2 chipotle peppers in adobo sauce, or more to taste
6 tablespoons mayonnaise
2 tablespoons fresh lime juice
1 teaspoon fine sea salt
3 cups fresh corn kernels
2 cucumbers, diced
3 vine-ripened tomatoes, seeded and diced
1 (15 ounce) can black beans, drained
12 ounces shredded rotisserie chicken
1 green bell pepper, diced
1 red bell pepper, diced
1 red onion, diced
1 cup coarsely chopped fresh cilantro
6 ounces shredded sharp Cheddar cheese

Steps:

  • Press chipotle chiles through a fine mesh strainer over a bowl, using a spoon or spatula. Discard the skin, veins, and seeds. Mix the pulp with mayonnaise, lime juice, and salt in a large bowl for the dressing.
  • Place corn in a pot with water to cover. Bring to a boil and cook until heated through and tender, about 3 minutes. Drain and let cool, about 10 minutes.
  • Combine cucumbers, tomatoes, black beans, chicken, bell peppers, onion, and cilantro in the bowl with the dressing. Mix in the cooled corn. Top with Cheddar cheese.

A fresh, healthy flavorful salad. Chicken marinated in a smoky adobo flavored marinade gives it more than just a "taco" flavor. Grilling the corn and jalapenos adds extra smoky flavor to this dish.

2 large chicken breasts
1/2 medium onion, diced
2 cloves garlic, cracked
1/3 cup olive oil
1/2 teaspoon dried oregano
1/2 teaspoon cumin
1/2 teaspoon smoked paprika
1 juice of 1 lime (about 2 Tablespoons)
1 Chipotle pepper in Adobo, diced
1/2 teaspoon Adobo sauce (or more to taste)
1/2 cup fresh cilantro, loosely packed
2 heads romaine lettuce, chopped
1 cup black beans, rinsed and drained
3 ears fresh corn on the cob, grilled and kernels removed
2 fresh jalapenos, grilled ((seeded, deveined and sliced))
1 large tomato, diced
1 avocado, sliced
1/2 cup fresh cilantro for topping

Steps:

  • In a food processor or blender add the onion, garlic, oregano, cumin, chipotle pepper, adobo sauce, smoked paprika, lime juice, fresh cilantro, salt, and pepper. Pulse a few times to liquefy. Pound chicken breasts to an even thickness. Place the chicken in a large zip-top plastic bag, pour the marinade over the chicken and massage a few times to distribute the marinade evenly over the chicken. Refrigerate for at least 8 hours to overnight.
  • Remove the chicken from the refrigerator and allow to sit at room temperature for 15-30 minutes before grilling. Preheat the grill to 400ºF.Grill the chicken without turning for 5-7 minutes per side (this will depend on the thickness of your chicken breasts), or until a thermometer reads 165ºF degrees in the thickest part. Remove from the grill and let rest for at least 10 minutes before slicing.Grill the corn and jalapenos for 15-20 minutes, turning frequently, until lightly charred.
  • Place the chopped lettuce on the bottom of a large platter or salad bowl. Top with the black beans, grilled corn, grilled jalapenos, tomatoes, avocado, cilantro, and sliced grilled chicken.
  • Serve with our Fire Roasted Salsa or our Creamy Jalapeno Cilantro Dip.

1 can (4 ounces) chopped green chiles, drained

1 teaspoon pepper
1/2 teaspoon ground cumin
1/2 teaspoon dried oregano
12 cups torn mixed salad greens
1 can (15 ounces) black beans, rinsed and drained
2 medium tomatoes, chopped
1 small red onion, chopped
1 cup fresh or frozen corn
1 cup crumbled Cotija or shredded part-skim mozzarella cheese
Salad dressing of your choice

Steps:

  • Place pork in a 5- or 6-qt. slow cooker. In a small bowl, mix cider, green chiles, garlic, salt, pepper sauce, chili powder, pepper, cumin and oregano; pour over pork. Cook, covered, on low 6-8 hours or until meat is tender., Remove roast from slow cooker; discard cooking juices. Shred pork with 2 forks. Arrange salad greens on a large serving platter. Top with pork, black beans, tomatoes, onion, corn and cheese. Serve with salad dressing. Freeze option: Place shredded pork in a freezer container; top with cooking juices. Cool and freeze. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally.

2 chicken breasts, (sliced in thin strips)
2 tsp Slap Ya Mama®
2 tsp garlic salt
1 tsp pepper
1 tbsp olive oil
2 avocados, (diced)
11 oz can southwest corn, (drained, roasted)
15 oz black beans (drained, rinsed)
1 cup grape tomatoes, (halved)
1 cup tortilla strips

Steps:

  • In a large bowl, add chicken, seasonings, and olive oil. Stir to combine.
  • Add seasoned chicken to a large frying pan and cook thoroughly. Set aside.
  • Wash and cut lettuce to desired size, set aside.
  • Rinse canned corn and add to a small frying pan. Roast corn over medium heat.
  • Drain and rinse black beans.
  • Dice avocado into bite size pieces and tomatoes in half.
  • Add lettuce, seasoned chicken, roasted corn, black beans, avocado, tomatoes and tortilla strips to a bowl. Top with desired dressing.

