PROSCIUTTO AND GOAT CHEESE PIZZA

1 (10-ounce) fully baked, thick pizza crust
1/2 cup marinara sauce
1 cup shredded mozzarella cheese
1 (3-ounce) package thinly sliced prosciutto (deli section)
1 ounce soft fresh goat cheese, coarsely crumbled
2 tablespoons fresh basil, chopped

Steps:

  • Preheat oven to 425 degrees F.
  • Lay pizza crust on a foil-covered pizza pan or cookie sheet. Spread sauce evenly over pizza crust. Sprinkle mozzarella cheese over crust, leaving a 1-inch border around the edge. Arrange prosciutto on top of cheese. Sprinkle goat cheese over prosciutto. Bake until prosciutto is crisp and cheese is melted, about 12 minutes. Sprinkle basil over pizza. Cut pizza into 6 slices and serve.

Chicken, Basil, Prosciutto and Goat Cheese Roulade With a Lemon image

This recipe is based on a recipe from Taste of Home. The flavor from the prosciutto and the goat cheese melt into the chicken. Using the pan drippings in the cream sauce adds invaluable color and flavor. My son and I always have a great time making this and a better time eating it!

4 chicken breasts
4 slices prosciutto
4 ounces goat cheese
8 ounces fresh basil
1 tablespoon olive oil
3 tablespoons butter, divided
3 garlic cloves, finely diced
1/2 cup white wine
1 1/2 cups chicken stock, divided
1 cup creme fraiche
3 tablespoons lemon juice
1 tablespoon fresh tarragon, finely chopped

Steps:

  • Preheat oven to 350 degrees.
  • Place the chicken between plastic sheets or preferably Silpats and pound with a heavy skillet to 1/4 inch thickness. I like to do this with a large value pack and freeze the extras, individually, after sealing with the FoodSaver . This way I have this done for the next few times I want this recipe or a Chicken Cordon Blue. Place the chicken breasts on a sheet pan laid out flat. Have toothpicks ready on the pan to hold them shut.
  • On a separate plate, lay out the 4 pieces of prosciutto, basil leaves and with a small ice cream scoop dish out 4-1 oz scoops of goat cheese. First place the prosciutto on each breast, then put the goat cheese on the prosciutto (spread out some with the scooper) then put the basil leaves on the cheese and press down to spread out evenly. Roll the chicken breasts up and put a tooth pick in to hold.
  • In a heavy sauce pan, melt 2 tbs butter. Add the garlic and cook until soft. Add the white wine and 1-1/4 cup chicken broth. Bring to a boil and reduce until half.
  • While the sauce is reducing, heat on medium high 1 tbs olive oil and 1 tbs butter in an oven proof skillet. Add the chicken rolls. Braise the chicken on all sides, then add 1/2 cup chicken broth to the pan and place in the oven. The extra broth helps to keep the chicken moist while it is cooking through in the oven.
  • Once the chicken is cooked though, remove from the oven and place on a plate and cover loosely with aluminum foil. Pour the contents of the skillet into the sauce and sauce and stir. Add the creme fraiche and the the tarragon and lemon and stir.
  • Place a small ladle full of sauce on a plate and put the chicken roll in it.
  • Serve with a rice dish (rice pilaf) and steamed vegetables.

18 slices firm white bread (such as English muffin bread), crusts removed
6 ounces prosciutto, thinly sliced
8 ounces goat cheese, crumbled
4 ounces provolone, grated (about 1 1/2 cups)
1/4 cup chopped green onions
6 tablespoons thinly sliced fresh basil
5 large eggs
2 cups whole milk
1 tablespoon Dijon mustard
1/2 teaspoon salt
3 tablespoons butter, melted

Steps:

  • Line bottom of 13x9x2-inch glass baking dish completely with 1 layer of bread, cutting some slices to fit. Arrange half of prosciutto evenly over bread. Sprinkle half of goat cheese and half of provolone over. Sprinkle with half of green onions and half of basil. Top with second layer of bread. Layer remaining prosciutto, goat cheese, provolone, green onions, and basil atop bread. Cut remaining bread into 1/4-inch cubes. Sprinkle over top.
  • Whisk eggs, milk, mustard, and salt in bowl. Season with pepper. Pour egg mixture over strata; press down on bread with spatula. Drizzle melted butter over strata. Cover and refrigerate overnight.
  • Preheat oven to 350°F. Uncover strata and let stand at room temperature 30 minutes. Bake until center is set, about 1 hour. Remove from oven. Preheat broiler. Place strata under broiler until top is golden, about 30 seconds. Cut into large squares and serve.

