1 2/3 cups unbleached all-purpose flour
2/3 cup unsweetened cocoa powder
1 teaspoon baking soda
1 cup unsalted butter, softened
1 1/3 cups packed light brown sugar
1 teaspoon vanilla extract
1/2 teaspoon salt
2 eggs
3/4 cup semi-sweet chocolate chips
3/4 cup dried cherries
3/4 cup raisins

Steps:

  • Preheat oven to 375°; line 2 sturdy cookie sheets with parchment paper or silicone liners.
  • Sift the flour, cocoa, and baking soda into a bowl; set aside.
  • In a bowl, cream the butter, brown sugar, vanilla, and salt with an electric mixer on medium speed until light and fluffy.
  • Beat in the eggs, one at a time, and scrape the bowl well.
  • Add the dry ingredients and mix just until no streaks remain.
  • Fold in the chocolate chips, dried cherries, and raisins by hand.
  • Drop the dough by heaping tablespoonfuls at least 2 inches apart onto the prepared baking sheets.
  • Bake for 14 minutes, rotating the pans halfway through the baking time.
  • Remove the cookies from the oven while they still look a little underdone; they will crisp up when they set.
  • Let cool on the pans for a few minutes to firm up slightly, then transfer to a wire rack to cool completely.

1 cup crushed graham wafers
1/4 cup melted margarine or 1/4 cup butter
3 tablespoons icing sugar
1 1/2 cups whipping cream
4 cups mini marshmallows
19 ounces cherry pie filling

Steps:

  • Blend the graham crumbs with the melted butter and the icing sugar. Spread in a 9 x 13 pan, saving out some to sprinkle over the top when finished.
  • Whip the cream, fold in the marshmallows and spread half of this over the graham base. Spread the tin of cherry pie filling over the cream mixture. Spread the rest of the cream mixture over the pie filling and sprinkle with the reserved crumbs.
  • Keep in the fridge.
  • I use the bagged graham wafer crumbs and.
  • I've never tried this with KoolWhip so don't know if it would turn out the same.I say.never fool with perfection -- lol.I've also used 2 tins of the pie filling if it looks thin.

sunflower oil, for frying
1 onion, finely chopped
1 red bell pepper, seeded and diced
2 boneless skinless chicken thighs, roughly chopped
2 green chilies, seeded and thinly sliced
2 garlic cloves, finely chopped
2 tomatoes, roughly chopped
1/2 cup frozen corn, thawed
4 tablespoons taco sauce
4 green onions, finely chopped
4 large flour tortillas
shredded lettuce
sour cream
ready-made guacamole

Steps:

  • Heat the sunflower oil in a large pan and stir-fry the onion, bell pepper, and chicken thighs over a high heat for 3-4 minutes until well browned. Stir in the chiles, garlic, tomatoes, and corn and cook for another 2-3 minutes until the chicken is cooked through.
  • Stir in the taco sauce and green onions, and set aside to cool a little.
  • Warm one of the tortillas in a hot, dry frying pan until soft and flexible. Spoon a quarter of the cooled chicken mixture into the center of a tortilla and fold over the edges to form a neat package; pin in place with wooden toothpicks and repeat with the remaining tortillas.
  • Heat 1/2 inch vegetable oil in a large frying pan and cook chimichangas for 2-3 minutes on each side until crisp and golden brown. Drain on paper towels and serve hot with shredded lettuce, sour cream and guacamole.

190 g packages medium egg noodles
1 lb lean ground beef
1 cup onion, chopped
1 (540 ml) can red kidney beans, drained
1 (796 ml) can whole tomatoes
1 (398 ml) can tomato sauce
1 (398 ml) can canned corn niblets, drained
2 tablespoons chili powder
1 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon ground cayenne pepper
1 cup shredded cheddar cheese

Steps:

  • Cook pasta according to package directions.
  • When cooked, drain and return to pot to keep warm.
  • Meanwhile, in large frying pan brown beef with onion.
  • Drain fat.
  • Add next 8 ingredients.
  • Mix well.
  • Simmer, uncovered, for 10 minutes stirring occasionally.
  • Toss meat mixture with hot noodles and serve topped with shredded cheddar cheese.

1/4 cup melted butter
4 cups miniature marshmallows
3 tbsp icing sugar
1/2 pint whipping cream or 2 packages prepared dream whip or lucky whip
1 can cherry pie filling

Steps:

  • Combine crumbs with butter and sugar. Take out 2 tbsp mixture for top and press down in 13x8 pan and chill crust. Chill and whip cream, then add marshmallows. Carefully put 1/2 of mixture on chilled crust. Spread cherry filling on cream mixture then put rest cream mixture on cherry filling. Top with 2 tbsp crumbs.
