4 ham steaks, 1/2 inch thick or 1 large ham, steack enough for 4 servings
2 tablespoons brown sugar
1 teaspoon hot mustard
1/2 cup liquid honey
1 tablespoon vinegar
1 teaspoon soya sauce
glace cherries (optional)

Steps:

  • Remove the rind from the ham and slash the edges at 2" intervals.
  • Mix together the remaining ingredients for the glaze.
  • BBQ about 6" from heat source, medium-high heat cook on both sides for about 3 minutes each side before basting with glaze Turn frequently basting each time with the glaze total cooking time appr 10-12 minutes.
  • Watch that the steak does not burn.
  • Decorate with the glazed cherries and serve.

Ham dressed in pineapple rings and maraschino cherries is a holiday classic, burnished with a glossy glaze made with pineapple juice, honey and brown sugar. If you like sweet and salty, you'll love this show-stopping centerpiece!

One 9- to 10-pound bone-in fully-cooked smoked ham (butt or shank half)
1 tablespoon whole cloves, optional
Two 20-ounce cans sliced pineapple
20 maraschino cherries
2 cups honey
2 cups light brown sugar

Steps:

  • Let the ham sit at room temperature for about 30 minutes.
  • Preheat the oven to 325 degrees F.
  • Trim off any skin from the ham. Use a sharp paring knife to score through the fat in a diagonal crosshatch pattern without cutting through to the meat. Push the cloves into the ham, if using, placing them at the intersections of the cuts. Put the ham, flat-side down, on a rack in a roasting pan.
  • Drain the pineapples, reserving the juice. Arrange the sliced pineapple all over the ham, securing with toothpicks. Add a maraschino cherry to the center of each pineapple slice and secure with a toothpick.
  • Pour 1/4 inch water in the bottom of the pan and tent the ham with foil.
  • Roast until an instant-read thermometer inserted in the thickest part of the ham (avoiding bone) registers 130 degrees F, about 2 hours 30 minutes (or about 15 minutes per pound).
  • Meanwhile, combine the honey, brown sugar and reserved pineapple juice in a large saucepan set over medium heat. Simmer, stirring occasionally, until thickened, syrupy and reduced to about 3 cups, 25 to 30 minutes. Set aside.
  • Increase the oven temperature to 425 degrees F.
  • Uncover the pan and carefully brush a third of the glaze all over the ham. If the water in the roasting pan has evaporated, add more. Bake the ham for 15 minutes more. Brush with another third of the glaze and bake for 15 minutes more. Brush the remaining glaze over the ham and cook until the glaze is shiny and the skin is dark golden brown and crispy, about 15 minutes more. Let rest for 15 minutes.

You can even buy the ham presliced to make it easier and more like the original. It is very good. (I do this while preparing the rest of the meal in the kitchen so that I don't forget to baste!)

1 (5 pound) ready-to-eat ham
¼ cup whole cloves
¼ cup dark corn syrup
2 cups honey
⅔ cup butter

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • Score ham, and stud with the whole cloves. Place ham in foil lined pan.
  • In the top half of a double boiler, heat the corn syrup, honey and butter. Keep glaze warm while baking ham.
  • Brush glaze over ham, and bake for 1 hour and 15 minutes in the preheated oven. Baste ham every 10 to 15 minutes with the honey glaze. During the last 4 to 5 minutes of baking, turn on broiler to caramelize the glaze. Remove from oven, and let sit a few minutes before serving.

2kg/4lb 8oz unsmoked boneless gammon joint, tied
2 onions, halved
2 carrots, unpeeled, cut into 5cm/2in pieces
2 celery stalks, cut into 5cm/2in pieces
4 bay leaves
12 black peppercorns
small handful cloves
4 tbsp runny honey
4 tbsp English mustard

Steps:

