- Place an oven rack in the center of the oven. Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper.
- In a food processor, pulse together the flours, arrowroot, sugar, lavender, salt and baking soda.
- Add the butter and lemon zest. Pulse until the mixture forms a coarse meal. Add the honey and lemon juice. Pulse until the mixture forms a soft dough. Form the dough into 1-inch round balls and press into discs, about 1 1/2 inches in diameter and 1/4-inch thick. Arrange in a single layer on the prepared baking sheet. Bake until light brown around the edges, 9 to 11 minutes. Cool for 5 minutes. Transfer to a wire rack and cool completely, about 15 minutes.
HONEY LAVENDER COOKIES

- In a large bowl, cream together butter and honey until smooth. Beat in eggs and vanilla. Stir in the flour, baking powder, lavender, and salt. Cover, and chill dough for at least one hour (or overnight). Preheat oven to 400 degrees F. Roll out dough on floured surface 1/4 to 1/2 inch thick. I prefer a soft, thicker cookie, but this is your preference. Cut into shapes with any cookie cutter. A honey bee cookie cutter is particularly appropriate, but your favorite shapes will do. Place cookies 1 inch apart on un-greased cookie sheets, covered with parchment or a non-stick silicone baking mat. Bake 6 to 8 minutes for thinner cookies, 8 to 10 for thicker cookies. Cool completely before eating. The honey and lavender flavor doesn't really come through until they're completely cooled.

- Mix the granulated sugar with the lavender buds and place them in a sealed jar. Leave for at least a week, and sift the lavender buds out before using the sugar in this recipe. The amounts given are to make enough lavender sugar for this recipe but feel free to make more as it stores well. Also, if you don't have time to make lavender sugar, you can make this recipe using plain granulated sugar*.
- Beat the melted butter, honey, and lavender sugar until smooth.
- Next, beat in the egg and vanilla.
- Mix in the flour, baking soda, and salt until well incorporated.
- The dough will be very soft so refrigerate for at least thirty minutes and until it has firmed up. Cover with cling film or a beeswax food wrap.
- Preheat the oven to 350°F / 175°C (165°C for convection ovens)
- When the oven is hot, take two Tablespoon-sized pieces of dough (about 50-60 g) and shape them into balls.
- Flatten them with the palm of your hand and then roll in the coarse-grained sugar, coating the whole cookie. Sprinkle the tops with lavender buds and gently press them into the cookie.
- Place the cookies onto a sheet, allowing a full cookie's spacing between each. Any closer and they'll melt into one another as they bake.
- Bake on a baking sheet for 10 to 15 minutes or until the edges are crispy and light brown in color. They'll still be soft when you take them out so let them cool to room temperature before eating.
- Once cooled, store in a sealed container for up to a week at room temperature. In the refrigerator, they can last up to a month.

- Preheat oven to 350°F. Butter each madeleine mold in pan and dust with flour, tapping out excess. Melt 9 tablespoons unsalted butter in medium skillet over medium heat. Cook until butter turns golden brown, stirring often, 3 to 4 minutes. Set browned butter aside.
- Using electric mixer, beat egg whites, sugar, all purpose flour, and almond flour in medium bowl until mixture is blended and smooth. Place honey in small microwave-safe bowl. Heat just to warm, 5 to 10 seconds. Beat honey into batter. Add browned butter; beat to blend. Spoon 1 tablespoon batter into each prepared madeleine mold.
- Bake madeleines until tops are just dry and tester inserted into center comes out clean, about 12 minutes. Cool 5 minutes. Gently tap madeleines out of molds. Place on rack to cool slightly.
- To prepare additional madeleines, wash pan and cool completely. Butter and flour molds and fill as directed above. Serve madeleines warm.

HOMEMADE LAVENDER HONEY

HONEY-LAVENDER LEMONADE

- Combine the honey, lavender buds and 3 cups water in a saucepan over medium heat. Bring just to a boil, stirring to dissolve the honey. Set aside and allow to cool completely, then cover and refrigerate overnight.
- Add the lavender sprigs and the lemon juice to a large measuring cup and muddle to release the lavender oils. Strain the honey-lavender water and combine it with the muddled lemon juice. Let sit for 15 minutes before removing the lavender sprigs. Divide the lemonade between two 2-cup to-go containers. Refrigerate until ready to serve.
- Divide the vodka, if using, between the containers. Add some frozen grapes to keep the drink cold! Serve.

- Preheat oven to 300°F
- Place flour, confectioners' sugar and cornstarch in food processor; cover; pulse to blend.
- Add butter; pulse until coarse crumbs form.
- Add honey, lavender and vanilla; pulse until dough pulls away from side of bowl.
- Place dough in ungreased 9-inch tart pan with removable bottom.
- Place waxed paper over dough.
- Press to form a smooth even layer in bottom of tart pan.
- Remove waxed paper.
- Pierce dough with a fork, then score top with sharp knife into 12 wedges.
- Bake 25 to 30 minutes or until firm and just starting to brown around the edges. (Shortbread should be pale in color.)
- Place pan on wire rack.
- Cut through shortbread into wedges.
- While still warm but not hot, remove shortbread from pan to wire rack to cool.
- PREPARE VANILLA GLAZE:.
- Mix cup confectioners' sugar, milk and vanilla extract in small bowl until well blended and smooth.
- Drizzle vanilla glaze over cooled shortbread.
- OTHER VARIATION:.
- Sprinkle shortbread with confectioners' sugar.
