantly, holding the lid on with a heatproof holder, until the popping starts, about 1 minute. Reduce the heat to medium and continue to shake the pot until the popping slows to just a few per 5 seconds, 1 to 2 minutes more. Remove from the heat and let stand for another minute to allow any last kernels to pop.
- Spray a very large bowl with nonstick cooking spray. Put the popcorn in the bowl and remove any unpopped kernels. Add the peanuts. Spray a rubber heatproof spatula with the cooking spray and place next to the bowl.
- Combine the brown sugar, butter, corn syrup and salt in a medium saucepan and set over medium heat. Cook, stirring, until melted and the edges of the mixture begin to bubble. Clip a candy thermometer to the pan so the bottom of the thermometer is resting in the sugar syrup but not touching the bottom of the pan. Boil, stirring, until the thermometer registers 300 degrees F (the hard-crack stage), about 8 minutes.
- Turn off the burner and add the vanilla. Stir briefly--about 5 seconds--being careful not to burn yourself as the mixture bubbles up.
- Immediately pour the caramel evenly over the popcorn and quickly stir with the prepared rubber spatula until the pieces are mostly separated, about 3 minutes. Pull apart any larger clumps, being careful because the caramel will still be hot in spots. Stir in the apple chips.

ST. PATRICK'S DAY DISHES FOR KIDS - FORKLY
From forkly.com
Estimated Reading Time 9 mins
- Pistachio and White Chocolate Pudding Cookies. The favorite color for St. Patty’s Day is obviously green, but you don’t always need artificial food coloring to make your dessert green.
- Irish Soda Bread. It may not be green but it is definitely from the homeland! Irish soda bread is a staple in so many Irish households, that it would be crazy not to make it for St. Patrick’s Day.
- Brownie Mint Trifle. When you just can’t pick what dessert you want, trifle is always a good idea! It incorporates a variety of sweets into one simple serving that doesn’t take long to make.
- Mint Oreo Cheesecake. Cheesecake can seem like a daunting dessert to create, especially when you’re short on time. Thankfully, this cheesecake recipe is completely achievable.
- St. Patrick’s Day Popcorn. If you’re in a serious rush to get out the door to a family St. Patrick’s Day party, make this fantastic St. Patty’s Day popcorn mix.
- Green Velvet Cupcakes. Why does red velvet always get all the attention when it comes to cake flavors? How about green velvet? Well, green velvet isn’t really a thing yet, but it can be!
- Thin Mint Poke Cake. If you haven’t made a poke cake before, you had better click on the recipe and get baking! Who doesn’t want some extra icing in the actual cake, instead of just on top?
- St. Patrick’s Day Parfait. Similar to a trifle, this parfait is yet another twist on a dessert that doesn’t take too long to throw together…and the messier it is, the more delicious it tastes!
- Matcha White Hot Chocolate. March is one of those months that can either be extremely warm and springy, or it can continue to be very chilly and covered in snow.
- Green Monster Bread. While it’s fun to cheat a little with your little ones on St. Patrick’s Day and have a treat, it doesn’t always have to be bad for your body!

- Place the marshmallows in a large heat-proof microwave-safe bowl. Add the butter cubes on top. Place in the microwave and cook for 1:30 to 2 minutes, or until the marshmallows puff up. Remove the mixture from the microwave and whisk until the butter is incorporated. Add the green food color and salt. Whisk until well combined. (This can also be done in a saucepan on the stove top.)
- Place popped popcorn in an oversized mixing bowl. Pour the melted marshmallow mixture on top and stir together with a wooden spoon. This will be messy, and you won’t be able to coat every piece of popcorn, but do the best you can.
- Spray your hands with baking spray or butter them. Shape the mixture into 8 apple-sized balls and place on a piece of parchment paper. Re-spray or butter hands as needed. Refrigerate popcorn balls until firm.
- Use a knife to cut a slit in one side of a popcorn ball. Insert plastic vampire teeth and shape the popcorn ball around it. If the vampire teeth are too springy they will cause the popcorn ball to split in half. If you experience this, reshape the ball and cut the teeth at the hinges with scissors; insert the teeth as two separate pieces (I had to do this with 2 of my monsters). Repeat with remaining popcorn balls.
