- Preheat oven to 350°. Drizzle honey and 1 tablespoon melted butter in bottom of crust. In a medium bowl, beat sweetened condensed milk, lemon juice, sugar, egg yolks and remaining 2 tablespoons melted butter until blended. Pour into crust; bake for 20 minutes., Meanwhile, in a small bowl, beat egg whites and cream of tartar until frothy. Add vanilla; gradually beat in sugar 1 tablespoon at a time, on high until stiff glossy peaks form and sugar is dissolved. Spread evenly over hot filling, sealing edges to crust. - Sift together the whole wheat flour, all-purpose flour, baking powder and baking soda; set aside.
- In a medium bowl, cream together the margarine, brown sugar and honey until light and fluffy. Stir in the sifted ingredients alternating with the milk and vanilla. Cover dough and refrigerate overnight.
- Preheat the oven to 350 degrees F (175 degrees C). Divide the chilled dough iinto quarters. On a well floured surface, roll the dough out one quarter at a time iinto a 5x15 inch rectangle. Divide into rectangles using a knife. Place rectangles ointo ungreased cookie sheets. Mark a line down the center of each one, and prick with a fork. For a cinnamon flavored cracker, sprinkle with a cinnamon sugar mixture before baking.
- Bake for 13 to 15 minutes in the preheated oven. Remove from baking sheets to cool on wire racks.

- Preheat oven to 300 degrees.
- Grind graham crackers in a food processor (or, if you don't have a food processor, place them in a large Ziploc and pound 'em with a rolling pin.) Add powdered sugar and melted butter and process until totally combined.
- Press into the bottom and sides of a pie pan until nice and firm. Bake for 8 to 10 minutes, or until warm and "set." Remove from oven and allow crust to cool completely.

- Pulverize about 15 graham crackers in your food processor to make 2 cups of crumbs. Once you have your graham crackers crumbs, mix them up into your crust.
- Transfer your crumbs into a mixing bowl.
- Next, add your melted butter and stir with a fork until combined.
- Now, take your springform pan and transfer the mixture into it.
- Use a measuring cup with a clean bottom to tamp down the crumbs into the crust. Make sure you press uniformly. You can use your fingers to press the crust against the walls of the pan. Then, let it aside while you make your cheesecake filling recipe.
- Preheat the oven to 190 degrees Celsius.
- Beat your room temperature cream cheese in a mixing bowl, use an electric mixer. Do it at the lowest speed.
- Once is smooth and creamy, add the sugar, add the eggs - 1 by 1 -, and the vanilla extract. Mix well.
- Pour the cheesecake mixture into the chilled cracked crust and spread evenly.
- Pour water into the baking sheet and place your cheesecake on top.
- Bake the cheesecake for about 1 hour.
