3 pounds boneless skinless chicken thighs
3/4 cup sugar
3/4 cup reduced-sodium soy sauce
1/3 cup cider vinegar
1 garlic clove, minced
3/4 teaspoon ground ginger
1/4 teaspoon pepper
4 teaspoons cornstarch
4 teaspoons cold water
Hot cooked rice, optional

Steps:

  • Place chicken in a 4- or 5-qt. slow cooker. In a small bowl, mix sugar, soy sauce, vinegar, garlic, ginger and pepper; pour over chicken. Cook, covered, on low 4-5 hours or until chicken is tender., Remove chicken to a serving platter; keep warm. Transfer cooking juices to a small saucepan; skim fat. Bring cooking juices to a boil. In a small bowl, mix cornstarch and cold water until smooth; stir into cooking juices. Return to a boil; cook and stir 1-2 minutes or until thickened. Serve with chicken and, if desired, rice.

1/4 cup low-sodium soy sauce
2 tablespoons brown sugar
2 tablespoons dry sherry
2 tablespoons rice vinegar
2 garlic cloves, crushed with a garlic press or minced
1 teaspoon finely grated fresh ginger
1/4 teaspoon red pepper flakes
2 pounds skinless chicken thighs
2 teaspoons sesame seeds

Steps:

  • Combine the soy sauce, sugar, sherry, vinegar, garlic, ginger and red pepper flakes and stir until the sugar dissolves. Transfer to a resealable plastic bag and add the chicken. Seal the bag and marinate the chicken in the refrigerator, turning once, for 1 hour. The chicken can be marinated for up to 4 hours.
  • Heat the broiler to high. Arrange the chicken on a broiler pan skin side down and broil until brown and crispy, 8 to 10 minutes. Flip the chicken and broil until almost cooked through, about 8 minutes longer. Sprinkle with sesame seeds and cook until the seeds turn golden brown and the chicken is done, 1 to 2 minutes longer.

6 skinless and boneless chicken thighs, sliced
2 large garlic cloves, crushed
1 thumb-sized piece ginger, grated
50g runny honey
30ml light soy sauce
1 tbsp rice wine vinegar

4 spring onions, shredded, to serve
sticky rice, to serve

Steps:

  • Heat the oil in a non-stick pan over a medium heat. Add the chicken and fry for 7 mins, or until golden. Add the garlic and ginger and fry for 2 mins. Stir in the honey, soy sauce, vinegar and 100ml water. Bring to the boil and cook for 2 - 5 mins over a medium heat until the chicken is sticky and coated in a thick sauce.
  • Scatter over the spring onions and sesame seeds, then serve the chicken with the rice and steamed veg.

¼ cup rice wine vinegar
½ onion, chopped
2 cloves garlic
pepper, to taste

4 breasts chicken
3 tablespoons corn flour
¼ cup water
spring onion, to taste

Steps:

  • Mix the soy sauce, honey, rice wine vinegar, onion, garlic, pepper and ground ginger together in a small bowl and set aside.
  • Oil the slow cooker and add the chicken breasts. Pour the sauce over the chicken, cover and cook on high for 3-4 hours.
  • Remove and drain the chicken and set aside in a large bowl.
  • Shred thoroughly with two forks.

1 whole organic chicken, cut into 10 pieces
2 cups water
1 cup light brown sugar
1/2 head garlic, unpeeled
4 slices fresh ginger root, gently bashed to open up
2 tablespoons kosher salt
8 sprigs fresh thyme
2 cups teriyaki sauce
1/4 cup honey
1 large (1-inch) piece fresh ginger root, sliced and bashed to open up
1 head garlic, halved crosswise
1 teaspoon toasted sesame oil, plus 1/2 cup
Freshly ground black pepper
Scallion threads, for garnish
Toasted sesame seeds, for garnish

Steps:

