  • Cook bacon in large skillet on medium heat until crisp, turning frequently. Drain bacon, reserving drippings in skillet. Cool.

6 pieces bacon
1 cup chopped onion
6 to 8 sprigs fresh thyme
Kosher salt and freshly ground black pepper
1/2 cup dark brown sugar
3 cloves garlic, grated on a rasp
1 tablespoon dry mustard
1 teaspoon sweet paprika
1/2 cup ketchup
2 tablespoons Worcestershire sauce
2 tablespoons Sriracha
4 Roma tomatoes, seeded and chopped
3 (15.5-ounce) cans cannellini beans, 1 drained
4 cups beef stock

Steps:

  • Heat the oven to 350 degrees F.
  • Over a Dutch oven or oven-safe pot, cut 3 strips of the bacon into small pieces and cook on medium-high heat until the fat is rendered and the bacon is crisp. Remove the bacon to a paper towel-lined plate leaving the fat in the pot. Add the onions, thyme, and then season with salt and pepper. Cook until the onions are tender and translucent, about 5 minutes. Add the brown sugar, garlic, dry mustard, paprika, ketchup, Worcestershire sauce, and Sriracha. Stir to mix and cook until the brown sugar melts and the pot begins to bubble. Add the tomatoes, beans (don't drain 2 of the cans), stock, and remaining 3 strips of uncooked bacon.
  • Cover and place in the oven to bake for 40 minutes, remove the lid and continue to cook for 20 minutes more. Remove from the oven and fish out the bacon strips and discard them, or leave them if you don't mind the texture. Serve the beans warm with chopped bacon sprinkled over the top.

1 medium green bell pepper, cut into small dice
1 red bell pepper, cut into small dice
1 fresh jalapeno, chopped
4 large cans (28 ounces each) pork and beans
1 cup barbecue sauce
1/2 cup brown sugar
1/4 cup distilled or cider vinegar
2 tablespoons ketchup
1 tablespoon yellow mustard
2 chipotle peppers, minced
6 slices thin bacon

Steps:

  • Adjust the oven rack to the lower-middle position and preheat the oven to 325 degrees F.
  • Fry the regular chopped bacon in a large, deep skillet until the bacon has partially cooked and released about 1/4 cup drippings. Add the onions, peppers and jalapenos, and saute until tender, about 5 minutes. Add the beans, barbecue sauce, brown sugar, vinegar, ketchup, mustard and chipotles, and bring to a simmer. (If the skillet is not large enough, add the beans and heat to a simmer and then transfer to a large bowl and stir in the remaining ingredients). Pour the flavored beans into an aluminum pan. Top with the uncooked slices of bacon (you can halve the slices if you like). Then bake until the beans are bubbly and the sauce is the consistency of pancake syrup, about 2 hours. 2 portobello mushrooms
⅓ cup canola oil
¼ cup liquid aminos
⅓ cup maple syrup
2 tablespoons brown sugar
1 teaspoon smoked paprika
1 tablespoon canola oil
½ medium yellow onion, diced
3 cloves garlic, minced
1 teaspoon smoked paprika
1 teaspoon dijon mustard
¾ cup water, plus more as needed
¼ cup tomato paste
¼ teaspoon freshly ground black pepper
1 ½ teaspoons kosher salt, plus more taste
¼ cup brown sugar
1 tablespoon vegan worcestershire sauce
2 tablespoons molasses
1 tablespoon maple syrup
3 tablespoons apple cider vinegar
30 oz great northern beans, drained and rinsed

Steps:

  • Make the portobello bacon: Slice the portobello mushrooms into ¼-inch (6 mm) thick slices.
  • In a 9 x 13-inch (22 x 33 cm) baking dish, whisk together the canola oil, liquid aminos, maple syrup, brown sugar, and paprika.
  • Lay the mushroom slices in the dish, and let marinate for 30 minutes, flipping halfway through.
  • Make the portobello bacon: Preheat the oven to 400°F (200°C). Set a wire rack inside a rimmed baking sheet.
  • Transfer the mushroom slices to the wire rack, spacing evenly so they aren't touching.
  • Bake for 30-40 minutes, until the mushrooms are slightly leathery and have lost most of their moisture and the edges are crispy. Remove from the oven and let cool completely; the mushrooms will continue to crisp as they cool. Once cool, roughly chop the mushrooms into ½-inch (1 ¼ cm) pieces.
  • Meanwhile, make the baked beans: Heat the canola oil in a large skillet over medium-low heat. When the oil is shimmering, add the onion and sauté for 10 minutes, until translucent and starting to caramelize. Add the garlic and sauté for another 5 minutes, until translucent and softened. Add the paprika and mustard and cook for about 30 seconds, until fragrant.
  • Stir in the water, tomato paste, pepper, and salt. Bring to a simmer, and then add the brown sugar, vegan Worcestershire, molasses, maple syrup, and apple cider vinegar and stir to combine. Add the beans. Increase the heat to medium and simmer for 30 minutes, stirring frequently so the sauce doesn't burn. Adjust the heat as necessary to maintain a low simmer, and add more water, a few tablespoons at a time, if the mixture starts to look dry. Season with more salt to taste, then remove the pan from the heat.
  • Serve the beans immediately, garnished with the portobello bacon, or let cool to room temperature, cover, and refrigerate until ready to serve. Store the portobello bacon in an airtight container at room temperature until ready to use.
