WASABI SESAME CRUSTED SEARED AHI TUNA SALAD



Wasabi Sesame Crusted Seared Ahi Tuna Salad image

3/4 cup wasabi sesame seeds
1/3 cup coarsely cracked black pepper
1/3 cup coarse Hawaiian sea salt
Four 6- to 8-ounce 1 1/2-inch-thick ahi tuna steaks
Vegetable oil, for oiling the grill
4 tablespoons sesame oil
1/2 cup honey
1/2 cup red wine vinegar
1/2 teaspoon ground black pepper
2 tablespoons Dijon mustard
1/2 cup soybean oil
2 ounces spring mix
4 tablespoons capers
2 large carrots
2 large tomatoes
1 small red cabbage
1 cucumber
1 romaine heart
1/2 medium red onion, finely diced
1 lemon
2 avocados

Steps:

  • For the fish: Blend the wasabi seeds, cracked black pepper and Hawaiian sea salt in a medium bowl. Place the ahi steaks in the bowl, and carefully roll and flip the steaks to ensure they are completely coated. Remove the steaks to a plate and refrigerate until ready to cook.
  • For the vinaigrette: Mix together the honey, vinegar, pepper and mustard in a small bowl, then stream in the oil, whisking constantly.
  • For the salad: Slice, dice, chop and mix the spring mix, capers, carrots, tomatoes, cabbage, cucumber, romaine and onion, to your liking, then toss with some vinaigrette and plate four salads. Place one lemon wedge on the side of each plate and quarter the avocados. Slice each quartered avocado 3 to 6 times, creating an avocado fan out of each quarter. Set aside.
  • Before heating your grill, you will need to scrape, clean and then oil it. Once clean, preheat to medium-high and close until ripping hot, about 10 minutes. Fold a clean dish towel into a squarish 4-by-6-inch block. Pour 2 cups vegetable oil into a bowl and dip one side of your dish towel block in the oil.
  • Open the grill and begin coating grill grates with the oiled towel block. Repeat until grill grates are slick and clean. Pour the sesame oil on a small plate. Place each steak in the sesame oil on both sides, then on the grill.
  • Cook for 1 minute on each side. Then pull immediately from grill, slice 1/8- to 1/4-inch-thick with a heavy sharp blade and place directly on your plated salads. Top each salad with an avocado fan. Lastly, pair your dish with a nice Chardonnay or a local IPA. Cheers and enjoy!

4 potatoes, peeled and diced
1/2 tablespoon wasabi paste or 1/2 tablespoon wasabi powder, plus
water, to make a paste
1 cup mayonnaise
2 stalks celery, chopped
2 slices cooked bacon, chopped or 1 tablespoon bacon bits
1/2 onion, chopped
1/2 apple, diced
1 tablespoon mint, minced (or Japanese ohba)
salt and pepper

Steps:

  • In a medium saucepan over high heat place potatoes covered with water.
  • Reduce heat to simmer and cook for 12 minutes or until tender.
  • Drain and spread potatoes on a cookie sheet. Cool to room temperature.
  • While potatoes are cooling, whisk the wasabi paste and mayonnaise together in a large bowl until blended.
  • Stir in potatoes, celery, bacon, onion, apple, mint, salt and pepper (to taste).
  • Refrigerate until serving. Serve cold or at room temperature.

3 to 4 tablespoons Wasabi Aioli, recipe follows
2 cups leftover salmon from Sake Poached Salmon with Somen and Fennel Salad, recipe follows
1/2 cup fine diced celery
4 pieces foccacia bread, sliced and grilled
2 tomatoes, thinly sliced
1 head butter lettuce, washed and dried
Salt and black pepper, to taste
1 large head of taro, very thinly sliced
1 tablespoon wasabi paste
2 tablespoons minced garlic
1 tablespoon minced ginger
2 tablespoons rice wine vinegar
2 egg yolks* (See Disclaimer)
1 cup canola oil
Salt and black pepper, to taste
1 cup sake
1 celery, sliced
1 peeled carrot, sliced
1 small onion, sliced
1 tablespoon sugar
2 bay leaves
1 teaspoon toasted black peppercorns
2 tablespoons soy sauce
Water to cover
4 (8-ounce) salmon fillets, skin removed, center cut
Salt and white pepper to taste
1/2 cup ponzu
3 large sliced shallots
1 tablespoon togarashi, save some for garnish
2 tablespoons Japanese soy sauce
1/2 tablespoon sugar
3/4 cup extra virgin olive oil
2 fennel bulbs, shaved, fronds reserved for garnish
1 pound blanched somen noodles
1/2 cup sliced scallions

Steps:

