3 tablespoons butter, room temperature
1/2 cup brown sugar
1/4 cup honey
1 egg
1 tablespoon water
1/2 cup whole wheat flour (all-purpose is good too)
1/2 teaspoon salt
1/4 teaspoon baking soda
1 1/2 cups rolled oats (aka oatmeal)
chocolate chips (optional) or chopped nuts, etc (optional)

Steps:

  • Preheat oven to 350 degrees F. Spray a cookie sheet with nonstick cooking spray (just for convenience :]).
  • Using a mixer with the paddle attachment, mix together the butter, brown sugar, honey, egg and water thoroughly.
  • Sift together the dry ingredients then stir in the oats. Add the dry ingredients to the wet and mix. Add any additional ingredients you've chosen.
  • Drop by heaping teaspoonfuls onto the cookie sheet. Bake 12 to 15 minutes. Cool on a wire rack.

Do you like chewy cookies? Or do you prefer cakey ones? Our oatmeal-raisin cookies can be both! For a chewy cookie, bake them right away. For a cakey cookie, let the dough rest in the refrigerator for at least 3 hours (or overnight works even better) to allow the oatmeal to hydrate. Then bake for a puffy cookie. We used dark brown sugar for added flavor and moisture but our secret ingredient is honey. When baked right away, the honey causes the cookie to spread, keeping it soft and moist. When you let the dough rest, the oatmeal and flour absorb the honey for that classic cakey texture.

1 cup all-purpose flour (see Cook's Note)
1 1/4 teaspoons kosher salt
1 teaspoon baking soda
1 teaspoon ground cinnamon
3/4 cup packed dark brown sugar
1 stick (8 tablespoons) unsalted butter, at room temperature
1/4 cup honey
1 tablespoon pure vanilla extract
1 large egg, at room temperature
2 1/2 cups old-fashioned rolled oats
1 cup raisins

Steps:

  • Arrange an oven rack in the center of the oven and preheat to 350 degrees F. Line a rimmed baking sheet with parchment paper.
  • Whisk together the flour, salt, baking soda and cinnamon in a small bowl until combined. Beat the brown sugar and butter in a large bowl with an electric mixer on medium-high speed until light and fluffy, about 3 minutes. Add the honey, vanilla, egg and 1 tablespoon warm water and beat on high speed until creamy, scraping the sides and bottom of the bowl, about 3 minutes more. Add the dry ingredients and mix on low speed, scraping the bowl as needed, until completely combined. Add the oats and beat on low speed until combined. Fold in the raisins until evenly distributed. Arrange twelve 1-ounce scoops (2-tablespoon portions) of cookie dough on the prepared baking sheet, leaving about 2 inches between each. Bake until the cookies are lightly golden around the edges, 15 to 20 minutes. Cool on the sheet for 10 minutes, and then transfer to a wire rack to cool completely. Let the baking sheet cool, and then repeat with the remaining cookie dough.

2 c all purpose flour
1 tsp baking soda
1 tsp baking powder
1 tsp ground cinnamon
1/2 tsp salt
1 c unsalted butter (room temp)
1 1/2 c brown sugar (i use dark, but light is fine), packed
1 Tbsp honey
1 tsp orange extract
2 large eggs
3/4 c craisins (dried, sweetened cranberries)
1/2 - 3/4 c mini cinnamon chips (i use hershey's)
2 c oats, quick cooking (not instant)
1/2 c chopped walnuts; or any nut you prefer (optional)

Steps:

  • 1. Preheat oven to 350 degrees.
  • 2. In a medium sized bowl, sift together the flour, baking soda, baking powder, cinnamon and salt. Set aside.
  • 3. In a large bowl, cream together the butter and sugar until fluffy.
  • 4. Add the honey and orange extract. Beat until fluffy.
  • 5. Add the eggs, one at a time, and beat until fully incorporated.
  • 6. Mix in the craisins, cinnamon chips, oats and nuts (if desired).
  • 7. Add flour mixture and mix well.
  • 8. Roll into 1 inch balls and place on ungreased cookie sheets. Bake for 13-15 minutes, or until lightly browned around the edges.
  • 9. Place cookies on wire rack until completely cooled.

