Pineapple turns this comforting casserole into a side dish with a tropical twist. It's sure to be a big hit during the holidays when served along with roasted poultry or a festive baked ham.

3 cups cooked mashed sweet potatoes
1/2 cup sugar
1/2 cup milk
1/4 cup butter, melted
2 eggs, lightly beaten
1 teaspoon vanilla extract
Dash salt
TOPPING:
1/4 cup sugar
1/4 cup all-purpose flour
1 can (8 ounces) crushed pineapple, undrained
1/4 cup butter, melted
2 eggs

Steps:

  • In a large bowl, combine the first seven ingredients. Pour into a lightly greased 9-in. square baking dish. Combine the topping ingredients; pour over potato mixture. , Bake, uncovered, at 350° for 45-50 minutes or until a thermometer reads 160°. Refrigerate leftovers.

4 large sweet potatoes (3-1/2 pounds)
1 can (8 ounces) crushed pineapple, undrained
6 tablespoons butter, melted, divided
3/4 teaspoon salt
Pinch pepper
1/2 cup crushed saltines
2 tablespoons brown sugar
Pinch ground cloves

Steps:

  • In a large saucepan, cover sweet potatoes with water; bring to a boil. Reduce heat; cover and simmer for 30 minutes or until tender. Drain and cool. , Peel the potatoes and place in a large bowl; mash. Add the pineapple, 2 tablespoons butter, salt and pepper; mix well. , Transfer to a greased 2-qt. baking dish. Combine saltines, brown sugar, cloves and remaining butter; sprinkle over potatoes. Bake, uncovered, at 375° for 30 minutes.

3 tbsp(s) Ginger root fresh, minced
6 tbsp(s) Apricot preserves
1 pound(s) Uncooked boneless skinless chicken breast(s) four 4 oz pieces
6 tbsp(s) Soy sauce
2 small Uncooked sweet potato(es) scrubbed and sliced into 1/4-inch-thick rounds

Steps:

  • Preheat grill.
  • In a large bowl, whisk together lime juice, ginger, preserves and soy sauce. Set aside 1/2 of the marinade. Add chicken to remaining marinade, cover and refrigerate for at least 1 hour and up to 24 hours, turning chicken occasionally.
  • Grill sweet potato slices until tender, about 8 minutes, brushing with reserved marinade as they cook. At the same time, grill chicken until firm and cooked through, about 4 to 5 minutes per side. Yields 1 chicken breast and about 1 cup of sweet potatoes per serving.

2 sweet potatoes, unpeeled
2 tablespoons olive oil, or as needed
salt and ground black pepper
1 tablespoon sea salt
1 ½ teaspoons grated lime zest
⅛ teaspoon chili powder
⅛ teaspoon paprika
⅛ teaspoon crushed red pepper flakes
¼ cup chopped fresh cilantro

Steps:

  • Place the sweet potatoes into a large pot and cover with water. Bring to a boil over high heat, then reduce heat to medium-low, cover, and simmer until tender, about 20 minutes. Drain and allow to steam dry for a minute or two. Allow to cool, then slice each sweet potato into wedges. Arrange wedges on a baking sheet.
  • Preheat an oven to 400 degrees F (200 degrees C).
  • Brush the sweet potato wedges with olive oil, and lightly season with salt and pepper. Combine sea salt, lime zest, chili powder, paprika, and crushed red pepper flakes in a small bowl.
  • Bake in the preheated oven until golden brown on all sides, about 20 minutes. Plate and sprinkle with the seasoning mixture and cilantro immediately.

1 (20 ounce) can pineapple chunks, drained with juice reserved
1 (15 ounce) can mandarin oranges, drained
½ cup flaked coconut
2 tablespoons margarine
¾ cup packed brown sugar
1 tablespoon vanilla extract
2 tablespoons pumpkin pie spice, divided

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Coat a 9x13-inch casserole dish with cooking spray.
  • Place sweet potatoes, pineapple, and mandarin oranges in 9x13-inch baking dish, sprinkle coconut on top.
  • Melt margarine in a small bowl in the microwave, about 10 seconds. Combine melted margarine, brown sugar, vanilla extract, 1 tablespoon pumpkin pie spice, and enough reserved pineapple juice to make 1 cup. Stir sauce until brown sugar is dissolved, about 1 minute. 3 can(s) cut sweet potatoes, 29 oz
1 can(s) mixed tropical fruit, 15 oz
1 can(s) mandarin oranges, 15 oz
1 can(s) crushed pineapple, 8 oz
1 pkg pecans, chopped, sm pkg
brown sugar, to taste
1 tsp cinnamon (optional)
1 tsp nutmeg (optional)
1 dash(es) tabasco sauce (optional)

Steps:

  • 1. Drain sweet potatoes and put in 5-6 qt crock pot (save juice).
  • 2. Drain mixed tropical fruit and mandarin oranges and put in crock pot (save juice).
  • 3. In sauce pan add sweet potato OR fruit juices, add pecans, brown sugar, spices, and tabasco.
  • 4. Heat mixture until brown sugar dissolves and add to crock pot.
  • 5. Cook on High setting for 2 hours.
  • 6. Cover top with miniature marshmallows.
  • 7. Remove stoneware crock from appliance, remove lid, place in 350 degree oven until marshmallows are lightly browned.

  • 2. Pre-heat oven to 375 degrees. Peel the potatoes and place in a mixing bowl; mash. Add the pineapple, 2 tablespoons Butter, salt and pepper; mix well.
