EASY OLD FASHIONED MEATLOAF

Easy Old Fashioned Meatloaf image

No fancy ingredients here... Not like we need another meatloaf recipe, but I figured I'd should post my Grandma's for people like me who like a quick easy meatloaf without a lot of fuss. Most of the meatloaves I saw here had things I'd never even consider putting in a meatloaf! :) At times I will substitute the onion with approx. 1/4 cup dried onion flakes. I also have substituted the garlic with garlic powder. I've never tried making it with horseradish. (I was a notoriously picky eater as a kid so I don't think Grandma put it in when I came to visit either.) I usually don't bother beating the egg... (Boy do I sound lazy! Don't tell Mom! LOL!) I've only recently started putting ketchup on the top before baking, so I don't think it's necessary to keep the meatloaf moist. Mom used to use her own dried bread crumbs, but I use the plain storebought kind. I haven't been adventurous enough to try any flavored bread crumbs... Make sure lean ground beef is used otherwise the meatloaf can get too greasy and/or bubble over the pan while baking. I also recommend checking the center to make sure it's done. On occasion it has taken over an hour to bake.

Old-Fashioned Meatloaf image

Mushrooms, garlic and oats sneak some extra nutrients into this hearty and easy meatloaf. Serve with sweet potatoes and your favorite green vegetables for a super-satisfying comfort food dinner.

Provided by Andrea Kirkland, M.S., RD

Categories     Diabetic Ground Beef Recipes

Time 1h40m

Number Of Ingredients 15

½ cup quick-cooking oats
4 ounces cremini mushrooms (1 1/2 cups)
1 tablespoon olive oil plus 1 tsp., divided
½ cup finely chopped onion
½ cup finely chopped green bell pepper
6 cloves garlic, minced
2 tablespoons cider vinegar
1 ½ pounds lean ground beef
1 large egg, lightly beaten
1 tablespoon Dijon mustard
1 tablespoon Worcestershire sauce
¼ teaspoon salt
½ teaspoon ground pepper
¼ cup ketchup
¼ teaspoon ground cayenne pepper

Steps:

  • Preheat oven to 350 degrees F.
  • Pulse oats in a food processor to form a coarse meal. Transfer to a large bowl and set aside. Pulse mushrooms in the food processor until minced, 10 to 15 pulses.
  • Heat 1 Tbsp. oil in large nonstick skillet over medium-high heat. Add onion, bell pepper, and garlic; cook, stirring occasionally, until tender, 3 to 4 minutes. Add the mushrooms; cook, stirring occasionally, until browned, 3 to 5 minutes. Add vinegar; cook, stirring and scraping up any browned bits, until the liquid has evaporated, 1 to 2 minutes. Let cool for 10 minutes.
  • Add the mushroom mixture to the bowl with the oats, along with beef, egg, mustard, Worcestershire, salt, and pepper. Gently mix until combined; do not overmix.
  • Brush an 8x4-inch loaf pan with the remaining 1 tsp. oil; transfer the beef mixture to the pan and smooth into a loaf. Combine ketchup and cayenne in a small bowl; brush over the top of the loaf.
  • Bake until an instant-read thermometer inserted in the thickest part registers 160 degrees F, 50 to 60 minutes. Let stand for at least 10 minutes before removing from the pan. Using a serrated knife, carefully cut the loaf into 6 slices.

OLD FASHIONED MEATLOAF RECIPE WITH OATMEAL

Old Fashioned Meatloaf Recipe with Oatmeal image

It's a classic for a reason! This old fashioned meatloaf recipe with oatmeal is comfort food at its finest! Hearty and flavorful, and surprisingly healthy (it's gluten free!) This easy dinner recipe can be made in a skillet or loaf pan and is sure to be a family favorite.

Provided by Sara Garska

Categories     Main Course

Time 1h17m

Number Of Ingredients 10

1 pound ground beef
1/4 pound ground pork (Can also use sausage or Italian sausage)
1 cup whole oats
1/4 cup milk
1 egg
1 cup tomato sauce or ketchup (divided)
1/4 cup onion (chopped)
1/4 cup green pepper (chopped)
1 tsp salt
1/2 tsp pepper

Steps:

  • Put ground beef, sausage or ground pork, and oats into a mixing bowl.
  • Add egg, milk, 1/4 cup tomato sauce or ketchup, salt, pepper, and chopped vegetables to the blender. Pulse to chop vegetables into smaller pieces.
  • Add liquid/vegetable mixture to the ground meat and oats. Mix up with your hands. Let sit for about 15 to 30 minutes so the oats can absorb some of the liquid.
  • Shape the mixture into a round loaf or put into a bread pan.
  • If you are making a free-standing round loaf, cover a baking sheet with foil. Make sure there is a rim on the sheet because your meatloaf may release liquids. You can also use a large cast iron skillet too.
  • Bake in a 350-degree oven for 45 minutes. Carefully remove from oven.
  • Put the remaining tomato sauce or ketchup on top and bake an additional 15 to 20 minutes.
  • Remove from the oven and let stand for about 15 minutes before serving.

ANNE ROSENZWEIG'S OLD-FASHIONED MEAT-AND-RICE LOAF WITH SPICED CARROTS

Anne Rosenzweig's Old-Fashioned Meat-And-Rice Loaf With Spiced Carrots image

Provided by Molly O'Neill

Categories     dinner, main course

Time 3h45m

Yield Six to eight servings

Number Of Ingredients 15

2 carrots, peeled and cut into quarters lengthwise
1 teaspoon chili oil
1 tablespoon vinegar
1 tablespoon hot curry powder
1 onion
2 cloves garlic
1 1-inch piece fresh ginger, peeled
2 teaspoons butter
1 pound ground veal
1 pound ground sirloin
1 cup cooked white rice, cold
1 egg
1/2 cup shelled, unsalted pistachio nuts
2 teaspoons kosher salt
1 teaspoon coarsely ground black pepper

Steps:

  • Blanch the carrots for 3 minutes to soften; drain but do not cool. Combine the chili oil, vinegar and curry powder. Toss the warm carrots in this mixture and marinate for 2 hours. Drain and set aside.
  • To make the meatloaf, preheat the oven to 350 degrees. Place the onion, garlic and fresh ginger in a food processor and puree. Warm the butter over medium-high heat and saute the onion mixture until soft, about 5 minutes, stirring to avoid sticking. Remove from the heat and cool.
  • In a large mixing bowl, combine the sauteed vegetables with the veal, sirloin, rice, egg, pistachio nuts and salt and pepper by hand, taking care to mush the meat as little as possible.
  • Place half this mixture in a nonstick loaf pan. Top with an even layer of marinated carrots and then the rest of the meat. Press to make a solid loaf and bake for 1 hour. Allow to rest at room temperature for 20 minutes before slicing and serving with steamed rice or couscous.
