Pillsbury Grands Honey Wheat Copycat Recipe image

Feel free to butter these up and add a little drizzle of honey. Your family will love them as much as mine! Oh, and note that this recipe makes 6 giant 2-inch biscuits so feel free to double it.

Categories     Breakfast

Time 18m

Yield 6

Number Of Ingredients 8

1 cup all-purpose flour, plus more for dusting
1 cup whole-wheat pastry flour
1 tablespoon baking powder
6 Tablespoons very cold salted butter
* 1/4 teaspoon salt -ONLY if using unsalted butter
¾ cups of milk
2 tablespoons honey (optional)
additional milk for brushing the tops

Steps:

  • Preheat the oven to 425 F.
  • In the bowl of your stand mixer, add the all-purpose flour, whole wheat pastry flour and baking powder. Stir together.
  • Using a cheese grater, shred the butter and add the shreds into the bowl. For this reason, I always store a few sticks of butter in the freezer.
  • Using your hands, mix the butter into the flour mixture until it's crumbly and evenly combined.
  • Form a well in the middle of the dry ingredients and add the milk and honey. Stir the flour mixture into the milk until a dough forms. Don't over-mix.
  • Sprinkle some flour on your counter and hand knead the dough. Add additional flour until the dough is no longer "sticky".
  • Roll dough with a rolling pin to about an inch thick. Cut the dough with 2-inch biscuit cutter (or the top of a large glass). After the 4th biscuit you might need to re-shape and roll your dough; but this recipe will yield 6 large biscuits.
  • Line your baking sheet with parchment paper or a silicone mat. Line up the six biscuits evenly spaced on the baking sheet.
  • Brush the tops with milk and bake 13-15 minutes until a light golden brown.

HONEY WHEAT COOKIES

These cookies are wonderful, and good for you too! I prefer to use real butter but margarine can be substituted. Wheat germ can also be substituted for the wheat bran. My two year old loves these and I feel less guilty letting him eat them.

WHOLE WHEAT BUTTERMILK BISCUITS

Whole Wheat Buttermilk Biscuits image

The whole wheat gives these biscuits a nutty flavor. Patting and folding the dough makes the biscuits flaky too.

Provided by Ceezie

Categories     Breads

Time 1h12m

Yield 12 biscuits

Number Of Ingredients 7

2 cups whole wheat flour, divided
2 teaspoons baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
6 tablespoons cold butter, cut into small pieces
3/4 cup buttermilk
2 tablespoons buttermilk (plus more if needed)

Steps:

  • Preheat oven to 450°F Combine 1 3/4 cups flour, baking powder, baking soda and salt in a medium bowl; whisk together. Add butter, toss with your fingers to coat with flour, and rapidly pinch and fluff butter into flour with your fingertips to make small flakes. Work quickly to keep butter firm.
  • Add buttermilk; stir well with a fork until the dough gathers into one large lump. Drizzle in additional droplets of buttermilk if necessary.
  • Scrape dough onto a flat surface sprinkled with remaining 1/4 cup flour. Roll dough to coat with flour, then pat out into a rough rectangle about 1/2-inch-thick and fold it in thirds. Repeat the patting and folding. Pat dough into a thickness of 1 inch. Dip a 2-inch round cutter into flour and stamp out biscuits, coating the cutter with flour before each stamping. Place biscuits, top sides up, on a heavy ungreased baking sheet about 1 inch apart.
  • Bake 10 to 12 minutes, until biscuits are golden brown. Makes 12 biscuits.
  • Note: These are really good with honey butter. To make honey butter, put approximately equal amounts of honey and soft butter into a small bowl and whip with a fork until smooth.