1/4 cup canola oil
1/2 cup honey
1 large egg
1/4 cup smooth unsalted almond butter

1/4 cup nonfat dry milk powder
1 cup whole wheat pastry flour (or 1/2 cup each all-purpose and whole-wheat flour)
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon

1 3/4 cups rolled oats
1/2 cup raisins

Steps:

  • Preheat the oven to 350*F. Mist 2 baking sheets with cooking spray. Beat the butter, canola oil, honey, egg, almond butter and vanilla extract in a large bowl with a mixer until combined.
  • In another bowl, whisk the dry milk, flour, baking soda, cinnamon and salt. Add the flour mixture to the butter mixture and stir to combine. Stir in the oats and raisins.

1 cup all-purpose flour (see Cook's Note)
3/4 teaspoon baking soda
1 teaspoon apple pie spice
1/2 teaspoon fine salt
1/2 cup granulated sugar
1 cup packed light brown sugar
2 large eggs, at room temperature
1 teaspoon pure vanilla extract
2 3/4 cups rolled oats
3/4 cup raisins
2/3 cup heavy cream
1/3 cup sour cream
1 tablespoon honey

Steps:

  • Position a rack in the center of the oven and preheat to 350 degrees F. Grease the bottom and sides of a 10-inch cast iron skillet with 1 tablespoon of the butter.
  • Whisk the flour, baking soda, salt and apple pie spice together in a large bowl. Beat the remaining butter and granulated sugar together in a large bowl with an electric mixer on low speed until just incorporated. Increase speed to high and mix until light and fluffy, scraping down the sides of the bowl with a rubber spatula as needed. Add the brown sugar and beat until incorporated, then add the eggs one at a time, beating in between additions, then mix in the vanilla. Reduce the speed to low and gradually add the flour mixture, mixing until a smooth dough forms, scraping down the sides of the bowl as needed. Stir in the oats and raisins.
  • Use a rubber spatula to scrape the batter into the prepared skillet, gently spreading it to the edges and smoothing the top. Bake until the top is golden, the sides are beginning to brown and the center is still soft, about 40 minutes. Cool in the pan on a wire rack for 15 minutes.
  • Meanwhile, beat the heavy cream in a medium mixing bowl until soft peaks form. Add the sour cream and honey and continue beating to form medium peaks. Keep the whipped cream refrigerated until ready to use. Slice the cookie into wedges and serve warm or at room temperature with the honeyed whipped cream.

6 3/4 ounces all-purpose flour (1 1/2 c.)
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
2 1/2 cups old fashioned oats
8 ounces unsalted butter, slightly softened
1 cup packed light brown sugar
1/2 cup granulated sugar
2 large eggs, beaten lightly
1 tablespoon honey
2 teaspoons pure vanilla extract
6 ounces dried cranberries (1 1/3 c.)
5 ounces chopped pecans (about 1 c.)

Steps:

  • Oven to 350 degrees F.
  • (if baking right away).
  • Line sheet pans with parchment.
  • Mix the dry ingredients together (not including sugars), then stir in the oats.
  • Set aside.
  • Beat the butter and both sugars together until light and fluffy.
  • Add the eggs, then scrape down the bowl; add the honey and vanilla and beat until blended.
  • Add the flour mixture in two additions, beating each until well combined.
  • Stir in the cranberries and pecans.
  • At this point, you can either bake, or freeze.
  • To freeze, just scrape the dough onto plastic wrap, roll into a log, wrap tightly, and freeze until ready to bake.
  • Then just take them out of the freezer, let sit for about 15 minutes, then slice into 3/16" thick slices and bake as directed.
  • To bake immediately: drop by tablespoonfuls about 2 inches apart on parchment lined sheet pans.
  • Bake until the centers of the cookies are soft and no longer look wet; about 9-11 minutes.
  • Let cool on the pan for 5 minutes, then transfer to a rack to cool.
