CHEESY CHICKEN AND LEEK PHYLLO PIE

In our house, chicken potpie is a year-round staple. For a springtime feel, we use leeks and mushrooms and a lighter phyllo dough crust. If you don't have gruyere, try Parmesan. -Andrea Stewart, Toronto, Ontario

6 tablespoons olive oil, divided
2 medium leeks (white portion only), thinly sliced
1 cup sliced fresh mushrooms
1 tablespoon all-purpose flour
1 cup chicken stock
1 can (5 ounces) evaporated milk
3 cups cubed cooked chicken
3/4 cup plus 2 tablespoons shredded Gruyere cheese, divided
1-1/2 teaspoons minced fresh thyme or 1/2 teaspoon dried thyme
1/2 teaspoon salt
1/2 teaspoon pepper
10 sheets phyllo dough (14x9-inch size)

Steps:

  • Preheat oven to 350°. In a large skillet, heat 2 tablespoons oil over medium-high heat. Add leeks and mushrooms; cook and stir 3-4 minutes or until vegetables are tender. Stir in flour until blended; gradually stir in stock and milk. Bring to a boil, stirring constantly; cook and stir 3-4 minutes or until thickened. Stir in chicken, 3/4 cup cheese, thyme, salt and pepper., Brush a 9-in. pie plate with some of the remaining oil. Place one sheet of phyllo dough into prepared pie plate, allowing ends to extend over edges of dish; brush with oil. (Keep remaining phyllo covered with plastic wrap and a damp towel to prevent it from drying out.) Layer with seven additional phyllo sheets, brushing each layer with oil and rotating sheets to cover the pie plate. Transfer chicken mixture to crust., Gently fold in ends of phyllo over filling, leaving an opening in the center. Crumble the remaining phyllo sheets over filling; sprinkle with remaining cheese. Brush edges with remaining oil. Bake 30-35 minutes or until golden brown.

1 thin leek
40 g butter
1 tomatoes
4 green olives, pitted
80 g soft goat's cheese
black pepper
4 sheets phyllo pastry
2 cherry tomatoes
1 sprig parsley

Steps:

  • Clean leeks, cut in half lengthwise, and slice white parts (greens are not used). Wilt leek in 1 tbsp hot butter in circa 5 minutes Peel tomatoes, remove seeds, and dice. Cut olives in chunks. Mix leek, tomato, olives, cheese; add pepper to taste.
  • Pre-heat oven at 200 deg C (400 deg F). Line cookie tray with baking paper. Melt remainder of butter. Spread a thin layer of butter over a sheet of pastry; fold in two, spread another thin layer of butter on top, put 1/4 of leek mixture on top at short end, and fold into a triangle. Spread with butter. Repeat with other sheets of pastry Bake in oven in until golden brown (circa 15 mins).
  • Cut cherry tomatoes into halves. Serve triangles with cherry tomatoes and parsley.

I had never eaten leeks until I met my husband, so this is his recipe. It's nice and quick and easy.

2 leeks, washed well and thinly sliced (white only)
3 tablespoons water
1 tablespoon butter
1/2 cup cream
1/4 cup parmesan cheese
cracked black pepper, plenty of it

Steps:

  • Place the leeks, water and butter in a saucepan with a tightly fitting lid.
  • Bring quickly to the boil, then turn the heat as low as you can, and cook for about 15 minutes, checking the liquid and stirring a couple of times.
  • Stir in the cream and heat, then fold in the parmesan cheese and serve.

6 phyllo pastry, frozen, defrosted
silicon paper, to line the baking sheet
1 tablespoon unsalted butter
250 g freshly grated parmesan cheese
5 leeks, thoroughly washed, white part of, sliced into matchsticks
4 garlic cloves, crushed
1/3 cup dry white wine
1/2 bunch chives, chopped
salt, to taste
fresh ground pepper, to taste

Steps:

  • Preheat the oven to 160°C.
  • Brush the pastry sheets with a little melted butter, one at a time. Then place one sheet on a lightly greased, baking sheet lined with silicon paper. Sprinkle evenly with Parmesan and place another sheet on top of the first sheet. Repeat this process with the remaining phyllo, leaving the top sheet plain, and cook in the oven for 10-12 minutes until golden brown.
  • At the same time, melt the butter in a large non-stick pan and gently sauté the leeks and garlic until they softish, taking care not to allow them to brown.
  • Add the wine and allow it to almost completely reduce; then add the chives, season the leek mixture to taste and mix well.
  • When pastry is ready, remove it from the oven and gently press down the centre with a spatula, leaving a slightly thicker outer border. Spread the leek mixture evenly over the top of the pastry and sprinkle it with a little more parmesan.
  • Serve with salad greens.

  • To make this traditional Greek leek pie recipe, start by making the filling. Wash the leeks and trim them, keeping only the white part and cut in slices (2cm width).
  • Heat a saucepan, add olive oil, the leeks and scallions and season with salt and pepper. Sauté, whilst stirring, until tender. Deglaze with the white wine and wait for it to evaporate. Remove the pan from the stove and allow them to cool down for a while.
  • In a bowl add 1 egg yolk and the milk cream and whisk. Stir in the leeks mixture, feta cheese, graviera cheese, season with pepper and blend to combine.
