This is one of those classic dishes that somehow became a cliche, and people stopped making it for fear of looking un-cool, which is too bad, since it's really good. This is traditionally done with a whole roasted duck, but by using breasts we get pretty much the same results in a lot less time.

2 duck breast halves
salt to taste
1 cup chicken broth
2 tablespoons orange liqueur (such as Grand Marnier®)
1 tablespoon sherry vinegar
1 tablespoon Seville orange marmalade, or more to taste
2 teaspoons grated orange zest
1 pinch cayenne pepper
1 tablespoon reserved duck fat
1 teaspoon all-purpose flour
1 tablespoon butter

Steps:

  • Score duck skin almost all the way through the skin and fat each way on the diagonal in a crosshatch pattern. Generously season with salt and rub salt into each breast. Let rest, skin-side up, at room temperature, for 15 minutes.
  • Whisk chicken broth, orange liqueur, sherry vinegar, orange marmalade, orange zest, and cayenne pepper together in a small bowl.
  • Pat duck breasts dry with paper towels. Re-season skin-side of duck breasts with salt.
  • Heat duck fat in a heavy skillet over medium heat for 2 minutes. Place duck in skillet, skin-side down, and cook for 6 minutes. Flip duck breasts and cook until they start to firm and are reddish-pink and juicy in the center, about 4 minutes more. An instant-read thermometer inserted into the center should read 140 degrees F (60 degrees C). Transfer breasts to a plate to rest. Pour any rendered duck fat into a glass jar.
  • Return skillet to medium heat and whisk flour into pan; cook and stir until flour is completely incorporated, about 1 minute. Pour orange mixture into skillet; bring to a boil. Cook until sauce thickens and is reduced, 3 to 5 minutes. Reduce heat to low. When orange mixture stops bubbling, add butter; stir until butter is completely melted and incorporated into the sauce, about 1 minute. Season with salt to taste.
  • Slice duck breasts across the grain, arrange on a plate, and spoon orange sauce over the top.

2 muscovy boneless duck breast halves (about 1 3/4 pounds total)
3/4 cup chopped shallot
2 1/4 cups canned low sodium chicken broth
1 1/2 cups orange juice
4 1/2 teaspoons earl grey tea leaves or 5 tea bags, leaves removed from bags
1 tablespoon honey
3 tablespoons butter, cut into small pieces

Steps:

  • Preheat oven to 450°F.
  • Pierce skin of duck breasts all over with fork.
  • Sprinkle duck with salt and pepper.
  • Heat heavy large skillet over high heat.
  • Add duck breasts, skin side down, to skillet.
  • Cook until skin is well browned, about 4 minutes.
  • Turn duck breasts over; cook 2 minutes.
  • Remove from heat.
  • Set rack in roasting pan.
  • Transfer duck breasts to rack (reserve drippings in skillet).
  • Roast duck to desired doneness, about 20 minutes for medium-rare.
  • Meanwhile, heat drippings in skillet over medium heat.
  • Add shallots and sauté until beginning to brown, about 5 minutes.
  • Tilt skillet; push shallots to higher end of skillet, allowing drippings to flow to lower end.
  • Spoon off drippings and discard.
  • Add broth, orange juice and tea leaves to skillet.
  • Boil until mixture is reduced to 1 1/4 cups, about 17 minutes.
  • Pour mixture through strainer set over bowl, pressing on solids to extract as much liquid as possible.
  • Discard solids in strainer.
  • Return liquid to same skillet.
  • Add honey; bring to simmer.
  • Whisk in butter.
  • Season sauce with salt and pepper.
  • Thinly slice duck breasts crosswise.
  • Fan slices on each of 4 plates, dividing equally.
  • Spoon sauce around duck.
  • Garnish with orange segments, if desired.

3 whole star anise
1 sprig parsley
1/4 cup soy sauce
1/2 cup orange juice, fresh
2 tablespoons honey
2 tablespoons sherry wine
1 teaspoon salt
1 teaspoon ginger juice
water (enough to cover duck)

Steps:

  • Boil water in a large kettle.
  • Place duck, anise and parsley in boiling water; cook 10 minutes.
  • Remove duck from water; let cool on rack for 2 hours.
  • Preheat oven to 350*.
  • Bake duck on rack in a roasting pan for 1 1/2 hours.
  • Mix orange juice, soy sauce, honey, sherry, salt and ginger juice.
  • Pour half of mixture into cavity and brush remaining mixture on duck.
  • Bake 30-40 minutes more; basting every 10 minutes during the last 1/2 hour of baking.
  • Transfer duck to a platter.
  • Garnish with orange slices.
  • Serve hot.

For honey syrup
2 oranges, cut into 1/4-inch-thick rounds
4 cups water
3 tablespoons honey
3 tablespoons dark (black or mushroom) soy sauce
For duck
1 (5 1/2- to 6-lb) fresh Pekin duck (sometimes called Long Island duck), excess fat removed from cavity, rinsed inside and out, and patted dry
1 tablespoon five-spice powder
1 tablespoon coarse sea salt
1 teaspoon coarsely ground mixed or black peppercorns
2 small oranges, quartered
6 (1/4-inch-thick) fresh ginger slices

Steps:

