SPICED APPLE-WALNUT CAKE WITH CREAM CHEESE ICING



Spiced Apple-Walnut Cake with Cream Cheese Icing image

Butter for greasing the pan
Flour for dusting
3 medium green apples, such as Granny Smith, peeled, cored and diced into 1/4 to 1/2-inch pieces
1 1/2 cups maple syrup
3 eggs, at room temperature
3/4 cup light brown sugar
3/4 cup vegetable oil
1 tablespoon pure vanilla extract
3 cups flour
1 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda
1 tablespoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon ground ginger
1/2 teaspoon fine sea salt
1 cup chopped walnuts
1 cup powdered sugar
1/4 cup heavy cream
4 ounces cream cheese, at room temperature
3 tablespoon water, plus extra, as needed
2 teaspoons pure vanilla extract

Steps:

  • For the cake: Place an oven rack in the center of the oven. Preheat the oven to 350 degrees F. Liberally butter and flour a 10-inch fluted tube or Bundt pan. Set aside.
  • In a large bowl, mix together the apples, maple syrup, eggs, sugar, oil, and vanilla. In a separate medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt. In batches, mix the dry ingredients into the apple mixture. Stir in the walnuts. Pour the mixture into the prepared pan and bake until a cake tester or skewer inserted into the cake comes out clean, 55 to 60 minutes. Cool for 15 minutes and invert onto a wire rack to cool completely, about 1 hour.
  • For the icing: In a food processor, combine the powdered sugar, heavy cream, cream cheese, 3 tablespoons water, and vanilla. Process until smooth, adding more water, 1 teaspoon at a time, until the icing is pourable. Spoon the icing over the cake and allow to set for 20 minutes before slicing.

3 eggs
1 1/4 cups oil
2 cups sugar
2 teaspoons nutmeg
2 1/2 cups self-rising flour
3 medium apples, peeled, cored and chopped. (I use Granny Smith Apples)
1 cup black walnut, chopped
1/4 cup margarine
1/2 cup brown sugar, packed
1/3 cup milk

Steps:

  • Grease and flour a tube or bundt cake pan and preheat the oven to 350 degrees.
  • Blend eggs, oil, nutmeg, and sugar until creamy.
  • Add flour, a little at a time; and blend well.
  • Batter will be stiff.
  • Fold in apples and nuts.
  • Pour into tube or bundt cake pan and bake for 1 hour.
  • Remove from pan after about 30 minutes.
  • Punch holes in top of the cake.
  • Mix together topping ingredients in a saucepan.
  • Boil for three minutes, stirring frequently.
  • Take off the heat and pour topping over cake with a spoon, letting it to seep into the cake holes.
  • Brush the sides of the cake with a kitchen brush.
  • Let it set for at least 24 hours befor cutting and serving.

Steps:

  • In a large bowl, beat the sugar, oil, eggs and vanilla until well blended. In a large bowl, combine the four, baking soda, salt and nutmeg; gradually add to the egg mixture until well blended(batter will be stiff). Stir in apples and walnuts. , Spread into a greased 13x9-in. baking pan. Bake at 350° for 45-50 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack. , For the sauce, in a small saucepan, combine the milk, sugar, flour and butter. Bring to a boil over medium heat; cook and stir for 2 minutes. Remove from the heat; stir in vanilla. Cut cake into squares; serve with warm sauce. Garnish with walnut halves if desired.

1/4 cup orange-flavored liqueur (recommended: Grand Marnier)
1/4 cup dried cranberries
1 teaspoon ground cinnamon
1/2 orange, zested
1 cup all-purpose flour
1 1/2 teaspoons baking powder
1/4 teaspoon salt
4 eggs
8 tablespoons butter, melted
1/3 cup sugar
1 teaspoon vanilla extract
2 cups diced peeled apples (about 2 apples)
1/2 cup chopped walnuts, toasted
Ice cream, for serving

Steps:

  • Preheat the oven to 350 degrees F.
  • In a small saucepan, heat the orange liqueur. Turn off the heat and add the cranberries, making sure all the cranberries are submerged in the liquid. Set aside.
  • In a small bowl, mix together the cinnamon and the orange zest. Stir in the flour, baking powder, and salt. Set aside.
  • In a large bowl, mix together the eggs, butter, sugar, and vanilla. Add the dry ingredients and stir to combine. Add the apples, walnuts, and drained cranberries. Spoon the mixture into a lightly greased 8 by 8 by 2-inch glass baking dish or 8-inch cake pan. Bake until a wooden skewer inserted in the center of the cake comes out clean, about 30 minutes.
  • To serve, while still warm cut into squares or wedges and serve with ice cream.

APPLE SOUR CREAM CINNAMON WALNUT BUNDT CAKE

This is a rich and extremely moist coffee cake with a layering of walnuts and cinnamon in ribbons in the middle and on top of this cake. This cake can also be baked in a tube pan, see note on bottom. You will get many rave reviews when you serve this cake! You can also make this cake even without the apples, it is still great, but I think even better with the apples!

