HOLIDAY BRIE EN CROUTE
Steps:
- Heat the oven to 400 degrees F. Beat the egg and water in a small bowl with a fork.
- Unfold the pastry sheet on a lightly floured surface. Roll the pastry sheet into a 14-inch square. Spread the preserves on the pastry to within 2 inches of the edge. Sprinkle with the cranberries and almonds. Place the cheese in the center of the pastry. Fold the pastry up over the cheese to cover. Trim the excess pastry and press to seal. Brush the seam with the egg mixture. Place seam-side down onto a baking sheet. Decorate with the pastry scraps, if desired. Brush with the egg mixture.
- Bake for 20 minutes or until the pastry is golden brown. Let stand for 45 minutes. Serve with the crackers.

- Preheat oven to 350 degrees. Place brie in a baking dish. Drizzle with honey and sprinkle With toasted almonds. Bake for 10 minutes. Serve with thick slices of French bread.

Steps:
- Melt butter in medium saucepan on medium heat. Add apples and pears; cook 7 min., stirring frequently. Stir in honey and mustard; cook 10 min., stirring frequently. Remove from heat. Add bacon; mix well. Cool completely.
- Heat oven to 400°F. Roll out pastry sheet into 14-inch square on lightly floured surface. Place bottom half of Brie round on center of square; top with half each of the fruit mixture and nuts. Repeat layers.
- Gather edges of pastry dough over cheese, pleating edges as necessary; tie closed with kitchen twine. Place on parchment-covered baking sheet.
- Whisk egg and water until blended; brush onto dough.
- Bake 25 to 30 min. or until pastry is golden brown. Remove cheese from oven. Let stand 5 min. before cutting off and discarding the twine.
- Serve cheese warm.

- Preheat oven to 400°F
- In a small bowl, mix together the walnuts, 1 1/2 tbsp of butter, rosemary and cayenne; set aside.
- Unfold the pie crust on a greased baking sheet and spoon the walnut mixture into the center of the dough.
- Spread into a 5" circle.
- Place the brie on top of the walnut mixture and fold the dough over the brie, starting at two opposite sides, bringing to the center and pinching to seal.
- Fold in remaining pastry ends to the center, crimping as necessary, and press to seal.
- Invert brie onto a baking sheet and brush the top with the remaining melted butter.
- Bake for 20 to 25 minutes, or until the pastry is browned.
- Cool to room temperature before serving with toasted slices of French baguette and fruit chutney.

- Preheat oven to 375 degrees F (190 degrees C).
- Dust a pastry mat with flour. Roll out the puff pastry into a 1/4-inch sheet with a rolling pin.
- Place 1/2 of the brie on the puff pastry, rind side-down. Trim off the corners of the pastry with a knife.
- Dab the top of the brie with 2 tablespoons almonds and 1 tablespoon butter. Drizzle with 1 tablespoon honey. Cover with the other half of brie, rind side-up. Top with the remaining almonds, butter, and honey.
- Wrap the puff pastry around the wheel of brie, sealing the seams by pinching them together. Brush with egg white. Place brie en croute in a baking pan.
- Bake in the preheated oven until pastry is golden brown, 45 to 50 minutes.

BRIE EN CROUTE
We have been making baked Brie for years. A family standard. But then I saw this recipe on a recipe card in the background of an advertisement in Real Simple. We made it for Thanksgiving and it was the hit of the party. It is now the new family recipe! I was worried that the cherries, pecans, and honey would overpower the Brie, but I should have added more! You can substitute pie crust or even a few sheets of phyllo dough (with melted butter brushed on evenly between each sheet) for the puff pastry sheet. Don't forget the apples or crackers to spread it on. ENJOY!

- Heat Oven to 400°F.

- Preheat the oven to 375 degrees F (190 degrees C). Unwrap the wheel of Brie, and crescent rolls.
- Unroll the crescent roll dough, and wrap around the Brie. Press seams together to seal in the cheese. Place in a 9x9 inch baking dish. Sprinkle pecan halves over the top, and drizzle honey over the whole thing.
- Bake for 30 minutes in the preheated oven, until golden brown and cheese is soft. Serve with apple slices or cornbread crackers.
