BACON LOLLIPOPS

Steps:
- Soak about 28 bamboo skewers in cold water for 20 minutes.
- Preheat the oven to 350 degrees F. Coat a baking sheet with nonstick cooking spray and line it with parchment paper.
- Combine the sugar, maple syrup and cayenne in a medium bowl; stir in the water.
- Cut the bacon strips across in half. One at a time, dunk the pieces of bacon in the sugar mixture, wipe off the excess with your fingers, and place the pieces flat on the baking sheet. When the bacon has formed one layer on the pan, thread a skewer through each slice, keeping the slices flat and leaving some of the skewer sticking out at the bottom as a handle.
- Top the skewered bacon with a second piece of parchment paper and place an empty baking sheet on top. This keeps the bacon weighted down so it stays nice and flat. (The sheet pan goes directly over the parchment-topped bacon.) Bake until the bacon is cooked through and dark brown around the edges, about 35 minutes. Transfer to a wire rack set over a baking pan to cool.
- Once cooled, you can store the bacon lollipops for 1 to 2 days in the refrigerator; place them flat on a baking sheet lined with parchment paper and wrap tightly in plastic wrap.
MINI BELL PEPPER POPPERS WITH BACON

- Preheat the oven to 400 degrees F. Line a large rimmed baking pan with foil and spray lightly with cooking spray.
- Cut the peppers in half lengthwise and remove the ribs and seeds. Arrange the peppers on the prepared baking pan cut-side up.
- Mix the cream cheese, Cheddar, bacon, Fresno pepper and milk together in a bowl until very well mixed and soft.
- Put the mixture into a resealable plastic bag (or a disposable pastry bag) and snip a corner to make an opening a little less than 1/2-inch across. Pipe a line of the cream cheese mixture into each of the peppers (the filling should not fill the whole pepper; it will spread as it cooks).
- Bake until the peppers are tender and the filling is melted, about 15 minutes. Serve hot.
HONEY-BOURBON GLAZED BACON
Steps:
- Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper.
- Combine the honey and bourbon in a small saucepan and bring to a boil over high heat. Remove from heat and let cool slightly.
- Lay the bacon on the prepared baking sheet and roast for 10 minutes. Brush with some of the honey-bourbon syrup. Continue roasting until deeply caramelized and crispy, another 10 to 15 minutes--the bacon will really crisp as it cools. Sprinkle with 1/4 teaspoon pepper and serve.
OVEN BAKED PEPPER BACON

- Preheat oven to 400 degrees F. Arrange bacon slices in 2 jelly roll or shallow roasting pans, overlapping the lean edge of each slice with the fat edge of the next. Evenly sprinkle pepper over bacon slices. Place pans on 2 oven racks and bake 25 minutes, switching pans between upper and lower racks halfway through the baking, or until bacon is golden brown and crisp. Transfer bacon to paper towels to drain; keep warm.
HONEY- PEPPER BACON POPS
Steps:
- 1. Soak skewers in water for 30 minutes. Drain just before threading on bacon. 2. Meanwhile, preheat oven to 400F. For honey-peper, in small saucepan warm honey to liquid; stir in soy sauce, five-spice powder, and pepper. Set aside. 3. Thread each bacon slice on a skewer' lay kabob on rack of broiler pan. bake for 15 minutes. Remove from oven. Brush generously with honey-pepper, turing to coat each side. Return to oven. Bake 5 minutes longer or until crisp. Serve with Texas toast and comb honey, if desired.

- Mix brown sugar and chilli powder together in a bowl.
- Coat your bacon with the mixture. Making sure both sides or pretty much evenly coated.
- Put your bacon in a pan and bake at 400 degrees for 20 minutes. Your bacon will come out crispy and sweet.
