- Cut pork into 1/4-inch slices. Mix remaining ingredients except water and brown sugar in shallow glass or plastic bowl. Add pork; turn to coat with marinade. Cover and refrigerate 15 minutes. Mix water and brown sugar until sugar is dissolved; set aside.
- Spray 10-inch nonstick skillet with cooking spray; heat over medium-high heat. Remove pork from marinade; discard marinade. Cook pork in skillet 5 to 6 minutes, turning once, until no longer pink. Remove pork from skillet; keep warm.
- Reduce heat to low. Stir water mixture into drippings in skillet. Heat to boiling; stirring constantly. Boil and stir 1 minute. Drizzle sauce over pork.

- Place honey, orange juice, vinegar, wine, Worcestershire sauce, onion powder, tarragon, and mustard in a large resealable plastic bag. Slash fatty edge of each chop in about three places without cutting into the meat; this will prevent the meat from curling during cooking. Place chops in the plastic bag, and marinate in the refrigerator for at least 2 hours.
- Preheat grill for high heat.
- Lightly oil grill grate. Place chops on grill, and discard marinade. Cook chops for 6 to 8 minutes, turning once, or to desired doneness.

GRILLED WHOLE PORK LOIN WITH HONEY MUSTARD MARINADE RECIPE
Grilling a whole pork loin is relatively easy to do using the George Foreman Indoor/Outdoor Grill.

- Trim your pork loin by removing the excess fat cap. Trim the tenderloin of the silver skin. Check out this video for removing the silver skin. Place the pork in a large sealable plastic bag. Place the bag into a baking dish to catch any spills after the marinade is added.
- Whisk together the 6 marinade ingredients in a bowl and pour the mixture over the pork in the bag. Seal this well and massage so that the pork is entirely covered with the marinade. Place the dish with the bagged pork in the refrigerator for 4 to 8 hours.
- Remove the pork from the refrigerator and allow it to come almost to room temperature, approximately 30 minutes.
- Preheat your Indoor/Outdoor Grill to setting 4.
- While the grill is heating up, remove the pork from the bag and discard the marinade. You don't want to use it because of the raw pork juices.
- Place a wad of paper towel in your grill tongs and dampen it with EVOO. Rub the grill plate surface with the oil soaked towel. Place the pork on the grill and close the lid.
- If using a pork loin roast, grill for up to 40 minutes, turning over at 20 minutes. Test the temperature at 20 minutes and every 10 minutes after that. You are looking for an internal temperature of 155 to 165 degrees Fahrenheit.
- If using pork tenderloin, grill for up to 20 minutes, rotating a quarter turn every 5 minutes to make sure all sides are evenly browned. Test the internal temperature at 12 minutes and every 4 minutes after that. With tenderloin you are looking for approximately 150 to 160 degrees Fahrenheit, depending on how pink you enjoy this very lean cut.
- Remove the pork to a cutting board. Tent with aluminum foil and allow it to rest for 10 minutes before slicing. Grill your vegetables and fruit while the pork is resting (see notes in the introduction). You can also make a sauce for the pork by whisking together 1/4 cup of mustard with 1/4 cup of honey and 1 TBS of white wine to thin it out.
- Slice the pork into 1/4 to 1/2 inch thick slices and serve with the apples, cabbage, and honey mustard sauce.

- Place soy sauce, honey, garlic, and dry mustard into a large resealable plastic bag. Squeeze the bag to thoroughly mix the marinade and add pork tenderloin pieces to the bag. Squeeze bag several times to coat pork with marinade, squeeze air from bag, and seal. Refrigerate pork at least 1 hour or up to overnight.

- Season both sides of the pork medallions with sea salt and fresh ground black pepper. Set aside.
- Heat a cast iron pan over high heat for a few minutes. Add a teaspoon of olive oil and the pork medallions. Sear the pork on each side for about 2 minutes. Remove from pan and place on a plate to rest.
- In a medium deep sided skillet set over medium heat, add the butter and garlic. Sizzle for about a minute. Add the paprika and mustard. Stir for about 30 seconds. Add the flour and stir quickly to form a paste, about a minute. Gradually start pouring in the stock, whisking as you pour until you have a smooth and slightly thickened sauce. This will take about 2 minutes. Add the cooking cream and bring to a simmer. Reduce heat to low and add the pork. Cover and leave to cook for 10 - 12 minutes or until pork is cooked through.
- Serve pork medallions with the sauce. Best served straight away.

ROASTED PORK TENDERLOIN WITH HONEY MUSTARD SAUCE

- Preheat oven to 425*F.
- Place a rack in a roasting pan, spray with nonstick spray, and place in oven.
- Remove any excess fat or silverskin from the tenderloin.
- Season the tenderloin with salt and pepper.
- Heat the vegetable oil in a large saute pan over medium high heat.
- Sear the tenderloin until it is golden brown on all sides, about 5 minutes.
- Remove the tenderloin and place it on the rack in the roasting pan.
- Roast to the desired doneness.
- (Pork is safely cooked when it reaches an internal temperature of 160*f) This will take approximately 15 to 20 minutes.
- while the tenderloin is roasting, return the saute pan to medium heat.

- Carefully skim and discard the fat from the pan juices.
- Pour the degreased pan juices into the sauce.
- Bring the sauce to a boil again, reduce the heat and simmer until it is slightly reduced again.
- Serve the pork sliced with the warm honey-mustard sauce.

PORK MEDALLIONS WITH BALSAMIC-HONEY GLAZE

- Preheat the oven to 350°F. Glaze: Put garlic and rosemary in a small bowl. Add the vinegar, honey, olive oil, mustard, salt, and pepper to taste and stir to combine.
- Pork: slice the tenderloin into 1-inch thick round medallions. Cover the bottom of a medium skillet with a light film of canola oil and heat over medium-high heat until hot. Add the pork slices in one layer, season with salt and pepper and sear for 1 minute. Turn and sear for 1 more minute, until lightly browned.

- Combine the olive oil, chicken broth, balsamic vinegar, spicy brown mustard, honey, thyme, sea salt and freshly cracked pepper, to taste, and minced garlic together in a large zip lock bag. Mix well; pour 3 tbsp of the marinade into a separate dish then cover with a lid. Reserve for later use.
- Remove the silverskin from the pork tenderloin (see link above for instructions). Cut the tenderloin into 1 inch thick medallions. Place into the zip lock bag and seal. Place into the refrigerator for 30 minutes.
- Remove the meat from the refrigerator 20 minutes prior to cooking. Preheat the oven to 400 degrees. Coat an OVEN proof skillet with cooking spray and heat over medium heat. Once the pan is hot, add the pork medallions and cook for 2-3 minutes or until golden brown. Flip the pork over, add the reserved marinade to the pan along with the 2 tablespoons of chicken broth, then place the pan into the oven and cook for 13-15 minutes or until pork is cooked through. Remove from the oven. Place the medallions on a serving platter then drizzle with the sauce from the pan. Garnish with chopped parsley. Enjoy.
