Steps:
- Brown meat with onion.
- Drain grease, except 1 tablespoon.
- Add 2 tablespoon flour, stir in well.
- Add liquid.
- Cook until thick.
- Add vegetables, salt and pepper.
- (Sometimes I stop here and serve.) Melt butter in 2 quart casserole.
- Beat eggs in medium bowl.
- Add milk, blend well.
- Add flour and salt, beat until batter is smooth.
- Pour into dish.
- Spoon meat mixture into center of batter to within 1 inch of edge.
- Bake in 425 degree oven for 30 minutes or until puffed and browned.
YORKIE BEEF PUDDING
I've had this recipe for years. The original version was in Women's Day magazine, but I've changed it to make it more versitile. I fix it most often to use up leftover beef stew or roast, but I've fixed it from scratch many times as well. Both are excellent. If you use the fluted quiche pan, the Yorkshire Pudding will puff up in an interesting pattern.

- Preheat the oven to 425 degrees F.
- Place eggs, milk, salt, and flour in a blender and blend until smooth.
- Let rest.
- Melt the 2 tablespoons of butter in a saucepan and saute the onion until soft.
- Add ground beef and brown well.
- Sprinkle the flour over the beef and onions and blend in.
- Add water and stir.
- Bring to a boil and cook until thickened.
- Add garlic powder and Worchestershire.
- If the beef was not browned well you may need a beef bouillon cube at this point.
- Add salt and pepper to taste.
- Stir the vegetables in with the beef and gravy (If you're using leftover beef and gravy, simply heat them together in a saucepan and season to taste. Use 1 cup of leftover gravy and omit the flour and water).
- Place the 2 tablespoons of butter in a fluted quiche pan or use a 10" pie plate.
- When the butter has melted (watch carefully so that it doesn't burn) remove the pan from the oven.
- Give the Yorkshire Pudding another twist on the blender and add to the pan.
- Spread the beef and gravy mixture evenly on top within one inch of the edge.
- Put back in the oven and bake for 30 minutes or until the pudding is golden brown.
- Serve with additional heated gravy if you wish.

YORKSHIRE BEEF PUFF
From an old cookbook of my mother's, this is a great way to use up leftover beef. Save some of the gravy from the original roast.

Steps:
- Arrange meat over bottom of a 9"square glass baking dish that contains 1/8" meat drippings or oil.
- Beat flour, milk, eggs and salt for 2 minutes and then pour over meat in the pan.
- Bake in a very hot oven (450 degrees) for about 30 minutes.
- Serve with gravy or sauce.
- If you have no drippings, substitute vegetable oil.
BEEF CURRY PUFFS
These are my favourite appetizer or finger food. Usually deep-fried, these puffs are baked. Can be made a day ahead and refrigerated until ready to bake.

Steps:
- Heat the oil in a pan and add the onion and garlic.
- Cook until the onion is soft.
- Add the curry paste and cook, stirring, until fragrant.
- Add the mince and cook until browned and cooked through.
- Remove from the heat and stir in the lemon juice, chutney and vegetables.
- Cool mixture completely before continuing.
- Cut rounds from the pastry with a 10 cm cutter.
- Place a heaped teaspoon of beef mixture onto a round and brush the edges of the pastry with some of the egg.
- Fold pastry over filling and press the edges together with a fork to seal.
- Repeat until all the rounds and beef are used.
- Place puffs onto greased oven trays and brush the tops with some more egg.
- Cook at 190 degree C for about 15 minutes, until the pastry is golden and puffed.
- Serve the curry puffs on a platter with sweet chili dipping sauce.

- You will need 2 skillets for this dish; one should be a 10" skillet that is oven safe.
- Preheat the oven to 400.
- In one skillet, cook the beef, onions, salt, pepper, coriander, cumin and garlic until the beef is browned; drain.
- Put the 10" oven safe skillet into the oven until the pan is hot.
- Meanwhile, in a bowl, mix the flour with the salt.
- Set aside.
- In another bowl, mix the eggs and milk, and add to the flour mixture, beating until smooth.
- Pour half the batter into the hot skillet.
- Top with the meat mixture, then the rest of the batter.
- Return to the oven and bake for 40 minutes.

- Pre-heat oven to 375.
- Heat a clean, ungreased, empty muffin-pan in the oven while you mix together the milk, melted butter, eggs, flour, and salt.
- This dough should be thin/runny.
- When ingredients are mixed together, remove your muffin-pan from the oven, and spray each cup with Pam cooking spray (This step removes the messy'beef-fat method' used in traditional Yorkshire Puddings, and your Yorkshire Puddings will not spill the beef fat over into your oven as they puff up).
- Once the pan is sprayed, fill each muffin-cup only 2/3 full of the Yorkshire pudding mixture, (they REALLY puff up).
- Bake in your pre-heated oven for 40 minutes or until golden in colour and puffed up. (avoid peeking before the time is up).
- Serve while still warm, best served with beef gravy.
- These form a hollow centre as they bake.
- These shrink as they cool, so enjoy them while still warm.

YORKSHIRE PUDDING (YORKIES!)
Yorkies are an easy, awesome side dish. I use a heavy, oven-proof wok to make for one large pudding, and cut it in wedges to serve. But most people like theirs muffin-shaped, so I've included the lower cooking time to account for that. The main thing in getting them to puff up properly is a very hot oven, pan and fat. The drippings from a beef roast are traditional, but bacon fat or vegetable oil also work well, as long as they're hot when you add the batter. I like the unconventional addition of the sage, and add even more if I'm serving it with poultry. Other herbs like thyme or rosemary also work well. - Pre-heat oven to 450 degrees.
- Whisk all ingredients together.
- Divide fat among muffin tins, if using.
- Heat muffin tins or pan (or wok) with fat.
- Pour (carefully!) the batter into the pan(s). Leave some room at the top, they will puff up.
