3/4 cup fresh orange juice
1/4 cup fresh lemon juice
1/4 cup fresh lime juice
1/4 cup chicken stock
1 garlic clove, minced
2 tablespoons orange marmalade
2 tablespoons soy sauce
1 tablespoon rice wine vinegar
1 tablespoon light brown sugar
1 tablespoon butter
Pinch kosher salt and freshly cracked black pepper
Extra-virgin olive oil, for brushing
4 (6-ounce, 1-inch thick) salmon fillets
Kosher salt and freshly cracked black pepper

Steps:

  • Glaze: Bring all of the ingredients to a boil in a medium-sized saucepan over medium heat, stirring to melt the preserves and to keep the mixture from burning. Reduce the heat to a simmer and let the glaze reduce until syrupy, about 15 to 20 minutes. Adjust the seasonings with salt and freshly cracked pepper, to taste.
  • Salmon:
  • Heat a grill to medium-high heat.
  • Brush both sides of the fillets with olive oil just before grilling, then season with salt and pepper, to taste. Grill the salmon for about 4 minutes per side, brushing with the glaze during the final few minutes of cooking. Transfer the salmon to serving plates and brush them with the remaining glaze before serving.

This is by far, my favorite company meal. We eat this salmon very often. It is so tender and delicious. Everyone I have served it to has always loved it - even children. Don't be afraid of the cayenne pepper - this is not a spicy dish. The original version of this recipe actually called for more cayenne (3/4 tsp.) which you are welcome to try if you like it a bit more spicy. The salmon called for in this recipe is a whole side of a fish - do not cut up until after it is cooked. The skin acts as a moisture protector on the grill and also helps hold the fish together- it can be removed after cooking, if you prefer. Adapted from a similar recipe in Quick Cooking magazine.

1 1/2 cups brown sugar, packed
4 tablespoons butter or 4 tablespoons margarine, melted
6 tablespoons lemon juice
2 1/4 teaspoons dried dill weed
1/2 teaspoon cayenne pepper, to taste
2 -3 lbs salmon fillets, skin on,deboned
lemon-pepper seasoning, to taste
sea salt, to taste

Steps:

  • In a small bowl, combine brown sugar, melted butter, lemon juice, dill, and cayenne pepper, mixing well.
  • Pour 1/2 cup of this sauce into a small saucepan- once the fish is in its final 5 minutes of cooking time, heat this until warm and pour over cooked fish.
  • Set aside the remaining unheated sauce to use for basting the fish as you grill.
  • Place the salmon, skin side down, on a large platter and season with lemon pepper seasoning and sea salt to taste.
  • Note: If your lemon-pepper seasoning already contains salt, then don't add the extra salt.
  • Lightly brush grill grates with some oil and heat grill to medium.
  • Carefully slide salmon off of the platter and onto the grill, skin side down,using a large metal spatula to help.
  • Cover grill and cook fish, undisturbed, for 5 minutes exactly.
  • Baste liberally with the reserved basting sauce, re-cover, and cook another 10-15 minutes- basting every 5 minutes.
  • Use up all of the basting sauce (Don't forgot to heat up the 1/2 cup reserved sauce from before).
  • Fish is ready when it begins to flake and is starting to appear as if milk is seeping out.
  • Carefullly remove to a fresh,clean platter and pour the 1/2 cup sauce you had simmering on the stove over the top of the fish.

  • Prepare bbq (medium-high heat).
  • Combine brown sugar, mustard and soy sauce in medium bowl; whisk to blend.

4 salmon steaks, 1 1/2 inches thick
1 cup dry white wine
1/2 cup fresh lemon juice
3 sprigs fresh rosemary
1 cup honey
1/4 cup prepared Dijon mustard or 1/4 cup yellow mustard
2 tablespoons hot chili paste

Steps:

  • In glass baking dish place salmon in single layer mix wine and lemon juice together and pour over salmon. Lay rosemary sprigs across the top of salmon and cover with plastic wrap and refrigerate for 1 hour, turning salmon over after 30 minutes.
  • In a saucepan, combine honey, mustard and chili paste to taste. Heat to bubbling, continually stirring and then set aside.
  • Prepare BBQ grill, charcoal preferred. Coals to medium hot heat.
  • Oil grill to reduce sticking.
  • Place rosemary sprigs from marinade on grill and place salmon steaks on rosemary sprigs.
  • Baste the top of salmon with glaze.
  • Using tongs turn after approx 3 minutes and coat with glaze liberally. Continue cooking, flipping approx every 3 minutes and glazing until skin starts to pull away from the meat. Approx 10-12 minutes total cook time.
  • This should leave a moist pink center and slightly drier edges with carmelized glaze.
  • Serve with a wedge of lemon, fresh grilled vegetables and steamed rice.

1/4 cup Hungry Jack® Microwave Ready Lite Syrup or Hungry Jack® Microwave Ready Regular Syrup
1/2 tsp. finely minced garlic
1 tsp. dill weed

Steps:

2 tablespoons ketchup
1 tablespoon brown sugar
1 tablespoon cider vinegar
