HONEYDEAR'S HOLIDAY PINEAPPLE BAKED HAM
This is a delicious pineapple baked ham featuring a strawberry-brown sugar and mustard glaze! This was my mother's traditional holiday ham that was always a hit. I don't typically measure but adjust to taste. And don't discard the ham drippings! Use it to add flavor to your favorite green bean or greens recipe. Garnish with maraschino cherries or strawberries. Enjoy!

- Preheat oven to 350 degrees F (175 degrees C). Pour 1 inch of water into a baking dish.
- Place ham flat-side down into the baking dish. Slice diagonal squares over the top. Insert cloves into the diagonal points.
- Combine pie filling, brown sugar, and mustard in a bowl, mashing the strawberries as you stir.
- Mix 2 tablespoons pineapple juice from the can with cornstarch in a separate bowl; add to the strawberry mixture. Stir; final texture should be fairly thick. Spread mixture over the ham. Pour remaining pineapple juice on top, taking care not to rinse off the glaze. Tent ham with aluminum foil to help retain moisture.
- Bake in the preheated oven, basting ham occasionally with the juices, until an instant-read thermometer inserted near the bone reads at least 130 degrees F (54 degrees C), 1 hour 45 minutes to 2 hours.
- Set oven rack about 6 inches from the heat source and preheat the oven's broiler.
- Anchor pineapple slices with toothpicks onto ham. Broil in the oven until slightly browned, about 10 minutes.
- Remove ham from oven and let rest for 15 minutes before slicing from the smallest end to the center.

- Heat oven to 350°F.
- Mix sugar, syrup and mustard until blended. Use paring knife to make shallow even diagonal cuts across top of ham in one direction. Repeat, making slits in opposite direction to form diamond shapes.
- Insert cloves where cuts meet. Place ham on rack in shallow pan. Place cherries, cut-sides down, on surface of ham.
- Bake 2 hours or until ham is heated through, brushing occasionally with 1/2 cup syrup mixture after 1-1/2 hours. About 10 min. before ham is done, mix remaining syrup mixture with cornstarch and pineapple in saucepan; bring to boil on medium-high heat, stirring constantly. Cook and stir on medium-low heat 5 min. or until thickened.
- Slice ham. Serve with sauce.

- Preheat the oven to 400 degrees F.
- Shingle the ham slices in 2 rows on a ceramic baking dish. Top each with a pineapple slice, then place a cherry in the middle of each pineapple ring. Cover with foil and bake for 15 minutes.
- Whisk together the brown sugar, apple juice and mustard. Remove the ham from the oven, uncover and drizzle with the glaze. Continue to bake, glazing in 5-minute intervals, for an additional 20 to 25 minutes. Serve in the baking dish.
PINEAPPLE GLAZE FOR BAKED HAM
Posted at the request of my sister. Glazing a ham while cooking is wonderful but the first person to the platter usually makes off the the glazed ends and the rest of the people get a "glazed rim". The solution in our house is to make lots of glaze and pour it over each slice!

- Place all ingredients in a small saucepan including the juice/syrup from the pineapple.
- Turn heat on to medium and stir constantly to prevent burning.
- Continue to heat until mixture thickens and comes to a boil.
- Allow mixture to boil for approximately 1 minute.
- If mixture refuses to thicken, add more cornstarch- a little at a time.
- (Be sure to mix your cornstarch with a little cold water in a cup to make a smooth liquidified mixture before adding it to the hot sauce.) Pour finished sauce into a serving bowl, complete with a ladle, and let your guests pour it over baked sliced ham.