2 1/2 cups walnuts
2 -3 teaspoons cinnamon
1/2 cup sugar
1/4 cup melted butter
2 cups flour
1 teaspoon baking soda
1 teaspoon baking powder
3/4 teaspoon salt
1 1/4 cups sugar
1 cup butter, softened (no subs!)
2 large eggs, room temperature (take out of the fridge 30 minutes before using)
1 1/4 cups sour cream
2 teaspoons vanilla extract or 1 teaspoon pure maple extract
2 large chopped granny smith apples, coarsely chopped (or use a similar firm apple)

Steps:

  • Set oven to 350°F.
  • Set oven rack to second-lowest position.
  • Generously butter a bundt pan and then flour (shaking out excess flour).
  • In a bowl mix together flour, baking soda, baking powder and salt.
  • In a small food processor, PULSE the walnuts, 2-3 teaspoons cinnamon and 1/2 cup sugar until the nuts are chopped.
  • Add in 1/4 cup melted butter and pulse once or twice to combine; set aside.
  • To make the cake: In a large bowl beat the 1 cup softened butter with 1-1/4 cups sugar at high speed with an electric mixer for about 5 minutes.
  • Add in eggs and beat well.
  • Beat in sour cream and vanilla until smooth and fluffy (about 3 minutes).
  • Reduce the speed to low and add in the flour mixture, mixing just until blended (the batter will be thick).
  • Add in the chopped apples; mix to combine.
  • Sprinkle half of the nut mixture evenly into bottom of the bundt pan.
  • Spoon half of the batter on top of the nut mixture, spreading out with a spatula, then sprinkle the remaining nut mixture on top of the batter, then top/dollop with remaining cake batter, spreading out with a spoon.
  • Bake for about 50 minutes, or until cake tests done.
  • Cool cake in the pan on a rack for about 1 hour, then run a thin knife around the inner edges.
  • Place rack on top of the pan, then flip to invert onto rack.
  • Cool completely.
  • *NOTE* this cake can be baked in a tube pan, just layer the cinnamon/nut mix twice between three layers of cake batter instead of sprinkling on the bottom of the pan. Layer as follows.
  • A third of the cake batter in the bottom of the pan then sprinkle with half of the nut mixture, then another third batter on top, the the remaining nut mixture then the remaining third of cake batter.
  • This method works quite well, but will produce a higher cake that might take a longer time to bake.

300g plain flour
1 tsp ground cinnamon
½ tsp bicarbonate of soda
140g dark brown soft sugar
50g golden caster sugar
250ml rapeseed or sunflower oil
4 eggs
3 unpeeled apples , coarsely grated
100g walnuts , roughly chopped
100g butter , softened
50g dark soft brown sugar
1 tbsp black treacle
200g tub full fat soft cheese

Steps:

  • Heat oven to 150C/130C fan/gas 2. Line two 20cm cake tins. Put the flour, cinnamon and bicarbonate of soda in a big bowl, then stir in the sugars, making sure there are no lumps of sugar. Add the oil, eggs and apples, and beat everything together. Fold in the walnuts then divide the mixture between the tins and bake for 45 mins or until a skewer comes out clean. Allow to cool for a few mins in the tin then remove and cool completely on a wire rack.
  • For the icing, beat all the ingredients together then chill until the mixture is thick but spreadable. Spread half the icing on top of one cake, sandwich with the other and spread the remaining icing on top

1 can apple pie filling
1 teaspoon salt
3/4 cup chopped walnuts
1 1/2 teaspoons baking soda
2/3 cup oil
1 cup sugar
1 teaspoon vanilla
2 cups flour
2 eggs, beaten
1 cup sugar
1/2 cup sour cream
1/2 teaspoon baking soda

Steps:

  • Preheat oven to 350F degrees.
  • Spread pie filling in bottom of ungreased 13x9 pan.
  • Combine flour, baking soda& salt; sprinkle over pie filling.
  • In a separate bowl, combine eggs, vanilla, oil& 1/2 cup of the walnuts; mix well.
  • Pour over ingredients in pan; stir only until blended,& smooth batter evenly.
  • Bake 40-50 minutes or until cake springs back when lightly touched in center.
  • While cake is baking, combine topping ingredients in a sauce pan.
  • Cook over medium heat, stirring constantly until mixture comes to a boil; remove from heat.
  • When cake is done, remove from oven& immediately prick with a fork all over.
  • Pour hot topping over hot cake, sprinkle with remaining walnuts.
  • Serve warm.

GERMAN APPLE WALNUT BUNDT CAKE

I did find it interesting to learn that the word "Bundt" comes from the German word "Bund" which literally means "gathering of people". Isn't that sweet?? 3 tablespoons pure apple juice
1 1/3 cups all-purpose flour
1/3 cup sugar
1/4 teaspoon salt
3/4 cup rolled oats
2 teaspoons baking powder
1 teaspoon apple pie spice
1 egg
3/4 cup milk
1/4 cup canola oil
1/3 cup chopped walnuts
1/3 cup sugar
3 tablespoons melted butter
1 1/2 tablespoons pure apple juice

Steps:

  • Soak apple pieces in pure apple juice for one hour.
  • In large mixing bowl add first six ingredients and mix at low/med speed in mixer.
  • Add next three ingredients and mix well.
  • Add nuts and mix well, add apple pieces (no juice should be drained) and mix until apple pieces are even distributed.
  • Pour into 8x8 cake pan that has been sprayed with cooking spray.
  • Bake in 350 degree oven for 20 to 25 minutes.
  • Until middle of cake is firm to touch.
  • After taking cake from oven and while still hot pour glaze of sugar, melted butter and apple juice that has been well blended over the cake.
  • I used a fork to poke holes evenly over the top of the cake.
  • Set cake on rack to cool.
