10 Minute Spicy Vegan Bean Burgers image

An easy one-bowl recipe for the quickest 10 minute spicy bean burgers that taste so good. No fancy ingredients either.

480g (tinned or cooked at home) kidney beans (2 x 400g or 14oz tins), drained and rinsed
240g (tinned or cooked at home) black beans (1 x 400g or 14oz tin), drained and rinsed well
3 teaspoons cumin
2 teaspoons dried coriander
2 teaspoons chilli powder (more if you really want a kick)
90g (1 cup) porridge oats (rolled oats)
a generous handful of fresh coriander, chopped (or parsley)
salt and pepper

Steps:

  • Once you've rinsed the beans, reserve a quarter (roughly) to add later and pop the rest in a large bowl.
  • Mash the beans into a rough paste, then add the spices, herbs, oats and whole beans and mix until well combined.
  • Shape the spicy bean burger mixture into 6-8 burgers, depending on how big you like them.
  • These are now ready to cook. They are best fried in a little oil, a few minutes on both sides until crisp and browned. Check notes below for oven or air fryer cooking.
  • Serve and enjoy!

This our friend Gary's recipe. I haven't made them but I have eaten them. Spicy is right but very tasty too. Points 5.

1 onion
1 carrot
4 ounces breadcrumbs
1 (19 ounce) can kidney beans
1 (19 ounce) can cannellini beans
1 teaspoon chili powder or 2 chopped chilies
salt and pepper
mixed herbs, your favorite
2 tablespoons flour
vegetable oil (for frying)

Steps:

  • Put half) of the breadcrumbs in a large mixing bowl.
  • Finely chop the onion and grate the carrot.
  • Fry the onion gently in a tablespoons of oil until softened.
  • Add the grated carrot and fry for another 2 or 3 minutes, then add the onions and carrot to the breadcrumbs in the mixing bowl.
  • Rinse the kidney and cannellini beans thoroughly and drain.
  • Mash them roughly with a fork and stir into the carrot mixture with the chillies, salt and pepper.
  • Put the remaining half of breadcrumbs in a shallow bowl with the flour, herbs, salt and pepper.
  • Shape the bean mixture into 6 burgers.
  • Thoroughly coat each burger in the flour and breadcrumb mixture.
  • Heat 3 tbsps. oil in a frying pan, and carefully add 3 burgers.
  • Fry each side for about 5 minutes until golden brown.
  • Repeat with the other 3 burgers.

1/2 medium onion, diced
1 teaspoon hot sauce, or to taste
Optional: 1/2 red or yellow bell pepper, diced
1/2 teaspoon cayenne pepper
1 prepared egg-substitute "egg" (such as Ener-G egg replacer )
1 cup breadcrumbs
Optional: Oil for frying

Steps:

  • Gather the ingredients.
  • Mash the beans in a large bowl and add onion, hot sauce, bell pepper, if using, cayenne pepper, egg substitute, and breadcrumbs. Mix until well combined.
  • Press firmly to form into 4 patties.
  • If pan-frying, heat a tablespoon or so of oil in a skillet and lightly fry until a nice outer crust forms. Or, fire up the grill and barbecue your black bean veggie burgers over medium heat.

I tried this recipe after finding it on the internet, hoping to convince my family to eat vegetarian every now and then. It worked! It worked so well, they didn't even know there wasn't any meat in their burgers! This is nice and spicy and gets a lovely crust on it. This is vegetarian and vegan. You don't even need to serve it on a bun if you like! If you don't mind the cheese, it's great with a little shredded cheddar on top. Prep time includes 2 hours chilling.

1/2 yellow onion, chopped
1 jalapeno, seeded and chopped
3 garlic cloves
1 (14 1/2 ounce) can black beans, drained
1/2 cup plus 2 tablespoons rolled oats
1/2-1 cup corn (fresh, frozen or canned)
1 green onion, thinly sliced
2 teaspoons cumin
1/2 teaspoon curry powder
1/4 teaspoon cayenne pepper
1/4 cup plain breadcrumbs
salt and pepper
3 tablespoons vegetable oil
4 hamburger buns

Steps:

  • Place onion, jalapeno and garlic in a food processor and pulse 5 or 6 times.
  • Add beans, oats, corn, green onion, cumin, curry powder, and cayenne. Season with salt and pepper and pulse 8 times. Scrape downs sides of the bowl and pulse an additional 5 to 8 times (depending on desired texture).
  • Place mixture into a mixing bowl, cover with plastic wrap and place in the refrigerator for at least two hours.
  • Remove chilled mixture from refrigerator and stir in breadcrumbs. Adjust seasonings.
  • Pour oil into a heavy bottom skillet and place over medium. Form mixture into four equal patties. Cook patties for 5 to 7 minutes on each side or until a crust develops and the patties are heated through.
  • Remove patties from heat and place onto burger buns. Assemble burger with toppings and condiments of your choice and serve.

Steps:

  • Blitz the bread and fresh corriander together to make breadcrumbs.
  • In a blender put the beans with the breadcrumbs and egg. Blend together but leave chunky.
  • Stir in the rest of the ingredients until combined. Dust hands with flour and shape mixture in to burger shapes. This mixture makes 4 VERY large burgers or 6 smaller ones.
  • Fry burgers in a pan, on a medium heat until brown and hot all the way through.
  • Serve burgers in a bread bun with ketchup and salad. Lovely with potato wedges too.

1 ½ tablespoons ground cumin
1 tablespoon chili powder
1 teaspoon chile-garlic sauce (such as Sriracha®)
1 (16 ounce) can black beans, rinsed and drained
1 jalapeno pepper, minced
1 cup canned whole kernel corn, drained
3 cloves garlic, minced
½ cup bread crumbs
½ cup whole wheat flour
2 tablespoons vegetable oil

Steps:

  • Whisk egg, cumin, chili powder, and chile-garlic sauce together in a bowl.
  • Mash black beans in a separate bowl until they reach a paste-like consistency.
  • Stir jalapeno pepper, corn, and garlic through the black bean paste.
  • Mix the egg mixture into the black bean mixture.
  • Scatter the bread crumbs over the black bean mixture; mix with your hands to evenly incorporate.
  • Form the resulting mixture into 4 patties.
  • Pour flour into the bottom of a shallow dish; coat the patties in the flour to help them hold shape.
  • Heat vegetable oil in a skillet over medium heat. Cook the patties in hot oil until cooked through, about 5 minutes per side.
