HONEY ROASTED ALMONDS

Steps:
- Spread almonds in a single layer on a baking sheet and place in a cold oven.
- Turn oven on to 350 degrees F (175 degrees C). Bake almonds, stirring occasionally, until light tan and fragrant, 12 to 15 minutes. The nuts will continue to cook after removing from oven.
- Meanwhile, mix sugar and salt together in a small bowl; sprinkle about 1 tablespoon sugar mixture into a large bowl.
- Stir honey, water, and almond oil together in a saucepan; bring to a boil. Add almonds; cook and stir until almonds have absorbed all the liquid, about 5 minutes.
- Transfer coated almonds to the large bowl sprinkled with sugar mixture. Sprinkle remaining sugar mixture over almonds; toss to coat evenly.
- Spread almonds onto waxed paper to cool completely. Store at room temperature in a tightly covered container or plastic bag.

- 1. Preheat oven to 300 degrees.
- 2. Heat a large sauté pan on high, and add olive oil. Add almonds to pan, toast for 1 minute stirring often, and reduce heat to low. Continue to stir until the almonds are light golden brown, 6-7 minutes. Add honey and spices, salt and sesame seeds and stir to coat evenly.
- 3. Spread nuts out evenly on to a large sheet tray and place in the oven until honey is dry, 10-15 minutes. Allow nuts to cool before serving.

- Preheat an oven to 350 degrees F (175 degrees C). Spread the almonds onto a baking sheet, and toast until the nuts start to turn golden brown and become fragrant, about 10 minutes. Watch the nuts carefully as they bake: they burn quickly.
- Stir together the sugar, salt, and cayenne pepper in a mixing bowl; set aside.
- Stir together the water, honey, and olive oil in a large skillet over medium heat. Once the mixture begins to bubble, stir in the toasted almonds until evenly moistened. Pour the almonds into the sugar and spice mixture, and toss until evenly coated. Spread onto baking sheets in a single layer, and cool to room temperature.

Steps:
- Spread the almonds in a shallow baking pan.
- Bake at 350 degrees, 15 minutes, stirring occasionally; cool.
- In small saucepan blend soy sauce with the honey. Stir in orange peel, garlic powder and ground ginger.
- Bring mixture to a boil. Stir in almonds; toss to coat evenly. Boil, stirring constantly, until liquid is absorbed, about 5 minutes.
- Toss with almond oil.
- Place almonds on cookie sheet in a single layer, separating almonds. Bake at 250*F., 15 minutes.
- Pour out onto oiled waxed paper.
- Toss and separate every 5 minutes until cool.
- Store in tightly closed plastic bag.

- Arrange almonds in a single layer in an ungreased 15x10x1-in. baking pan. Bake, uncovered, at 350° for 10-15 minutes or until golden brown, stirring once., In a small bowl, combine 1/4 cup sugar, salt and cayenne; set aside. In a large skillet, heat oil over medium heat. Add roasted almonds and honey; cook and stir for 2 minutes. Sprinkle with remaining sugar; cook 1 minute longer or until sugar is dissolved. - Preheat oven to 350 degrees.
- In a large bowl, toss the almonds with the olive oil.
- Spread almonds out on a sheet pan in a single layer. (Keep the mixing bowl handy - you will need it again.)
- While oven heats, mix the spices, salt, and sugar in a small bowl; set aside.
- Bake almonds for 10 minutes.
- Remove pan from oven and carefully pour the hot almonds back into the mixing bowl.
- Sprinkle spices over the nuts and toss well with a spoon.
- Pour the seasoned almonds back onto the sheet pan and return to the oven for 5 minutes.
- Remove from oven and let nuts cool completely on pan.
- Store cooled nuts in a covered container.

- Heat oven to 180C/160C fan/gas 4. Line a baking tray with lightly oiled baking parchment. Mix the sugar and salt in a large bowl and set aside.
- Melt the honey in a frying pan over a low heat. Add the almonds and spices and stir to coat. Transfer the nuts to the baking tray and spread them out in a single layer. Bake for 10-15 mins until golden brown, scraping the nuts from the side to the centre from time to time so they cook and colour evenly.
- Remove from the oven and cool slightly for 5 mins until the nuts become sticky, then toss them in the sugar and salt mixture. Cool completely, then divide them between cellophane bags.