  • Begin by making the brine. Combine the water, brown sugar, garlic, ginger, salt and thyme in a large resealable bag and swirl to dissolve the sugar. Add chicken pieces and allow to brine for 1 to 2 hours in the refrigerator.
  • Preheat grill to low-medium heat.
  • Make teriyaki glaze: In a small saucepan, over medium heat, combine teriyaki sauce, honey, ginger, garlic, and 1 teaspoon of sesame oil, and simmer until rich and slightly reduced.
  • Remove chicken from brine and pat dry. Discard the brine. Add the chicken to a large mixing bowl, drizzle with the 1/4 cup toasted sesame oil and season with freshly ground black pepper. Toss to coat and cook on a low-medium grill for 17 to 20 minutes per side until cooked through. Baste with teriyaki glaze for the last 5 to 7 minutes of cooking. 1 lb boneless chicken thighs
1 tablespoon garlic powder
1 tablespoon mustard powder
1 tablespoon olive oil
1/2 cup teriyaki sauce
1/3 cup raw honey

Steps:

  • Place the chicken in a dish that you can cover and allow it to marinate inches Add all of the ingredients, dry first. Rub and mix the marinade into the chicken. Cover and let marinate for one hour.
  • In a frying pan heated to medium high heat, place the chicken. Allow to cook until browned, then turn.
  • Immediately reduce the heat to medium low, and place a lid over the chicken, or a press if you have one, that will press the chicken down into the pan. Cook for 10 minutes.

This dish is a firm favourite in my Mum's kitchen! My Mum always loves to make a big tray of roasted chicken thighs and legs, as she can be assured that we all want some to take home. This dish is great for a crowd as you never know when you might have unexpected guests and it's just as delicious served cold with salad.

8 legs & thighs of chicken (I get from my local butcher and usually the leg is attached to the thighs)
2 large onions (sliced)
2 medium carrots (sliced ½ inch slices)
4 tbsp tamari soy sauce (gluten-free)
4 tbsp honey or agave nectar
3 tbsp olive oil
150 ml boiling water
sea salt
black pepper
garlic granules
paprika

Steps:

  • Preheat the oven to 400°F, gas mark 6, 200°C (180°C fan-assisted).
  • Clean the chicken legs and thighs, and place on kitchen paper to dry.
  • Place the chicken thighs and legs on a large roasting tray, season generously on both sides with garlic granules, sea salt, paprika and black pepper. Rub in the seasonings with your hands so every part of the chicken is seasoned. Have the skin side of the chicken pieces facing upwards to start.
  • In a large non-stick frying pan sauté the sliced onions in 1 tbsp. olive oil, until soft and translucent, then add the carrots, and cook for 5 minutes.
  • Scatter the sautéed sliced onions, carrots over the chicken. Mix the honey or agave nectar and tamari sauce together in a mixing bowl then pour over the chicken pieces. Drizzle over the remaining 2 tbsp. olive oil, and then pour the boiling water around the edge of the tray.
  • Roast in the preheated oven for 1-½ hours, after 30 minutes turn the chicken over so the skin side is facing downwards baste with the juices and continue to cook 30 minutes. Then baste one more time and cook for the last 30 minutes with the skin side facing upwards.

The easiest chicken recipe ever! Chicken thighs are marinated in teriyaki sauce and sautéed in a skillet.

2 Tablespoons packed light brown sugar
2 Tablespoons soy sauce
1 teaspoon rice wine vinegar ((red wine vinegar also works))
1 garlic clove (minced)
1/8 teaspoon ground black pepper
20 oz. boneless skinless chicken thighs

Steps:

  • In a small bowl, add the brown sugar, soy sauce, vinegar, garlic, and pepper. Whisk to combine.
  • Place the chicken in a large sealable plastic food storage bag. Pour the sauce into the bag with the chicken. Seal the bag. Gently massage and roll the chicken around in the bag to get it evenly coated in sauce.
  • Place the bag on a plate in the refrigerator for a minimum of 30 minutes or up to two hours to marinate.
  • Use tongs to transfer the chicken from the bag to a large nonstick skillet. Discard the remaining marinade.
  • Cover the skillet and place it over medium heat. Cook for eight minutes.
  • Remove the cover. Flip the chicken over. Cook for an additional five minutes, until it reaches an internal temperature of 165˚ Farhenheit.
  • The excess teriyaki sauce will form a thick glaze in the bottom of the skillet. Push the chicken around in the pan so that it gets evenly coated in the glaze, flipping the chicken over as necessary.

5 scallions, thinly sliced
1/4 cup lime juice

2 tablespoons honey
1 tablespoon blackstrap molasses
1 teaspoon fresh ginger, finely grated
