- Place chicken in a 4- or 5-qt. slow cooker. In a small bowl, mix sugar, soy sauce, vinegar, garlic, ginger and pepper; pour over chicken. Cook, covered, on low 4-5 hours or until chicken is tender., Remove chicken to a serving platter; keep warm. Transfer cooking juices to a small saucepan; skim fat. Bring cooking juices to a boil. In a small bowl, mix cornstarch and cold water until smooth; stir into cooking juices. Return to a boil; cook and stir 1-2 minutes or until thickened. Serve with chicken and, if desired, rice.

- Combine the soy sauce, sugar, sherry, vinegar, garlic, ginger and red pepper flakes and stir until the sugar dissolves. Transfer to a resealable plastic bag and add the chicken. Seal the bag and marinate the chicken in the refrigerator, turning once, for 1 hour. The chicken can be marinated for up to 4 hours.
- Heat the broiler to high. Arrange the chicken on a broiler pan skin side down and broil until brown and crispy, 8 to 10 minutes. Flip the chicken and broil until almost cooked through, about 8 minutes longer. Sprinkle with sesame seeds and cook until the seeds turn golden brown and the chicken is done, 1 to 2 minutes longer.

- Mix the soy sauce, honey, rice wine vinegar, onion, garlic, pepper and ground ginger together in a small bowl and set aside.
- Oil the slow cooker and add the chicken breasts. Pour the sauce over the chicken, cover and cook on high for 3-4 hours.
- Remove and drain the chicken and set aside in a large bowl.
- Shred thoroughly with two forks.

- Begin by making the brine. Combine the water, brown sugar, garlic, ginger, salt and thyme in a large resealable bag and swirl to dissolve the sugar. Add chicken pieces and allow to brine for 1 to 2 hours in the refrigerator.
- Preheat grill to low-medium heat.
- Make teriyaki glaze: In a small saucepan, over medium heat, combine teriyaki sauce, honey, ginger, garlic, and 1 teaspoon of sesame oil, and simmer until rich and slightly reduced.
- Remove chicken from brine and pat dry. Discard the brine. Add the chicken to a large mixing bowl, drizzle with the 1/4 cup toasted sesame oil and season with freshly ground black pepper. Toss to coat and cook on a low-medium grill for 17 to 20 minutes per side until cooked through. Baste with teriyaki glaze for the last 5 to 7 minutes of cooking. Serve garnish with scallion threads (finely sliced scallions cut on the bias soaked in ice cold water), and toasted sesame seeds.

- Place the chicken in a dish that you can cover and allow it to marinate inches Add all of the ingredients, dry first. Rub and mix the marinade into the chicken. Cover and let marinate for one hour.
- In a frying pan heated to medium high heat, place the chicken. Allow to cook until browned, then turn.

TERIYAKI ROAST CHICKEN LEGS & THIGHS
This dish is a firm favourite in my Mum's kitchen! My Mum always loves to make a big tray of roasted chicken thighs and legs, as she can be assured that we all want some to take home. This dish is great for a crowd as you never know when you might have unexpected guests and it's just as delicious served cold with salad.

- Preheat the oven to 400°F, gas mark 6, 200°C (180°C fan-assisted).
- Clean the chicken legs and thighs, and place on kitchen paper to dry.
- Place the chicken thighs and legs on a large roasting tray, season generously on both sides with garlic granules, sea salt, paprika and black pepper. Rub in the seasonings with your hands so every part of the chicken is seasoned. Have the skin side of the chicken pieces facing upwards to start.
- In a large non-stick frying pan sauté the sliced onions in 1 tbsp. olive oil, until soft and translucent, then add the carrots, and cook for 5 minutes.
- Scatter the sautéed sliced onions, carrots over the chicken. Mix the honey or agave nectar and tamari sauce together in a mixing bowl then pour over the chicken pieces. Drizzle over the remaining 2 tbsp. olive oil, and then pour the boiling water around the edge of the tray.
- Roast in the preheated oven for 1-½ hours, after 30 minutes turn the chicken over so the skin side is facing downwards baste with the juices and continue to cook 30 minutes. Then baste one more time and cook for the last 30 minutes with the skin side facing upwards.
SKILLET TERIYAKI CHICKEN THIGH RECIPE

- In a small bowl, add the brown sugar, soy sauce, vinegar, garlic, and pepper. Whisk to combine.
- Place the chicken in a large sealable plastic food storage bag. Pour the sauce into the bag with the chicken. Seal the bag. Gently massage and roll the chicken around in the bag to get it evenly coated in sauce.
- Place the bag on a plate in the refrigerator for a minimum of 30 minutes or up to two hours to marinate.
- Use tongs to transfer the chicken from the bag to a large nonstick skillet. Discard the remaining marinade.
- Cover the skillet and place it over medium heat. Cook for eight minutes.
- Remove the cover. Flip the chicken over. Cook for an additional five minutes, until it reaches an internal temperature of 165˚ Farhenheit.
- The excess teriyaki sauce will form a thick glaze in the bottom of the skillet. Push the chicken around in the pan so that it gets evenly coated in the glaze, flipping the chicken over as necessary.

- Place chicken in a large resealable plastic bag. In a small bowl, combine remaining ingredients; mix well and add to chicken. Seal bag, gently shake to coat, and marinate in refrigerator for about 8 hours or overnight, turning occasionally.
