HONEYDEW-GINGER LIME FIZZ
Put your blender to use for a drink recipe that's neither smoothie nor cocktail. Thanks to the fizz from the sparkling water, this green drink sips like a mocktail.

Steps:
- In a small saucepan stir together 1 cup water, the sugar, ginger, and lime zest over medium until the sugar dissolves. Let stand, covered, 30 minutes. Pour through a fine-mesh sieve into a bowl.
- Use a melon baller to remove fruit from half the melon. Add to syrup; stir to coat. Chill, covered, 1 hour.
- Meanwhile, remove rind from remaining melon half; cut melon into small chunks. Puree in a blender until smooth. Transfer to a 2-quart pitcher. Cover; chill 2 hours or until ready to serve.
- To serve, add melon balls with syrup and lime juice to puree in pitcher. Add sparkling water. Serve with lime slices. Makes 8 cups.

MIXED FRESH FRUIT WITH LIME AND GINGER
Crystallized ginger enhances the natural sweetness of fruit, while lime juice and peel provide a citrus tang.

Steps:
- In 1-quart saucepan, heat sugar and water to boiling. Remove from heat; stir in 1/2 teaspoon lime peel and the lime juice. Cool 10 minutes.
- In medium bowl, place melon and ginger. Pour sugar mixture over melon mixture. Cover; refrigerate about 1 hour to blend flavors.
- Just before serving, stir strawberries into melon mixture. Serve garnished with additional lime peel.

GINGER LIME FIZZ
The ginger syrup made in step one may be stored in an airtight container, refrigerated, for up to a week.

Steps:
- Combine ginger and sugar with 4 cups water, or enough to cover, in a medium saucepan. Place over medium-high heat until mixture comes to a boil. Reduce to a simmer; stir until sugar dissolves completely. Continue to simmer about 20 minutes. Remove from heat; let cool to room temperature, at least 2 hours. Strain out the ginger, and discard.
- Combine the ginger syrup, lime juice, and seltzer in a pitcher. Pour into ice-filled glasses, and serve immediately.
LIME GINGER HONEYDEW
A light refreshing mixture to serve for breakfast or as a summery dessert. I use Splenda as I cannot digest sugar, but you can use sugar in its place if you wish. I haven't used ginger powder in place of fresh ginger. If you do, let me know the results!

Steps:
- Combine splenda or sugar with water in a small pan and bring to a quick boil.
- Remove from heat and stir to melt the sugar.
- Cool for 4 minutes in the refrigerator.
- Add zest, lime juice and ginger into the sugar mixture.
- Put melon in large bowl and pour sauce over the melon, stirring gently to mix.
- Return to refrigerator until ready to serve.

- In a large pitcher, combine simple syrup, lime juice, and rum. Carefully add club soda. Stir to combine.
- Thread a ginger slice onto the end of a 6-inch bamboo skewer; set ginger swizzle sticks aside. Fill glasses with ice. Add ginger lime fizz. Garnish with lime slices and swizzle sticks, and serve immediately.
HONEYDEW LIME POPSICLES
From epicurious.com. Original recipe calls for making a simple syrup as I have posted but I substitute the amazing ginger syrup from Recipe 123111 instead. I don't get all fussy with the straining or partial freeze before inserting the popsicle sticks... I just puree and freeze in my Norpro molds from Sur La Table. These are delicious! Cooking time = freezing time

- Dissolve sugar in water by stirring if using superfine or by heating in a small heavy saucepan if using regular granulated (then cool).
- Blend half of melon and half of lime juice in a blender until smooth. Add syrup and remaining melon and lime juice and purée until smooth. Force purée through a fine-mesh sieve into a 2-quart glass measure or bowl, pressing on solids and then discarding them.
- Pour mixture into molds and freeze until slushy, about 2 hours.
- Insert sticks, then freeze Popsicles until completely hardened, at least 6 hours.
- Epicurious Cooks' note: Popsicles can be made 2 days ahead (flavor diminishes if made any earlier).
