HONEY-GRILLED PORK CHOPS
This honey-based marinade is an excellent way to add flavor to grilled pork chops. This is also an excellent recipe for grilled pork tenderloin.

- Whisk honey, soy sauce, lemon juice, and garlic together in a bowl until marinade is smooth. Pour marinade into a resealable plastic bag, reserving about 1/4 of the marinade in a bowl for basting. Add the pork chops to the bag, coat with the marinade, squeeze bag to remove excess air, and seal the bag; marinate in the refrigerator at least 5 hours.
- Preheat grill for medium heat and lightly oil the grate. Remove pork chops from the marinade, and shake off excess. Discard remaining marinade.
- Grill pork chops on the preheated grill, basting with the reserved marinade during the last few minutes, until pork chops are cooked through, 15 to 20 minutes. An instant-read thermometer inserted into the center should read 145 degrees F (63 degrees C). Let pork chops rest for 3 minutes before serving.

Steps:
- Mix garlic, onion, and chili powders with paprika and salt. Rub mixture all over pork tenderloin.
- Heat 1 tablespoon olive oil over medium-high heat. Add pork and sear until golden brown on all sides, about 2 minutes per side. Wrap tenderloin in aluminum foil.
- Preheat an outdoor grill for medium-high heat and lightly oil the grate. Grill the pork in its foil for 20 minutes.
- Meanwhile, mix balsamic vinegar, honey, mustard together with the remaining olive oil. Unwrap pork on the grill and liberally brush the glaze on all sides. Continue grilling, brushing on more glaze, until an instant-read thermometer inserted into the center reads 145 degrees F (63 degrees C), about 10 minutes more.
- Allow to rest at room temperature for 5 minutes before cutting. Drizzle with any remaining glaze if desired.

- Preheat the oven to 180 C. fan 170 C, Mk 4. Rinse the pork loin, and pat dry all over with kitchen paper, or a clean kitchen teatowel. Set in a roasting tray.
- Mix together 100ml of the cider, half of the oil, the mustard, honey, sage, sea salt and pepper in a small bowl. Spoon this mix over the pork, and cover loosely with foil or baking parchment. Bake for 1 hour and 30 minutes, basting every 20 minutes with the pan juices.
- Meanwhile, cook the chopped onion in the remaining oil for a few minutes, just to soften. Mix this with the oats and parsley, and the sausage meat from the sausages. Take 4 tbsp of cooking juices from the meat pan and add to the sausage and oats, stirring in well. Divide the mixture into 8. Shape these into 8 golfball sized balls. Transfer to an oiled baking tray, and bake for 20 minutes.
- When the pork and the stuffing balls are cooked, set aside to keep warm. Moisten the cornflour with a little of the cider. Set the roasting tray over a high heat, and pour on the remaining cider, scraping any residue from the bottom. Add the cornflour, and stir until thickened.
- Serve the pork and the stuffing balls hot, with the sauce spooned over.

- Trim tenderloin of silver skin and any covering membranes or solid fat.
- In a 1-gallon zip lock bag, mix the brine of water, salt, and sugar. Add tenderloin. Squeeze the air out of a bag and seal. Place in a bowl and refrigerate, making sure all the meat is covered for 1-4 hours.
- Mix marinade ingredients in a small bowl. Skip the salt if the brine is used. Hint: heat the one teaspoon measure with hot water before measuring honey, and it will come off easier.
- Layout a sheet of plastic wrap large enough to easily encase the tenderloin. Remove the pork from brine, rinse well, and pat dry. Place it about 1/3 from the edge of the plastic. Brush with marinade.
- Roll the tenderloin over, and be sure to cover every bit of it. Wrap tightly with the plastic wrap and refrigerate for 2-4 hours.
- Preheat grill to grill surface temperature of 450°. Clean grates well and oil extremely well.
- Grill with lid closed. Rotate the tenderloin by 1/3 every 5 minutes. Cook until the internal temp is 145°-150°. About 20-25 minutes.
- Remove from grill and let sit for 5-10 minutes, cut, and serve.

