CHOCOLATE DIPPED JAM FILLED CATS' TONGUES

Posted by request, this is a combination of two cats' tongue recipes...one jam filled, the other chocolate dipped! The final product is a delicious buttery cookie with raspberry jam filling and rich chocolate.

Number Of Ingredients 9

1 cup unsalted butter, room temperature
1 1/2 cups confectioners' sugar
1 egg
1 egg yolk
2 cups flour, sifted
1 1/2 teaspoons vanilla extract or 2 tablespoons grated lemons, zest of (variation)
1 cup raspberry jam
1 tablespoon fresh lemon juice
6 ounces semisweet chocolate, melted

Steps:

  • Preheat oven to 400*.
  • Line cookie sheets with baking parchment.
  • Cream butter on medium speed until light, about 2 minutes.
  • Add sugar and blend together.
  • Add vanilla (or zest), then egg and egg yolk;mix well.
  • Sift flour over batter and incorporate.
  • Batter will be thick.
  • Spoon batter into pastry bag or decorator fitted with 1/2 inch round tip or medium star tip.
  • Pipe 3 inch lengths of dough, about 2 inches apart, onto cookie sheets.
  • Bake cookies in the center of the oven for 8 to 9 minutes, until golden brown around the edges.
  • Let stand on cookie sheets 2 minutes, then remove to wire racks to cool completely.
  • While cookies are cooling, prepare filling.
  • In a saucepan, melt the jam with the lemon juice until it comes to a simmer.
  • Brush the jam over flat side of half the cookies and top with remaining cookies, flat side touching the jam.
  • Let cookies remain on racks in a cool place until jam has set.
  • Dip one end of each cookie into melted chocolate and place on wax paper until chocolate hardens.
  • If desired, sprinkle chocolate with chocolate or colored sprinkles (jimmies) before letting the chocolate set up.

This recipe was originally at www.divinerecipes.com, but I tweaked it. In the original it was suggested that you could use Tuna oil or Chicken stock/bouillon instead of the beef. It also said to form into biscuits by flatteng 1/2" balls of dough. Being lazy, I used my breadmaker to mix the ingredients and then did the rolling out method described below.

1 1/2 cups rolled oats
1/4 cup vegetable oil
1/2 cup flour
1/2 cup beef stock
1/2 cup powdered milk
2 tablespoons catnip

Steps:

  • Mix all ingredients very well. (It can be very crumbly.).
  • Cut a sheet of parchment paper to fit your baking tray/cookie sheet.
  • Roll out flat to ~3mm thick (~1/8" thick) on the parchment paper.
  • Using a pizza wheel or sharp knife, cut the dough into cat-sized portions. I usually aim for pieces ~1cm (~0.5")square.
  • Slide the parchment paper onto your baking tray/cookie sheet.
  • Bake at 180 degrees C (350 degrees F) for 30 minutes, or until the biscuits are slightly browned.
  • Cool before serving to your favourite feline!

I intend to spoil my cats for as long as they'll let me. You can substitute chicken broth or chicken soup for the bouillon and water if you choose. Just to clarify... THIS IS FOR CATS.

1 cup warm water
3 tablespoons dried catnip or 3 tablespoons fresh catnip
1/4 teaspoon instant chicken broth, powdered

Steps:

  • Place the warm water in a container with a tight-fitting lid.
  • Add the catnip and chicken broth.
  • Shake vigorously for a couple minutes or until the bouillon is dissolved and the catnip has given the tea a greenish tinge.
  • Serve ¼ cup of the tea to your cat in a shallow bowl.
  • Store the remainder in the refrigerator. Warm before serving.
