CREAMY MASHED CAULIFLOWER
For weeknight dinner I want something fast, easy and not ordinary. This mashed cauliflower side dish is a perfect substitute for mashed potatoes.

Steps:
- In a large saucepan, cover cauliflower with water. Bring to a boil over medium-high heat. Reduce heat to low. Simmer, covered, until cauliflower is tender 10-12 minutes; drain and return to pan., Meanwhile, combine remaining ingredients in a small saucepan. Bring to a simmer over medium-low heat. Immediately remove from heat and strain through a fine mesh strainer; discard peppercorns, garlic and bay leaf., Add cream mixture to cauliflower. Mash to reach desired consistency.

- In a 3-quart saucepan, bring the water to boil
- Add cauliflower and garlic and cook covered for 15 minutes or until florets are tender then drain.
- In a food processor or blender, process cauliflower, garlic, mayonnaise, and salt until creamy, scraping down sides as needed.
- Stir in basil leaves and serve immediately.

- Melt the butter in a large pot over medium heat. Add the cauliflower florets, core slices, onion, garlic and rosemary. Cook, stirring, for 1 minute. Add the cream and a good pinch of salt and pepper. Bring to a simmer, reduce the heat to medium-low. Cover and let cook until the cauliflower has softened, about 5 minutes.
- Use a blender or immersion blender to puree until smooth. Taste and adjust seasoning as needed. Garnish with parsley and serve.

- Combine cauliflower and garlic cloves in a pot and cover with water. Bring to a boil; boil until cauliflower is tender, 10 to 15 minutes. Drain water.
- Blend cauliflower and garlic in a food processor. Add yogurt, Parmesan, parsley, oil, garlic powder, garlic salt, and pepper and blend again. Adjust seasonings to individual taste.

- Add cauliflower florets and garlic and boil until the cauliflower is fork-tender, about 10-15 min. Add additional water, if necessary, so the cauliflower is completely submerged.
- Pull the coconut milk from the refrigerator and turn it upside down. Use a can opener to open the can and pour out the clear water from the can. - Cut the cauliflower into florets, and place in a steaming basket over a pot of water. Steam for 10 minutes, or until the cauliflower is soft.
- Place butter, honey and rosemary in a small saucepan and heat until butter is melted and honey is runny.
- Add the cauliflower to a high powered food processor with the honey butter, and salt and pepper. Tip - leave about a tsp of honey butter for serving (optional)