  • Place the gammon joint into a large lidded saucepan, cover with cold water and bring to the boil over a high heat. Drain the water from the saucepan, add fresh cold water, the onions, carrots, celery, bay and peppercorns and bring to the boil once more. Reduce the heat, cover with a lid and simmer the gammon and vegetables gently for 20 minutes per 500g/1lb 2oz. (If your pan is not quite large enough to cover the joint completely, turn the gammon over halfway through the cooking time.)
  • Remove the gammon from the water and set aside to cool for 15 minutes. (The cooking liquid can be strained and reserved for making soup for another time.)
  • Preheat the oven to 200C/180C Fan/Gas 6 and line a large roasting tin with kitchen foil.
  • Use a small knife to remove the rind from the gammon joint, leaving as much of the fat intact as possible. Score the fat in a diamond pattern, and push a clove into the centre of each 'X'.
  • Place the gammon into the foil-lined roasting tray, ensuring that the sides of the foil come halfway up the joint to contain any roasting juices.
  • For the glaze, mix the honey and mustard together and brush half of it evenly over the gammon, including one side of the joint. Roast in the centre of the oven for 10 minutes, then take the joint out and brush the top and remaining side with the rest of the glaze. Return the gammon to the oven for a further 10- 15 minutes, rotating the tin so that the opposite side of the gammon faces the back of the oven.
  • The gammon is ready when the fat on top is glossy and golden brown. Cover loosely with foil if the top begins to look too brown. Remove the gammon from the oven and set aside to rest for 15 minutes before carving.
  • Pour any juices that have collected in the kitchen foil into a small pan, and warm through gently.
  • Carve the gammon, serve on a large platter and spoon over the warmed juices .

1 pound fully cooked boneless or bone-in ham steak, patted dry*
2 tablespoons honey
1 tablespoon pineapple juice (from canned pineapple tidbits)
1 tablespoon brown sugar
2 teaspoons Dijon mustard
1/2 teaspoon paprika
1/2 cup canned pineapple or crushed pineapple, drained

Steps:

  • In a large 12-inch skillet**, heat the oil over medium-high heat. Once hot, add the ham. Cook until brown, about 2-3 minutes.
  • Flip and cook the other side until brown, about 1-2 minutes. Transfer to a plate and keep warm.
  • Meanwhile, in a medium bowl whisk together the honey, pineapple juice, brown sugar, mustard, and paprika.
  • Turn the heat down to low and add the honey mixture to the empty skillet. Cook until bubbling, about 1 minute. Tilt the pan so the glaze covers the surface of the pan.
  • Add the ham back into the pan, coating one side with the glaze. Cook 1 minute.
  • Flip and coat the other side with the glaze. Cook 1 minute.
  • Add the pineapple tidbits and stir into the glaze (you may need to move the ham around, depending on how large your skillet is).
  • Remove ham from the pan then serve with pineapple and remaining glaze spooned on top.
  • Preheat oven to 350F. Line a pan large enough to hold your ham with foil for easy clean up. Lightly grease foil.
  • In medium bowl whisk together the honey, pineapple juice, brown sugar, mustard, and paprika.
  • Add your ham to the pan and pour the glaze on top, making sure the entire ham is covered. Add pineapple on top.
  • Bake uncovered for 20-30 minutes or until heated through and starts to brown.

  • Preheat the oven to 325 degrees F.
  • Place the ham in a small roasting pan, cut-side down, and pour 1/2 cup water into the bottom of the pan. Cover the pan tightly with foil. Bake until the ham is heated through, about 1 1/2 hours.
  • Meanwhile, combine the honey, brown sugar, butter, Dijon mustard, whole-grain mustard and thyme in a small saucepan. Cook over medium-low heat until the sugar has dissolved, about 2 minutes.

1 8 oz. can crushed pineapple
1/2 tablespoon brown sugar

Steps:

  • Preheat oven to 350°F (177°C). Line a rimmed baking sheet or baking pan with foil. Spray the foil with non-sticking cooking spray, set aside.
  • Drain the pineapple juice from the can of crushed pineapple into a bowl.
  • In medium bowl whisk together the honey, 1/2 tablespoon of reserved pineapple juice, brown sugar, mustard, and smoked paprika.
  • Add your ham to the pan and pour the glaze on top, making sure the entire ham is covered. Add 1/4 cup of crushed pineapples on top.
  • Bake uncovered for 20-30 minutes or until heated through and the glaze begins to brown.
  • In a large skillet, heat the olive oil over medium-high heat. Once hot, add the ham steak. Cook until brown, about 2-3 minutes.

  • Turn the skillet heat down to low and add the glaze to the pan. Cook until hot and bubbly, about 1 minute.
  • Be sure that the glaze covers the entire bottom of the surface and then add the ham back into the pan, heat for 1 minute.
  • Flip and coat the other side of the ham steak with the glaze and cook for 1 additional minute.
  • Remove the glazed ham steak from the pan and place on a serving dish.
  • Quickly add the crushed pineapple to the glaze and stir to coat.
  • Drizzle the top of the ham steak with the glaze and crushed pineapple mixture on top. Serve immediately
