1 pint yellow cherry tomatoes, quartered
Kosher salt and freshly ground black pepper
1 green bell pepper
2 cups shredded rotisserie chicken
2 scallions, whites sliced thinly on the bias up to the pale greens, dark green tops reserved for garnish
1/2 head red cabbage, super finely shredded on a mandoline
BBQ Vinaigrette, recipe follows
1 cup crispy bacon bits
1/4 cup smoky BBQ sauce
1/4 cup olive oil
3 tablespoons white vinegar
1 tablespoon Dijon mustard
Kosher salt and freshly ground black pepper

Steps:

  • Toss the cherry tomatoes in a small bowl with salt and pepper to taste. Set aside.
  • Put the green pepper directly over a gas burner (you can also do this under the broiler). Cook, rotating every 1 to 2 minutes, until the skin begins to char. Transfer to a bowl, cover with plastic and let sit for 10 minutes. Peel off the skin, discard the core and seeds and slice the pepper into thin strips.
  • In a large bowl, toss together the chicken, scallion whites and cabbage. Add the BBQ Vinaigrette and toss to coat. Season with salt and pepper.
  • Transfer the slaw to a serving bowl. On top of the slaw, arrange neat little rows of the tomatoes, green pepper strips and bacon bits. Slice the reserved scallion tops and sprinkle over the slaw.
  • In a medium bowl, whisk together the BBQ sauce, oil, vinegar and mustard until emulsified. Add salt and pepper to taste.

1 tablespoon butter, cut into pieces
1 small red onion, 1/2 finely chopped, 1/2 thinly sliced
2 cloves garlic, finely chopped
2 tablespoons tomato paste
1 teaspoon sugar
1 tablespoon Worcestershire sauce, eyeball it
1 tablespoon hot sauce, eyeball it
1 1/4 pounds ground chicken
1 tablespoons grill seasoning (recommended: McCormick brand) a palm full
3 tablespoons extra-virgin olive oil, divided
2 tablespoons honey, eyeball it
1 lemon, juiced
3 rounded tablespoons sweet pickle relish
2 cups shredded cabbage mix
Salt and pepper
4 cornmeal Kaiser rolls, split

Steps:

  • In a small skillet over medium heat, melt butter. Add chopped onions, garlic and tomato paste and sweat them for 5 minutes to soften and sweeten. Sprinkle in sugar and remove from heat. Cool in a bowl, 5 minutes. Add tomato paste mixture, Worcestershire, hot sauce to bowl and combine. Add chicken to the bowl then grill seasoning and combine the burgers well to evenly distribute the flavors and form 4 patties. Wash up.
  • Heat 1 tablespoon extra-virgin olive oil, a turn of the pan, in a nonstick skillet over medium-high heat. Cook patties 6 minutes on each side.
  • Combine the honey, lemon juice, and remaining extra-virgin olive oil in a bowl. Add relish, cabbage mix and sliced onions and season with salt and pepper. Toss the slaw to coat and reserve.
  • Serve burgers on bun bottoms topped with slaw and bun tops.

1/4 cup cider vinegar
1 tablespoon olive oil
2 tablespoons honey
1/2 teaspoon freshly ground pepper
1/4 teaspoon kosher (coarse) salt
4 cups coleslaw mix (from 16-oz bag)
1 cup thinly sliced red bell pepper
1/3 cup thinly sliced red onion
4 boneless skinless chicken breasts (1 1/2 lb)
3 cloves garlic, finely chopped
1 tablespoon salt-free southwest chipotle seasoning blend
1/4 teaspoon kosher (coarse) salt
1 tablespoon olive oil
1/2 cup honey-roasted garlic barbecue sauce
1/4 cup water

Steps:

  • In large bowl, stir vinegar, oil, honey, pepper and salt with whisk. Add coleslaw mix, bell pepper and onion; toss to coat. Cover; refrigerate at least 10 minutes.
  • Between pieces of plastic wrap or waxed paper, place each chicken breast smooth side down; gently pound with flat side of meat mallet or rolling pin until 1/2 inch thick. Rub chicken with garlic; sprinkle with seasoning blend and salt.
  • In 12-inch nonstick skillet, heat oil over medium-high heat. Cook chicken in oil 5 to 7 minutes, turning once. Add barbecue sauce and water; cook 1 to 2 minutes longer or until chicken is no longer pink in center.
  • Toss slaw. On each of 4 plates, place 1 chicken breast and 1 cup slaw. Spoon 1/4 cup sauce over chicken breast.