4 ounces dried figs, halved
2 1/2 cups port wine
1/3 cup crumbled Stilton cheese
1/3 cup soft goat cheese, such as montrachet,crumbled
4 ounces cream cheese, room temp
8 ounces thinly sliced prosciutto

Steps:

  • Soak figs in Port overnight.
  • Blend all cheeses in food processor until smooth.
  • Place large sheet of plastic wrap on work surface.
  • Arrange prosciutto slices on plastic, forming 8 x 10 inch rectangle and overlapping slices slightly.
  • Carefully spread cheese mixture over leaving a ½ inch border on all sides.
  • Season with pepper.
  • Drain figs; reserve Port.
  • Finely chop figs.
  • Sprinkle over cheese.
  • Roll prosciutto up tightly using plastic wrap as aid.
  • Wrap and refrigerate until firm, about 4 hours.
  • (may be prepared up to 1 day ahead) Bring reserved Port to the boil in a small saucepan.
  • Reduce heat and simmer until thick and syrupy and reduced to 1/3 cup, about 15 minutes.
  • Cool to room temperature.
  • Remove roulade from plastic.
  • Slice crosswise into 18 rounds.
  • Place 3 rounds on each plate.
  • Drizzle lightly with glaze.

8 thin slices prosciutto
1 bunch watercress, may substitute arugula
2 tablespoons olive oil
Salt and pepper
1 pound beef fillet, well trimmed of fat and silver skin
1/4 cup blood orange infused olive oil (recommended: O brand)
Salt and pepper
1/2 pound fresh goat cheese
1 apple, quartered, peeled, and then sliced lengthwise in 4 to 5 thin slices

Steps:

  • Lay the out the prosciutto in 4 pairs of 2 pieces that are partially overlapping lengthwise. In a bowl toss the watercress with the oil, salt, and pepper. Divide the watercress equally in mounds placed at the end of the prosciutto slices. Wrap the prosciutto around the watercress and roll them up as tight as possible without bruising the watercress. Set aside. Slicing against the grain cut the beef into 8 equal slices. Lay each piece between 2 pieces of plastic wrap and lightly pound into tender thin pieces with a mallet or the side of a heavy knife or a wine bottle (with cork in it!).
  • Lay 2 pieces on each of the 4 salad plates. Drizzle the meat with the oil and season with salt and pepper. Place a roll of the prosciutto and watercress next to the beef. Place 1 (2-ounce) spoonful of the fresh goat cheese nestled between the beef and roulade. Garnish with the apple slices.

2 tablespoons fresh parsley, minced
1 small garlic clove, minced
12 slices prosciutto, thinly sliced, then halved to form 24 strips, each about 3 inches in length

Steps:

  • Mix goat cheese, parsley and garlic together in a bowl until well blended. Place about 2 teaspoons of the mixture on each prosciutto slice. 3 large onions
1/4 cup olive oil
1 teaspoon kosher salt
1/4 cup balsamic vinegar or water, optional
8 large eggs
1/4 cup milk
1 teaspoon salt
4 ounces prosciutto di Parma
1 tablespoon butter
1 tablespoon olive oil
2 ounces Parmesan, grated
6 ounces goat cheese, crumbled
1/2 cup caramelized onions
1 tablespoon freshly chopped thyme leaves

Steps:

  • For the Onions:
  • Remove the shoot and base of the onions. Peel off the onion skin and cut the onions from pole to pole.
  • Cut the onion into 1/4-inch slices. Add the olive oil to a large saute pan over medium heat, then add the onions and season with the salt.
  • Cook until the onions begin to wilt, about 30 minutes, stirring every 15 minutes to prevent sticking. Reduce the heat to low and continue to stir every few minutes as the onions reduce in size.
  • If necessary, deglaze the pan with balsamic vinegar or water.
  • Continue cooking until the onions are dark brown. Turn off the heat and scrape up any bits that are stuck to the bottom of the pan. Allow the onions to cool.
  • For the Frittata:
  • Preheat the oven to 350 degrees F.
  • In a small bowl, add the eggs, milk, and salt and mix to combine.
  • Remove the paper from the prosciutto and stack the slices. Chop the prosciutto into 1/2-inch pieces.
  • Add the butter to an oven-safe 10-inch pan over medium heat. Once the butter has melted, add the olive oil and reduce the heat to medium-low.
  • Pour the egg mixture into the pan. When the eggs start to set, about 10 minutes, add the Parmesan and prosciutto. Stir gently and dot the top with the goat cheese.
  • Bake in the preheated oven until the frittata is set and the goat cheese is melted, about 15 to 20 minutes.
  • Remove from the oven and using a rubber spatula, loosen the frittata from the sides of the pan. Slide it onto a cutting board and cut into wedges. Arrange the wedges on a serving platter and top with caramelized onions and thyme leaves before serving.

  • Make your own pizza crust or use a ready made crust of your choice.
  • Brush the crust with a small amount of the olive oil.

  • Sprinkle the Herb de Provence over the pizza.