olive oil
1 (1 1/3 ounce) package fajita seasoning mix
1 small romaine lettuce (about 7-8 cups torn into bite-size pieces)
3/4-1 cup black beans (rinsed and very well drained or use corn niblets)
1 1/2 cups garlic-flavored croutons (or use as much as desired)
1/3 cup grated parmesan cheese
1 -2 red bell pepper, seeded and sliced into rings
1/4 cup grated parmesan cheese (or to taste)
1 cup mayonnaise
2/3 cup parmesan cheese
1/2 cup sour cream
1/2 teaspoon cumin
2 anchovy fillets
3 green onions, chopped
1 tablespoon Dijon mustard
1 chipotle pepper (from a jar or can)
2 teaspoons minced fresh garlic
2 teaspoons Worcestershire sauce
1/2 teaspoon black pepper (or to taste)
salt (or to taste) (optional)

Steps:

  • Brush olive oil over the chicken breasts, then sprinkle the fajita seasoning onto both sides.
  • Grill over medium-high heat about 6 minutes per side (or you may broil).
  • Allow to cool then slice into strips; set aside.
  • For the dressing; in a blender or food processor combine mayonnaise, 2/3 cup Parmesan cheese, sour cream, cumin, anchovy fillets, green onions, Dijon mustard, chipotle pepper, fresh garlic, Worcestershire sauce and black pepper; process or blend until smooth then season with salt if desired.
  • Place the lettuce in a large glass bowl, add in black beans; toss to mix.
  • Top the salad with croutons and red bell pepper rings and cooked chicken slices, then sprinkle with about 1/3 cup grated Parmesan cheese (or any amount desired).
  • Drizzle the dressing over the salad or serve dressing on the side.

2 large garlic cloves, pressed
1 cup olive oil
Salsa
2 ears fresh corn, husked
4 plum tomatoes, seeded, chopped
1 cup chopped peeled jicama
1/2 cup chopped red onion
1/4 cup chopped fresh cilantro
Steak
1 1/2 tablespoons fresh lime juice
1 tablespoon ground cumin
1 tablespoon chili powder
3 large garlic cloves, pressed
2 pounds beef tenderloin steaks (1 inch thick)
Assembly
1 avocado, halved, peeled, pitted, diced
10 cups mixed baby greens
2 small mangoes, peeled, pitted, thinly sliced

Steps:

  • For dressing:
  • Whisk first 4 ingredients in medium bowl in blend. Gradually whisk in oil. Season with salt and pepper. (Can be made 1 day ahead. Cover and refrigerate.
  • For Salsa:
  • Blanch corn in large pot of boiling salted water 2 minutes. Drain. Cool. Cut corn from cob. Transfer corn kernels to large bowl. Add tomatoes, jicama, onion and cilantro and mix. (Can be prepared 6 hours ahead. Cover and chill.)
  • For steak:
  • Combine first 4 ingredients in small bowl. Spread spice paste over both sides of steaks. Cover and refrigerate at least 2 hours or up to 6 hours.
  • For Assembly:
  • Prepare barbecue (medium-high heat). Grill steaks to desired doneness, about 5 minutes per side for medium-rare. Transfer steaks to cutting board and let stand 5 minutes.
  • Meanwhile, add avocado and 2 tablespoons dressing to salsa and mix. Season to taste with salt and pepper. Place greens in large bowl and toss with enough dressing to coat. Divide greens equally among 6 plates. Fan some mango slices on 1 side of each salad. Top each salad with 1/2 cup salsa.
  • Thinly steaks crosswise. Arrange atop greens. Serve, passing remaining dressing separately.

1 avocado
1/2 cup sliced green onion

Tortilla strips*, tortilla chips, or pepitas
3/4 cup mayonnaise (I like avocado oil mayo)
Juice from 1 lime (1-2 Tbsp)
1-2 Tbsp water
1 tsp chili powder
1/2 tsp dried dill (or 1 Tbsp fresh)
1/2 tsp pepper
1/4 tsp salt
1/4 tsp chipotle chili powder (optional-it adds some kick!)

Steps:

  • In a large bowl, combine lettuce, chicken, black beans, corn, tomatoes, avocado, green onion, and cilantro.

Start the blender on low, and as the mixture thickens, gently pour in the water about ¼ cup at a time, as needed. Slowly turn up the power until it’s blending on high. You might need to stop occasionally to push down bits that collect along the sides—it’s also a good chance to assess the texture: You might decide you don’t need all the water or that you’ll need more. Once it’s super creamy and smooth, taste again for seasoning and adjust as needed. Set aside until ready to dress the salad.
  • Next grill the chicken and corn. Preheat your gas or charcoal grill or a grill pan over medium-high heat. Drizzle olive oil over the chicken cutlets and the corn cobs and salt liberally. The corn needs only a few minutes on each side, until some char develops. And the chicken cutlets should take about 5 minutes per side. You can check to see that the juices are running clear and the internal temperature is 165°F (or you can pull it at 155°F, knowing that as it rests, it will continue to cook, pushing it up that last 10 degrees). Let the chicken rest for 5 to 10 minutes. While it rests, cut the corn kernels off the cob and set aside. Once the chicken has rested, cut it into bite-size pieces.
  • To assemble the salad, lay the chopped romaine as a base on a platter. Arrange the chicken and corn in the center and surround them with layers of tomatoes, radishes, avocados, red onions, and cilantro. Drizzle with dressing when ready to serve.
