Devoid of sugar and additives, homemade yogurt is rich in probiotics that keep your blood pressure and cholesterol down, your immune system functioning, and protect against cancer, inflammation and ulcers. And did I mention home made yogurt is delicious and simple to make?

Number Of Ingredients 4

42 oz 2% organic milk, preferably with DHA Omega 3
3 T Greek plain non-fat yogurt or other with multiple live and active cultures and no preservatives.
3 T raw honey (more or less to taste)
1/2 cup powdered milk

Steps:

  • Pour milk in a clean 8-cup pyrex measuring cup. Microwave on high for about 14 minutes. Your goal is to get the milk up to about 180 degrees, or just before boiling. Every microwave will be different, so use a cooking thermometer and adjust the time as needed.
  • In a small clean bowl whisk honey and yogurt together. The yogurt is your starter.
  • Remove the milk from the microwave. A skin may have formed on the top. Use a clean spoon to remove. This may occur a few times as you let the milk cool. Remove the skin as it forms. Allow to cool to between 112 and 118 degrees. Whisk in the powdered milk. Pour a splash of the cooled milk into your bowl of honey and yogurt mixture and whisk together to thin. Pour the thinned honey-yogurt-milk mixture back into the measuring cup containing the cooled milk. Whisk to incorporate. Pour into glass containers, put into yogurt maker, set the time for 8-12 hours and turn machine on.

FRESH FRUIT WITH HONEY VANILLA YOGURT

2 cups plain yogurt
2 tablespoons good honey
1/2 teaspoon pure vanilla extract
Seeds scraped from 1/2 vanilla bean (optional)
1 pint fresh strawberries, hulled and cut in half
1/2 pint fresh blueberries
1/2 pint fresh raspberries
1 golden papaya, peeled, cut in half, seeds removed and diced
Sprig of mint, for garnish

Steps:

  • Combine the yogurt, honey, vanilla extract, and vanilla bean seeds in a bowl and set aside. Combine the berries and papaya and gently mix the fruit together. Place in a serving bowl and garnish with the mint. For serving, spoon the yogurt mixture over the fruit.

FRESH FRUIT SALAD WITH HONEY VANILLA YOGURT

2 cups plain yogurt
2 tablespoons good honey
1/2 teaspoon pure vanilla extract
Seeds scraped from 1/2 vanilla bean, optional
1/2 orange, juiced
1 banana, sliced
1/2 pint fresh blueberries
1/2 pint fresh raspberries
1 pint fresh strawberries, hulled and cut in half
1 bunch seedless green grapes, halved

Steps:

  • Combine the yogurt, honey, vanilla extract, and vanilla bean seeds in a bowl and set aside. Combine the orange juice and banana slices in a separate bowl. Add the berries and grapes and gently mix the fruit mixture together. Spoon the fruit into serving bowls and top with the yogurt.

This is a simple, delightful dressing that comes together in less than 2 minutes. You can serve it immediately or allow the flavours to meld together. Mix it either into your fruit of choice or have it along the side, for friends to dip their fruit slices into or add the volume they want. This recipe is for 2 servings.

6 ounces greek plain yogurt, your brand choice. (I use Nostimo brand yogurt)
1 tablespoon of strongly flavoured honey (Tupelo or Buckwheat are incredible! Regular honey can also be used)
1 tablespoon of chopped mint (I use either Pineapple mint or Peppermint)

Steps:

  • Place the 6 ounces of Greek yogurt into a bowl or container deep enough to stir vigorously. Stir to break up the yogurt.
  • Add chopped mint. Mash mint leaves with the back of a spoon, into the yogurt, to release the flavour. Stir well to combine.
  • Add tablespoon of honey. Stir to combine.
  • Allow to rest or serve immediately. This can either be stirred directly into chunks of fruit, or places on the side of fruit, to be stirred in when you eat it.
  • A favourite combination of Summer fruit that I serve this mixed into, is fresh peach chunks and blackberries! Also great over bananas and strawberries.

100g amaretti biscuits (or ginger or digestive biscuits)
85g toasted, flaked almonds
85g butter , melted
250ml Greek yogurt
750g mascarpone
2 eggs
zest 1 lemon
zest 1 orange
250ml honey (orange blossom is particularly good)
fresh fruit , to serve

Steps:

  • Heat oven to 160C/140C fan/gas 3. Crush the biscuits and most of the almonds inside a plastic food bag using a rolling pin. Mix with the butter, then press into the bottom of a deep, oval, 23cm dish (or something similar in size - a roasting tin, baking dish or cake tin will work). Bake for 10 mins until crisp.
  • Stir or mash together the yogurt and mascarpone, then whisk in the eggs, one at a time. Stir in the lemon and orange zests, then stir in most of the honey, reserving about 3 tbsp. Spread over the biscuit base, cover loosely with foil and cook for 1 hr. Remove the foil and cook for 15 mins more until lightly golden and the top is firm with just the slightest wobble in the middle. Leave to cool. Can be kept in the fridge for up to 2 days.
  • To serve, scatter with almonds, drizzle over the remaining honey, and hand around fresh fruit to go with it.

1 17.6-ounce container whole-milk Greek-style yogurt*
3 tablespoons honey
1/4 teaspoon orange-flower water**

Steps:

  • Mix all ingredients in small bowl. DO AHEAD: Can be made 8 hours ahead. Cover; chill.
  • A thick yogurt; sold at some supermarkets and at specialty foods stores (such as Trader Joe's and Whole Foods markets) and Greek markets. If unavailable, place 1 quart regular plain yogurt in cheesecloth-lined strainer set over large bowl. Cover and chill overnight to drain.
  • ** A flavoring extract; available in the liquor aisle or baking section of some supermarkets and at liquor stores and Middle Eastern markets.