  • Preheat a deep fryer to 275 degrees F. In a bowl, mix together the Wasabi Aioli, salmon and celery. Check for seasoning. Build the sandwiches on the bread and top with the tomato and lettuce. Slice on the bias. Fry chips until golden brown and crisp. Season lightly with salt.
  • Plating: Serve sandwich with taro chips.
  • In a food processor, add wasabi paste, garlic, ginger, vinegar and yolks. While processor is on, drizzle in oil, slowly at first until it emulsifies then more quickly. Check for seasoning. Store in refrigerator.
  • In a salmon poacher or large sauce pot, mix the sake, celery, carrot, onion, sugar, bay leaves, peppercorns, soy sauce and water to cover. Add the seasoned salmon and slowly bring the liquid to a simmer. Simmer for 3 minutes then turn off the heat. Let stand for 5 to 10 minutes depending on doneness desired. I prefer medium rare (5 minutes). In a blender, add ponzu, shallots, 1/2 tablespoon togarashi, soy and sugar. Blend on high speed and drizzle in the oil. Season with salt and pepper. In a large bowl, mix together fennel, somen and scallions and toss with enough vinaigrette to coat the salad. There will be some left over for plating. Check for seasoning.
  • Plating: On a large plate, place a mound of the salad and top with hot salmon. Drizzle on a little of the vinaigrette and garnish with remaining togarashi and fennel fronds.

WASABI SESAME NOODLE SALAD

Subtle warmth, not hot. Soba is a nutty-tasting, brown buckwheat noodle, although some other versions are available in Asian markets. Tofu (or cooked chicken or shrimp, if non-vegan) would be a great protein addition. If you can't find black sesame seeds, use whit ones or substitute a smaller amount or sunflower seeds or pepitas. 10 ounces soba noodles
1 tablespoon toasted sesame oil
3 tablespoons soy sauce
3 tablespoons rice vinegar
1 tablespoon agave syrup
1 teaspoon wasabi powder
2 garlic cloves, minced
1 teaspoon chili-garlic sauce
1 cucumber, peeled and shredded
1 carrot, peeled and shredded
1 scallion, trimmed and thinly sliced
1 tablespoon black sesame seed

Steps:

  • Bring a large pot of heavily salted water to a boil. Add soba noodles and cook according to package directions. Drain, rinse in cold water, drain again and toss cooked noodles with the oil in a large bowl.
  • Meanwhile, whisk together soy sauce through chili-garlic sauce in a small bowl. Stir well until wasabi powder is thoroughly dissolved and all ingredients are combined.
  • Toss the noodles in the wasabi mixture, then add the vegetables and sesame seeds and toss again. Serve at room temperature or chilled.

2 fresh lobster tails
12 large shrimp, deveined
2 tablespoons freshly grated wasabi, or 1 tablespoon prepared horseradish mixed with 2 teaspoons wasabi past
1 tablespoon soy sauce
1 lemon, juiced
1 teaspoon sugar
1/3 cup canola oil
1/4 pound lump crabmeat, picked over
4 cups mizuna or tatsoi lettuce, or 2 cups mesclun plus 2 cups watercress
4 plum or 2 large tomatoes, sliced
Salt and freshly ground black pepper
2 ounces daikon sprouts, for garnish

Steps:

  • Bring a large pot of salted water to a boil. Fill a medium bowl with water and add ice. Add the lobster tails to the boiling water and boil until just cooked through, 5 to 7 minutes. With tongs, transfer the lobster to the ice water; retain the cooking water. When cool, drain the lobster tails, crack the shells, and remove the meat. Quarter the meat and set aside.
  • Return the water in the pot to a boil. Add the shrimp, and cook until just done, 3 to 5 minutes. Check the shrimp after 3 minutes; they must not overcook. Drain the shrimp and transfer immediately to the ice water. When cold, drain on paper towels and peel.
  • In a small bowl, combine the wasabi, soy sauce, lemon juice, and sugar and whisk to blend. Whisk in the oil to make a light emulsion. In a large bowl, combine the crabmeat, lobster meat, shrimp, mizuna, and tomatoes. Add the dressing, season with the salt and pepper, and toss to blend.
  • Divide the salad among 4 plates. Garnish with the daikon sprouts and serve.

WASABI SEARED TUNA SALAD

8 ounces fresh sushi grade tuna steaks
1 tablespoon wasabi powder
2 tablespoons vegetable oil, divided
1 tablespoon soy sauce, divided
1 avocado, sliced
1/2 cup shredded daikon radish
2 cups salad greens
1 tablespoon rice wine vinegar
pickled ginger, for garnish

Steps:

  • Mix wasabi powder with just enough soy sauce to make a thick paste.
  • Rub wasabi paste onto both sides of tuna steaks.
  • Heat 1 tbsp oil in a nonstick skillet over med-high heat.
  • Sear tuna for about 30-45 seconds on each side, just enough to get a crust.
  • Slice tuna thin, and set aside.
  • Arrange salad greens on a plate, and top with tuna, avocado, ginger, and daikon.
  • Mix remaining soy sauce, oil, rice vinegar, and a little of the juice from the ginger if you have some, drizzle onto salads, and salt and pepper to taste.
  • This goes great with Miso soup and a little sticky rice.
