1 tablespoon Old Bay Seasoning
1 tablespoon light brown sugar
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon ground cumin
24 peeled deveined extra large shrimp
1/4 cup butter
2 crushed garlic cloves

Steps:

  • Thread 6 shrimp close together on each skewer.
  • Melt butter with garlic.
  • Brush 1 side of shrimp with 1/2 the garlic butter, then sprinkle with 1/2 the Spice Rub.
  • Grill or broil shrimp 3 minutes; turn and brush with remaining garlic butter; sprinkle with remaining spice rub.

1 cup coconut milk
1 teaspoon green curry paste (Thai)
2 teaspoons garlic, minced
2 tablespoons lime juice
2 tablespoons fish sauce
1 lb jumbo shrimp, peeled, deveined, tails on
4 stalks lemongrass
salt & freshly ground black pepper
1/4 cup vegetable oil
reserved marinade
2 teaspoons lime juice
1 teaspoon sugar
1 tablespoon chopped mint

Steps:

  • Combine coconut milk, curry paste and garlic in a saucepan and bring to boil, reduce heat and simmer for 8 to 10 minutes or until coconut milk has thickened slightly.
  • Stir in lime juice and fish sauce, cool then toss with shrimp and marinate for 1 hour.
  • Remove shrimp from marinade and thread shrimps onto lemon grass stalks, spearing shrimps in 2 places so that they don't turn on the skewers. Season with salt and pepper. (Reserve marinade.).
  • Preheat grill to high.
  • Brush shrimp with extra oil and grill about 2 minutes per side or until shrimps are cooked.
  • While shrimp is cooking, place reserved marinade in a small pot over high heat, bring to a boil and boil for 3 minutes or until quite thick (like mayonnaise).
  • Remove from heat, stir in extra lime juice and sugar.
  • Drizzle over grilled shrimp and sprinkle with mint.

1/2 cup butter, melted
1/4 cup olive oil
1/4 cup minced fresh herb, parsley and thyme
3 tablespoons fresh lemon juice
3 large garlic cloves, crushed
1 tablespoon minced shallot
salt and pepper
1 1/2 lbs shrimp, unpeeled medium to large
spinach leaves (to garnish)
lemon slice (to garnish)

Steps:

  • Combine first 8 ingredients in large bowl. Mix in shrimp. Marinate at room temperature 1 hour or in the refrigerator 5 hours, stirring occasionally.
  • Prepare barbecue with medium hot coals. Thread shrimp on narrow skewers. Grill until just opaque, about 2 minutes per side.
  • Line platter with spinach. Arrange skewers on platter. Garnish with lemon and serve.

Honey Sesame Shrimp

Number Of Ingredients 11

1 1/2 pounds shrimp, jumbo, peeled and deveined
5 tablespoons sesame oil, Asian (dark)
3 tablespoons rice cooking wine, sake, or dry sherry
3 tablespoons soy sauce
1 1/2 tablespoons honey
1 1/2 tablespoons sesame seeds
1 tablespoon Thai sweet chile sauce (optional see note)
1/2 teaspoon Chinese five-spice powder
2 cloves garlic, crushed with the side of a cleaver
2 slices ginger, fresh (1/4 inch thick)
2 scallion, trimmed, white part flattened with the side of a cleaver, green part finely chopped and set aside for garnish

Steps:

  • 1. Rinse the shrimp under cold running water, then drain and blot dry with paper towels. Set aside while you prepare the marinade.2. Combine 3 tablespoons of the sesame oil, the rice wine, soy sauce, honey, sesame seeds, chile sauce (if using), and five-spice powder in a large bowl and whisk to blend. Stir in the garlic, ginger, scallions, and shrimp to coat, then cover and let marinate, in the refrigerator, for 30 to 60 minutes.3. Preheat the grill to high.4. Using a slotted spoon, remove the shrimp from the marinade to a bowl and toss with the remaining 2 tablespoons sesame oil. Pour the marinade into a saucepan remove and discard the garlic, ginger, and scallion whites, using the slotted spoon. Bring the marinade to a boil over medium-high heat and cook, uncovered, to a thick, syrupy glaze, about 3 minutes. Remove from the heat and set aside.5. When ready to cook, oil the grill grate. Arrange the shrimp on the hot grate and grill, turning with tongs, until nicely browned on the outside and firm and pink inside, about 2 minutes per side. Brush the shrimp with the glaze as they cook.6. Transfer the shrimp to serving plates or a platter and sprinkle with the scallion greens. Serve immediately.Serves 4Note: Sweet chile sauce is the Thai version of ketchup. One good brand to look for is Siriacha. If not available, simply omit.

1 red onion, finely chopped
3 tablespoons butter
1 garlic clove, finely chopped
1/4 cup honey
1 lime, juice of
1 tablespoon soy sauce
chili pepper flakes, to the taste
1 1/2 lbs raw shrimp, shelled (with or without tail)
1 tablespoon sesame seeds
2 teaspoons fresh chives, finely chopped
salt and pepper

Steps:

  • In a frying pan, brown the onion in butter. Add garlic, honey, lime juice, soy sauce and peppers flakes. Let reduce until the mixture is caramelized. Pour half of this mixture in a bowl.
  • Add half the shrimps and sesame seeds in the frying pan. Salt and pepper.
  • Cook 2 minutes at high high without stirring.
  • Stir and keep on cooking 1 to 2 minutes at high heat. Add chives. Set aside at a place that is hot to keep it hot.
  • Wash the frying pan. Heat the remaining mixture of onions (you did first) at high heat. Add the remaining shrimps and repeat the same steps for the cooking method.
  • You can adjust the seasonning. Serve on rice.

A very easy, healthy and delicious way to grill your shrimp. You can also skewer the shrimp if you want to. Just make sure to soak wooden skewers in warm water for 30 minutes. I didn't include the 1 - 2 hour marinating time. Enjoy!

1/2 cup white wine
2 tablespoons lemon juice
1 teaspoon sea salt
1 teaspoon fresh ground pepper
1 teaspoon cayenne pepper

1 1/2 lbs large shrimp, peeled, deveined, leaving tails on (you can leave the peels on the shrimp and cut down the back and devein if you prefer)
2 tablespoons parsley, chopped
lemon wedge, to garnish

Steps:

  • Mix olive oil, wine, lemon juice, salt, pepper, cayenne and garlic in a bowl. Add shrimp and toss to coat. Marinate in the fridge for an hour, two hours at the most. If you leave it longer, the lemon juice will start to "cook" the shrimp.
  • Heat barbeque to medium heat. Cook shrimp until just cooked through, about 3 minutes on each side.
  • Sprinkle shrimp with parsly and garnish with lemon wedges.
