HONEY GLAZED PORK LOIN

A roast pork loin glazed with honey, and served with a stuffing made from Jordans oats.

Number Of Ingredients 13

1 kg pork loin,
300ml cider
2 tbsp olive oil
3 tbsp grainy mustard
2 tbsp clear honey
2 tspn dried sage
1 onion, chopped
100g Jordans Natural Oats
2 tbsp chopped fresh parsley
3 premium pork sausages
1 tspn cornflour
Sea Salt
Freshly ground black pepper

Steps:

  • Preheat the oven to 180 C. fan 170 C, Mk 4. Rinse the pork loin, and pat dry all over with kitchen paper, or a clean kitchen teatowel. Set in a roasting tray.
  • Mix together 100ml of the cider, half of the oil, the mustard, honey, sage, sea salt and pepper in a small bowl. Spoon this mix over the pork, and cover loosely with foil or baking parchment. Bake for 1 hour and 30 minutes, basting every 20 minutes with the pan juices.
  • Meanwhile, cook the chopped onion in the remaining oil for a few minutes, just to soften. Mix this with the oats and parsley, and the sausage meat from the sausages. Take 4 tbsp of cooking juices from the meat pan and add to the sausage and oats, stirring in well. Divide the mixture into 8. Shape these into 8 golfball sized balls. Transfer to an oiled baking tray, and bake for 20 minutes.
  • When the pork and the stuffing balls are cooked, set aside to keep warm. Moisten the cornflour with a little of the cider. Set the roasting tray over a high heat, and pour on the remaining cider, scraping any residue from the bottom. Add the cornflour, and stir until thickened.
  • Serve the pork and the stuffing balls hot, with the sauce spooned over.

1 cup soy sauce, plus 2 tbsp, divided
¼ cup granulated sugar
3 tablespoons garlic, chopped
¼ cup scallions, chopped
2 lb boneless, skin-on pork shoulder
1 bunch asparagus, halved
6 yukon potatoes, diced
2 tablespoons olive oil
kosher salt, to taste
freshly ground black pepper, to taste
1 cup dark brown sugar
½ cup honey

Steps:

  • In a large bowl, combine 1 cup (240 ml) of the soy sauce with the sugar, garlic, and scallions, stirring until mixed.
  • Score the skin of the pork by slicing a crosshatch pattern through the skin down to the meat. This will help excess fat render out and allow more of the marinade to soak in.
  • Place the pork in the marinade and toss to coat evenly. Marinate for one hour.
  • Preheat the oven to 275ºF (140°C).
  • On a baking sheet, place the asparagus halves to the right and diced potatoes to the left. Toss the vegetables with the oil, salt, and pepper. Place the marinated pork in the middle of the baking sheet.
  • Bake 1 to 1 ½ hours, depending on the weight of the pork.
  • Raise the heat of the oven to 500ºF (260ºC).
  • In a small bowl, combine the brown sugar, honey, and remaining soy sauce, stirring until smooth.
  • Spoon the honey glaze over the top of the pork, making sure to fill the cracks and crevices on top.
  • Bake for 20 minutes until sugar is dark brown and caramelized, and the top of the pork is crispy.
  • Remove the vegetables and pork from the tray, making sure to save all the juices.
  • Slice the pork into ½-inch (2 ½ cm) slices, and plate with the roasted vegetables. Spoon the reserved pan juices on top of the pork.

2 tbsp low-salt soy sauce
2 tbsp reduced salt and sugar ketchup
2 tbsp clear honey
1 tsp Chinese five-spice powder
500g piece pork tenderloin , visible fat trimmed
140g medium egg noodle
2 tsp sesame oil
175g pack baby sweetcorn & sugar snap peas, halved lengthways
320g pack mixed pepper stir-fry vegetable
small bunch spring onion , sliced

Steps:

  • Heat oven to 200C/180C fan/gas 6. Mix together the soy, ketchup and honey with the five-spice. Put the pork tenderloin on a baking tray and brush with just under half the sauce. Roast in the oven for 10 mins, then brush with a little extra sauce and return to the oven for a further 15 mins.
  • Meanwhile, soak the noodles in boiling water until soft. Drain, reserving about 50ml of the water. Heat the sesame oil in a wok or large frying pan, add the corn and sugar snap peas, and stir-fry for 3 mins, adding the water to help the veg steam.
  • Add the stir-fry veg and half the spring onions, and cook for 3 mins more until wilted. Tip in the noodles and the rest of the sauce. Using tongs, mix everything to combine. Remove the pork, cut into slices and serve on top of the noodles. Scatter with remaining spring onions.

