HONEY-AND-SOY-GLAZED CHICKEN THIGHS
In this simple weeknight recipe, chicken thighs are tossed with a sweet-salty glaze made of honey and soy sauce that caramelizes into a sticky coating as it roasts in the oven. Serve the sliced chicken with bibb lettuce cups for wrapping, or over steamed rice to catch all the juices. Leftovers can be chopped and combined with vegetables for a tasty clean-out-the-fridge fried rice.

- Heat the oven to 425 degrees. Heat 1 tablespoon oil in a small saucepan over low heat. Add the garlic and ginger and cook, stirring occasionally, until softened, 3 minutes. Add the soy sauce and honey and simmer, stirring occasionally, until reduced and slightly thickened, about 10 minutes. (You'll want to cook attentively for this step, as the syrupy mixture can burn if it cooks too long.) Turn off the heat then whisk in the butter. Season with salt and pepper.
- On an aluminum foil-lined rimmed baking sheet, season the chicken all over with salt and pepper. Add half the glaze and the remaining 1 tablespoon oil and toss the chicken to coat. Arrange in an even layer, skin side up, and roast until browned, 15 minutes. Brush the chicken all over with 2 tablespoons of the remaining glaze. Roast until golden and cooked through, about 10 minutes.
- Drizzle the chicken with the remaining glaze and serve with lemon wedges.

Steps:
- Place oil in skillet over med-high heat. Once hot add the onion and garlic. Stir.
- Dredge the chicken in cornstarch. Continue stirring the onions, once they are lightly cooked and just starting to soften, add the chicken to the pan.
- Whisk together all glaze sauce ingredients except sesame oil.
- Turn the chicken once first side just start to show golden color.
- Once the onions are starting to caramelize and outside of tenders are cooked and golden tinged, add the sauce.
- Reduce heat to medium and simmer uncovered until sauce has thicken to a gravy and chicken is cooked through (about 6-7 minutes).
- Stir the sesame oil in at the end, if you wish to add it.
- Serve with your choice of starch.

- In a bowl, mix flour, salt and cayenne pepper.
- Add chicken pieces and shake around until coated.
- Pour 4 tbs butter into a 13 x 9 inch baking pan, place chicken in pan, turning once to coat.
- Bake at 350 F for 30 minutes.
- Meanwhile, mix brown sugar, honey, lemon juice, soy sauce, curry powder and remaining butter.
- Pour over chicken.

HONEY ORANGE BBQ CHICKEN

- Mix the orange juice, olive oil, hot sauce, mustard, and orange zest together in a large bowl. Add the chicken and toss to combine. Cover with plastic wrap and let marinate for at least 1 hour and up to overnight in the refrigerator.
- Prepare the grill to medium direct heat. Let chicken come to room temperature before grilling.
- Drain the chicken from the marinade and pat dry. Grill on each side for 5 minutes, then turn the heat to medium-low and cover the lid of the grill. Continue cooking the chicken until it's cooked through, about 25 minutes more.
- While the chicken is grilling, melt the butter in a small saucepan on the grill. Whisk in the honey, orange juice, BBQ sauce, zest, mustard and allspice. Reserve some of the glaze in a small ramekin for serving.
- Brush the chicken pieces with glaze, then flip the chicken, glaze side down, and cook for 2 minutes. Brush second side of the chicken with glaze and flip again. Continue cooking for 3 more minutes. Remove the chicken from grill to a platter and serve with reserved glaze.

- Grate 1 tsp tangerine zest (colored part of peel) squeeze enough juice to get 1/2 cup. Slice remaining tangerine into wedges. - Set oven to'Broil'.
- Mix soy sauce, onion, garlic, honey ginger and catsup in a small bowl.
- If necessary, run your honey jar under warm water before measuring out, to make mixing easier.
- Trim fat from chicken breasts, rinse and pat dry.
- Cover a metal broiling pan with heavy-duty aluminum foil (makes cleanup easier), and place the chicken breasts inside.