- Add the honey, soy sauce, chili sauce, and rice vinegar into a bowl and whisk all the ingredients together until the honey dissolves into the sauce. Set aside.
- In a separate bowl, add the corn starch, garlic powder, salt, and pepper. Mix until combined.
- Next, thin the pork chops into 2 and 3-inch long strips that are about 1/2 inch thick.
- Toss each pork strip in the corn starch mixture so that each piece of pork is covered.
- Heat a large skillet over medium/high heat. Add olive oil.
- When olive oil is fragrant, add one layer of pork strips to the pan. Be sure not to crowd the pan, depending on the size of the pan, you may need to cook the pork in two batches.
- Sear the pork strips for 2-3 minutes on the first side and then remove the pork from the pan and place it on a plate (the pork will be cooked more later).
- Repeat steps 6 and 7 until all of the pork is seared on one side.
- Place all pork back into the skillet and then add the honey garlic sauce to the pan.
- Bring the sauce to simmer over medium heat, stirring periodically. Let the sauce simmer with the pork for 3-5 minutes until the sauce thickens.
- Remove from heat, toss the pork, and sprinkle the pork with green onions and sesame seeds.
- Serve alone, with rice, or with a vegetable side dish.

- Preheat grill to a surface temperature of about 450° which is medium to medium-high on most grills. Clean and oil well.
- Mix two tablespoons of honey, one tablespoon soy sauce, and 1/2 teaspoon garlic powder.
- Trim pork tenderloin of any silverskin and membrane.
- Brush the honey glaze on the tenderloin.
- Place over direct heat on the grill. Grill for five minutes, rotate one-third then brush the grilled side with more honey mixture. Repeat this twice more.

HONEY-MUSTARD GLAZED PORK TENDERLOIN WITH GRILLED VEGETABLES

- In a bowl, mix together the soy, garlic, ginger, scallions, honey, Dijon, wine and oil. Toss with pork to coat well and let marinate for at least 4 hours, refrigerated. Pull the pork out of the marinade. Place marinade in a small saucepan and bring to a boil and reduce by 25 to 30 percent. Meanwhile, in a large, hot saute pan coated lightly with oil, pan sear the pork until brown on all sides, about 10 to12 minutes total. Glaze the pork every 3 to 4 minutes with the reduced marinade. In a large bowl, mix together the eggplant, zucchini, pepper, onion, sweet potato and fennel. Toss lightly with oil, season and place on hot grill. - Combine onion and next 7 ingredients (through the garlic cloves) and place in a large zip-lock plastic bag.
- Add pork and seal.

- Wash the pork loin under cold water and pat dry with a paper towel. Take a fork and poke holes all over the loin, even the ends.
- Mixing all the wet ingredients in a small bowl, set aside. - Trim the pork tenderloin of any excess fat and silver skin.
- Place the lime zest, lime juice, honey, salt, and garlic powder in a small, lidded jar and shake to combine. Pour half of the marinade mixture into a 1-gallon resealable bag, add the chipotle pepper, and move around to combine. Add the pork tenderloin to the bag and seal, removing as much air as possible and place in a container to catch any leaks. Marinate in the refrigerator for 6 to 24 hours, rotating the bag halfway through the time. Place the remaining marinade in a covered container and refrigerate until ready to use.
- Remove the tenderloin from the bag and allow to sit at room temperature while preparing the grill. Remove the reserved marinade from the refrigerator.
- Fill a large chimney starter with natural lump charcoal and light. Once the charcoal is ashy and white, approximately 30 minutes, dump the hot charcoal onto the lowest grate of the grill and spread into an even layer using extra-long tongs. Place the cooking grate back on the grill and cover with the lid; heat the grate to medium heat for 2 to 3 minutes.
- Brush the grill with vegetable oil. Remove the tenderloin from the bag and place in the center of grate. Discard bag with marinade. Cover and cook for 12 to 15 minutes, turning every 1 1/2 to 2 minutes, until the tenderloin reaches an internal temperature of 140 degrees F.

- Prepare grill. Place the pork on grill rack coated with cooking spray. Cover and cook for 30 minutes or until meat thermometer registers 160°, turning and basting pork occasionally with 1/2 cup marinade. Cut the pork into 1/4-inch-thick slices; set aside, and keep warm.
- Place flour in a small saucepan. Gradually add remaining marinade and water, stirring with a wire whisk until blended. Bring to a boil over medium heat, and cook 3 minutes or until thickened, stirring constantly. Spoon gravy over pork; serve with mashed potatoes, if desired.
