A tasty departure from regular crabapple preserves. From an online source in response to a recipe request. While this recipe is written in a relatively old-fashioned way, it is perfectly safe if processed using modern methods. 5 quarts crabapples
2 cups water
1/4 cup lemon juice
1 cup apple juice
1/2 cup water
1 1/3 cups honey

Steps:

  • Cook crabapples in 2 cups water until they begin to pop (about 20 minutes).
  • Press the cooked crabapples through a sieve or food mill.
  • In a large saucepan or kettle, combine pulp, lemon juice, apple juice and water.
  • Add honey.
  • Bring to a rolling boil; boil 1 minute, stirring frequently.
  • When the jam starts to "sheet" from the edge of the spoon it has begun to jell.
  • Remove from heat.
  • Pour into sterilized jars, seal, and process 10 minutes in boiling water bath.

Gluten Free, Egg Free and Delicious. An Apple Crisp that you can serve to your GF friends, and modify for your Vegan Friends.

Number Of Ingredients 13

6 apples, peeled cored and chopped in 1/2 in pieces, I use Pink Lady1/2
1/2 teaspoon lemon juice
1/3 cup sugar (or a little more depending on sweetness desired)
1 1/2 tablespoons cornstarch
1/2 teaspoon cinnamon
1/2 teaspoon salt
2/3 cup brown sugar (for topping)
1/2 cup gluten-free flour, blend I use Bob's Redmill (for topping)
1 cup gluten free old fashioned oats (for topping)
1/2 cup almond meal, I grind my own, it's cheaper (for topping)
1/2 teaspoon cinnamon (for topping)
1/2 teaspoon salt (for topping)
2/3 cup butter, make it non-dairy for Vegan modification (for topping)

Steps:

  • Preheat oven to 375.
  • Add apples to a gallon sized plastic bag and splash with lemon juice. Seal the bad and shake the lemon and apples to coat.
  • Open and add in the sugar, cornstarch, cinnamon and salt. Seal and shake again.
  • Pour Apple mixture in to a 9x9 baking dish.
  • In a bowl, mix together all the ingredients for the topping (bown sugar, GF flour blend, GF oats, Almond meal and cinnamon.
  • Melt butter in a sauce pan.
  • Drizzle melted butter over topping mixture and stir around until it resemble pebbles.
  • Spread topping evenly over the apples.
  • Place dish in the oven and bake for around 45 minutes (until apples are soft and the topping in golden brown and crunchy.
  • Let sit out on counter 10 minutes (DO NOT TENT) and serve with vanilla ice cream.

3/4 pound bulk pork sausage
1/2 cup finely chopped onion
4 tablespoons butter, divided
1/2 cup diced apple, unpeeled
3/4 teaspoon dried thyme
1/2 teaspoon ground sage
1/4 teaspoon pepper
3 cups water, divided
3/4 cup cornmeal
1 teaspoon salt
2 tablespoons all-purpose flour
Maple syrup

Steps:

  • In a large skillet, cook sausage and onion over medium-high heat until sausage is no longer pink and onion is tender. Remove from skillet; set aside., Discard all but 2 tablespoons drippings. Add 2 tablespoons butter, apple, thyme, sage and pepper to drippings; cook over low heat until apple is tender, about 5 minutes. Remove from heat; stir in sausage mixture. Set aside., In a large heavy saucepan, bring 2 cups water to a boil. Combine cornmeal, salt and remaining water; slowly pour into boiling water, stirring constantly. Return to a boil. Reduce heat; simmer, covered, for 1 hour, stirring occasionally. Stir in sausage mixture. Pour into a greased 8x4-in. loaf pan. Refrigerate, covered, for 8 hours or overnight., Slice 1/2 in. thick. Sprinkle flour over both sides of each slice. In a large skillet, heat remaining butter over medium heat. Add slices; cook until both sides are browned. Serve with syrup.

"I had a package of puff pastry in my freezer and mentioned to a friend that I'd like to make apple turnovers," notes Coleen Cavallaro of Oak Hill, New York. "She shared a recipe that I adapted for the puff pastry. These turnovers were a big hit on my first try!"

1/3 cup sugar
1 tablespoon all-purpose flour
1/2 teaspoon ground cinnamon
4 cups chopped peeled apples
1 package (17.3 ounces) frozen puff pastry, thawed
TOPPING:
3 tablespoons butter, melted
2 tablespoons sugar
1/4 teaspoon ground cinnamon
Vanilla ice cream, optional

Steps:

  • In a large bowl, combine the sugar, flour and cinnamon; add apples and toss to coat. On a lightly floured surface, roll out each pastry sheet into a 12-in. square. Cut each into four squares. , Spoon 1/2 cup apple mixture into the center of each square; fold diagonally in half and press edges to seal. Place on a parchment-lined baking sheet., In a small bowl, combine the butter, sugar and cinnamon; brush over pastry. Bake at 400° for 12-16 minutes or until golden brown. Serve warm with ice cream if desired.

  • In a large skillet, sauté onions and sausage over medium-high until sausage is no longer pink. Reserve 2 tablespoons of the drippings and drain the rest. Remove sausage and onions from skillet.
  • Add drippings, 2 tablespoons butter, apple, thyme, sage, and pepper to pan. Cook until apple is fork tender (about 5 minutes). Remove from heat and add to cooked sausage.
  • In a large pan bring 2 cups water to boil. In a separate bowl combine cornmeal, salt and remaining cup of butter. Slowly add this mixture to the boiling water. Allow to return to boil and then reduce to a simmer. Stir constantly to avoid scorching. Add more water if needed, but mixture should be thick enough for a wooden spoon to stand up in.
  • Add sausage-apple mixture to cornmeal and stir. Pour the final mix into a greased 8”x4” loaf pan. Refrigerate at least 4 hours.
