MR. HEAD'S SPICY TUNA MELT
A searing, tongue igniting tuna melt that will satisfy the spicy food lover in your house. Served best with a pale ale (may need more than one to douse the flames on this bad boy). Feel free to adjust ingredients as desired.

Steps:
- Heat the vegetable oil in a skillet over medium heat. Add the onions and celery and season with a little kosher salt. Cook and stir until tender, about 5 minutes.
- In a medium bowl, stir together the tuna, mustard, mayonnaise and the sauteed onion and celery. Season with cayenne, blackened seasoning, parsley, and hot pepper sauce. Spoon onto half of the bread slices. Top each one with a slice of pepperjack cheese and then the remaining slices of bread.
- Spread butter onto the outsides of the sandwich. Fry in a skillet over medium heat until golden brown on the outside and cheese has melted, about 5 minutes total.

CREAMY TUNA MELT
An adopted recipe given a facelift. Serves 4 for a light lunch with a side salad, or 2 to 3 for supper.

Steps:
- Place broiler rack in position under broiler and turn on broiler.
- Saute garlic,celery and onion in a small amount of oil or butter in a skillet. Cook until onion is just tender.
- Drain tuna and add to skillet along with ricotta cheese, broccoli, mayonnaise, and lemon juice. Cook long enough to warm ingredients through, perhaps 3 minutes, stirring frequently.
- If you like your bagels to be a bit toasted, place them under broiler while tuna mixture is warming up.
- Place bagel halves, split side up, in baking dish. Spread tuna mixture over top covering all and sprinkle cheese over top of mixture.
- Broil 2 or 3 minutes, until cheese melts.
- Serve at once.
- Broil 3 to 4 inches from the heat until the cheddar melts, about 5 minutes.

- You can substitute Swiss or cheddar cheese for the provolone. It's important to use the albacore tuna called for in the recipe; albacore is a firm, white tuna that holds up better than flaked tuna.
- When picking lemons, look for ones that are firm with skin that is smooth and bright. They will keep for two to three weeks if stored in a plastic bag in the refrigerator. To get more juice out of your fruit, let the lemon return to room temperature, and then roll it across the counter top while applying pressure with the palm of your hand. You'll get about 3 tablespoons of juice from one lemon. Since you only need 1 tablespoon of juice for this recipe, you can either squeeze just one-half of the lemon (and section the rest for use in drinks), or you could squeeze the entire lemon and store the remaining juice in an airtight container in the refrigerator for up to five days.
