Honey Lime Shrimp (Paleo) - a simple marinade for shrimp that packs huge flavor! Serve with tortillas or lettuce wraps. Paleo friendly and naturally gluten free.

1 lb raw shrimp (deveined no tails)
1/4 cup avocado oil (or olive oil)
2 1/2 tablespoons honey
Juice of 1 lime (about 2 tablespoons)
3 cloves garlic (minced)
1 tsp sea salt
1/2 tsp pepper

Steps:

  • To make the marinade, whisk together the olive oil, honey, lime juice, garlic, salt and pepper. Pour mixture over shrimp and marinate for at least 30 minutes.
  • Thread shrimp onto skewers and grill for 6-8 minutes, turning once. To assemble tacos, place grilled shrimp on a lettuce leaf or tortilla and top with desired toppings such as slaw, slices of avocado, and Lime Crema (see recipe below).

1 lb raw shrimp, peeled and deveined
salt, to taste
pepper, to taste
2 teaspoons garlic, minced, separate in half
¼ cup honey
1 lime, juiced
1 lb asparagus, sliced
1 red bell pepper, sliced

Steps:

  • Heat oil in a large skillet over medium-high heat.
  • Add shrimp, salt, pepper, 1 teaspoon of garlic, honey and lime juice. Mix well. Cook for 2 minutes, or until bottom of shrimp turns pink and opaque.
  • Flip the shrimp and cook an additional 2 minutes or until shrimp are fully pink and there are no gray bits. Remove shrimp from skillet and set aside.
  • In a fresh skillet (or you can clean out the same one), add oil and sauté the asparagus and bell pepper with salt, pepper, and the remaining garlic.
  • When the asparagus and bell pepper have reached your desired doneness, add the shrimp back into the skillet and combine.
  • Serve immediately.
  • Enjoy!

1/2 lb large shrimp, peeled and deveined
1/4 cup olive oil
2 tablespoons honey
3 tablespoons lime juice
2 garlic cloves, minced
1/2 teaspoon kosher salt
1/4 teaspoon black pepper
1/4 teaspoon red pepper flakes

Steps:

  • In a large ziploc bag, combine all the marinade ingredients. When everything is well-combined, add the shrimp, squeeze as much air as possible out of the bag, and close it up. Place it in the fridge.
  • Let the shrimp marinate for 30-60 minutes, flipping the bag around once or twice during that time, so that all the shrimp stay evenly covered in the marinade.
  • When you're ready to cook, take the shrimp out of the fridge and let them sit at room temperature for about 10 minutes.
  • Heat a large skillet over medium-high heat; there is no need to add any oil or butter to the pan, as the marinade has enough oil in it to keep the shrimp from sticking to the pan. (If you would prefer to use the grill for these, you can thread them onto skewers and toss them on the grill at this point.).
  • Add your shrimp to the pan in a single layer, making sure they are not too crowded; you can always cook them in more than one batch.
  • Let them cook on one side for about a minute, until they curl up and start to turn pink.
  • Flip them over, and cook for another 30 seconds or so, until the shrimp are opaque.
  • Remove from the pan, and serve immediately!

This recipe was originally used as a dressing for cedar planked salmon. I decided to use it as a marinade for shrimp. It worked beautifully. Gives the shrimp an excellent flavor. From the Weber's Real Grilling Cookbook

2 tablespoons fresh lime juice
2 tablespoons rice vinegar
2 tablespoons Dijon mustard
2 tablespoons honey
2 tablespoons minced fresh chives
1 teaspoon kosher salt
1/2 teaspoon granulated garlic
1/2 teaspoon fresh ground black pepper
1/4 teaspoon ground cayenne pepper
1/4 cup extra virgin olive oil
1 lb shrimp, peeled and deveined

Steps:

  • Place all ingredients, except oil, in a blender and mix until well blended. With the blender still running, slowly pour in the oil to make a smooth dressing.
  • You can also just whisk all ingredients together until well combined.
  • Put shrimp in plastic zipper bag, cover with marinade and refrigerate for 1 to 2 hours.
  • Place shrimp in a grill wok, or thread onto skewers and grill 5-10 minutes or until shrimp turn pink.
  • Prep time includes marinade time.