  • Make syrup:
  • Bring syrup ingredients to a boil in a heavy saucepan, stirring, then simmer, stirring occasionally, 20 minutes.
  • Season duck:
  • While syrup is simmering, fold neck skin of duck under body and fasten with a small skewer.
  • Stir together five-spice powder, salt, and pepper, then rub inside cavity. Put duck on a rack set in a roasting pan.
  • Coat and dry duck:
  • Ladle hot syrup over duck (do not ladle any into cavity), turning duck occasionally to coat all over. Discard syrup in roasting pan and set duck, breast side up, on rack in pan. Prop rack up over a short edge of pan so duck is tilted (large-cavity side down) to facilitate draining of any moisture it gives off. (To prevent rack from slipping, put a piece of crumpled plastic wrap between pan and rack.)
  • Dry duck, uncovered and chilled in refrigerator, 3 days.
  • Roast duck:
  • Preheat oven to 325°F. Let duck stand at room temperature 30 minutes.
  • Remove plastic wrap and set rack back into pan. Stuff duck with orange quarters and ginger and close cavity opening with a wooden skewer. Prick duck all over with tip of a sharp paring knife and pour 1 cup water into pan.
  • Roast duck in middle of oven 1 1/2 hours. Increase oven temperature to 450°F and roast until skin is dark brown and very crisp and a thermometer inserted in thick part of thigh registers 170°F, 25 to 30 minutes more.
  • Transfer duck to a heated serving platter and remove cavity skewer. Let stand 30 minutes before carving.

1 teaspoon salt
1/4 cup lemon juice
1 orange, unpeeled, 1/2 inch cut off both ends
1 apple, unpeeled, 1/2 inch cut off both ends
1 onion
1 cup orange juice
1 orange, sliced
1 orange, rind of, coarsely grated
1 cup water
2 tablespoons duck fat
3 tablespoons brown sugar
1 cup orange juice
4 tablespoons currant jelly
2 tablespoons lemon juice
1/2 cup duck broth (or duck drippings*)
4 tablespoons cornstarch
4 tablespoons water

Steps:

  • Wash duck with cold water. Dry it well. Salt inside and out. Sprinkle lemon juice in cavity and rub skin with lemon juice too. If duck is fresh killed, refrigerate it for 1 or 2 days.
  • Place orange, apple and onion in cavity of duck. These will be removed after roasting and discarded. Preheat oven to 350°F.
  • Truss bird by bringing cord under back and around sides of breasts, under tail, and then tie around legs. Place duck on a rack in an open roasting pan and cook for 1 hour.
  • Set oven up to 400°F and roast 30 to 60 minutes more. During this time, turn bird for even browning and baste with orange juice.
  • Remove duck from oven and drain all fat from pan. Save brown drippings and 2 tablespoons fat for your sauce.
  • Duck may be kept in oven while you cook the sauce.
  • If you own a rotissierie by all means use it. This is an excellent method for duck. Allow about one hour on high heat. Entire cooking time for oven roasting should be 2 to 2 1/2 hours.
  • For family style service, cut duck into eighths 30 minutes before dinner. Place duck and orange slices on an ovenproof platter. Coat all with sauce. Before serving, broil for 1 minute, 4 inches below flame. Yield: 2 to 3 servings.
  • FOR THE SAUCE:.
  • Simmer rind and water for 5 minutes. Add duck fat with brown sugar, orange juice, jelly, lemon juice and duck broth. Simmer all gently for 2 to 3 minutes. Blend cornstarch with water in a cup. Add the cornstarch mixture slowly, if you obtain the desired thickness before you have used it all, stop.
  • *If you have not used giblets to prepare broth, hold roasted duck over sauce to allow cavity juices to run down into sauce. This fortifies the duck flavor of the sauce.

2 -3 oranges
100 g sugar
1 tablespoon freshly grated ginger
2 small red chilies, finely sliced
2 star anise
2 cinnamon sticks
1 tablespoon sweet chili sauce
1 tablespoon Thai fish sauce
1 tablespoon rice wine vinegar (or any vinegar)
2 tablespoons red wine or 2 tablespoons port wine
4 duck breasts, around 200 g each
1 tablespoon canola oil
2 spring onions, trimmed

Steps:

  • Scrub the oranges well, cut the rind from 2 oranges, using a sharp knife, and trim off most of the pith.
  • Cut the rind into short, thin strips.
  • Squeeze the juice from the oranges, you need 250ml.
  • Combine the orange rind and juice, sugar, ginger, chilli, star anise, cinnamon sticks, sweet chilli sauce, fish sauce, vinegar and red wine in a saucepan and bring to the boil, stirring.
  • Boil for around 10 minutes, stirring occasionally, until lightly syrupy.
  • Prick the duck skin well, and heat the oil in a non-stick frying pan.
  • Add the duck breasts and sear, skin side down for 8 minutes or till brown.
  • Then turn and cook for another 8 minutes.
  • Remove the duck and allow it to rest for 5 minutes before serving.
  • Cut the spring onions into finger lengths, then into strips.
  • Slice the duck thickly, arrange on warmed plates and scatter with spring onion shreds.
  • Spoon the sauce over the top.
  • Serve with rice or noodles.

1 (2 kg) duck
40 g maple syrup
60 g honey
20 g Dijon mustard
1/2 teaspoon dried thyme
100 ml orange juice
100 ml balsamic vinegar
10 g garlic
40 ml orange liqueur or 40 ml port wine

Steps:

  • Preheat oven to 190c.
  • Mix all the ingredients (except the duck!) together in a small saucepan and simmer for 5 minutes.
  • Reserve 1/4 of the glaze.
  • Sit the duck on a rack over a baking dish, baste and place in oven.
  • Baste the duck every 10 minutes throughout the cooking process with remaining 3/4 of glaze.
  • A 2kg duck should take about 1 hour 15 minutes to cook, but give one of his legs a pull, and if it moves freely and any juices run clear, your duck will be cooked.
  • Place on a serving platter brush with reserved glaze and serve.
  • Pass any remaining reserved glaze to be spooned over carved duck.