3 1/2 tablespoons red-wine vinegar
4 tablespoons raw honey
1 large garlic clove, finely chopped
1 teaspoon coarsely chopped fresh rosemary
1 tablespoon plus 4 teaspoons olive oil
1 3/4 pounds pork tenderloin (about 2)
3/4 teaspoon coarse salt
Freshly ground pepper
1 large fennel bulb, trimmed and sliced lengthwise into thin strips
1/2 head escarole, cut into 2-inch strips
1/2 pound spinach, washed well

Steps:

  • Preheat oven to 375 degrees. Make glaze: In a small bowl, whisk together 1 teaspoon mustard, 2 tablespoons vinegar, 2 tablespoons honey, garlic, rosemary, and 2 teaspoons oil.
  • Place pork tenderloins in a shallow baking dish; pour glaze over pork, turning to coat evenly. Sprinkle with 1/2 teaspoon salt; season with pepper.
  • Roast in oven, spooning glaze over pork occasionally, until thickest part of pork reaches 155 degrees on an instant-read thermometer, 30 to 35 minutes. Remove from oven; let rest until pork reaches 160 degrees, about 10 minutes.
  • Meanwhile, make vinaigrette: In a small bowl, combine remaining 2 tablespoons honey, 1 1/2 tablespoons vinegar, and 1 teaspoon mustard. Whisk until honey is dissolved. Slowly whisk in1 tablespoon oil until emulsified. Whisk in any accumulated cooking juices from baking dish, if desired.
  • Heat remaining 2 teaspoons oil in a 12-inch saute pan over medium-high heat. Add fennel, escarole, spinach, and a splash of water; cook until greens are slightly wilted, about 1 1/2 minutes.
  • Add vinaigrette and remaining 1/4 teaspoon salt to pan, stirring just to coat greens, about 30 seconds. Remove from heat; divide among four serving plates. Slice pork about 1/2 inch thick; arrange alongside greens. Serve immediately.

I found this recipe on another website, however I do not remember which one. This is quick and easy to prepare. The sauce is delicious served over rice. Do not cook the sauce too long as the soy sauce can become very intense. I usually double the sauce mixture and garlic but that is just my preference.

4 boneless pork chops, 3/4 inch thick (approx. 4 ounces each)
1/4 teaspoon fresh coarse ground black pepper
3 tablespoons honey
2 tablespoons soy sauce (I prefer low sodium)
1 tablespoon balsamic vinegar
1/2 teaspoon cornstarch
1 garlic clove, minced
2 green onions, sliced for garnish (optional)

Steps:

  • Sprinkle 1 side of each pork chop with black pepper.
  • Heat nonstick skillet over medium high heat until hot.
  • Add pork chops, pepper side down, and cook approximately.
  • 4 minutes or until browned.
  • Reduce heat to medium, turn pork chops and cook 6 to 8 minutes longer or until they just lose their pink color.
  • Transfer pork chops to platter, cover to keep warm.
  • While pork chops are cooking, in a cup or small bowl, mix honey, soy sauce, balsamic vinegar and cornstarch until smooth.
  • After removing pork chops, add garlic to skillet, cook 30 seconds, stirring (no longer so it does not burn).
  • Stir honey mixture into skillet (mixture will boil) and cook 1 to 2 minutes, stirring.
  • The longer the sauce mixture cooks, the soy sauce flavor becomes stronger.
  • Spoon sauce over pork chops.
  • Sprinkle with green onions for garnish, if desired.

Honey water for brushing
2 garlic clove, mashed
1 spring onion white, cut into small sections
½ tablespoon honey
½ tablespoon cooking wine
1 tablespoon light soy sauce
1 teaspoon dark soy sauce
1 tablespoon honey
1 tablespoon oyster sauce
1 tablespoon hoisin sauce
1 teaspoon five-spicy powder

Steps:

  • Clean the pork belly and drain.
  • In a large bowl, mix all the ingredients for sauce well and add smashed garlic and Chinese five spice powder.
  • Marinate the pork belly with the sauce for at least 4 hours, overnight is highly recommended.
