150 g okra
200 g skinless chicken
1 medium onion, skinned and finely chopped
1 inch piece fresh ginger, peeled & chopped
3 tablespoons oil
1 teaspoon red chili powder
1/4 teaspoon turmeric powder
salt
2 tablespoons coriander leaves, fresh
3 whole tomatoes
1 teaspoon coriander powder
1/3 teaspoon garam masala
2 medium onions, cut in thin slices
6 -8 green chilies, thinly sliced

Steps:

  • Cut the chicken into 1 12 inch pieces.Put the onions,garlic,salt, chili powder, ground coriander, and meat in a heavy based pot. cook for 20 to 25 minutes, or until the meat is half cook.
  • Add tomatoes and ginger in the meat and cook for 5 minutes, stir all the time to mashed the tomatoes.
  • Prepare bhuna gosht. Meanwhile wash Okra under running water, dry with tea cloth or just spread in a tray for some time. Now cut Okra by removing head and tail in to half inch slices.
  • In a large pan heat oil over high heat, add onions and fry until change color and edges turn light brown. Remove onion from oil and keep aside.
  • .Fry Okra in the same oil until it changes its color and edges start getting brown. Remove Okra from oil and discard oil.
  • Put Okra, onions and green chilli into hot bhuna meat. Stir with care, cover the pan and cook for about 10 minutes over low heat.

Back in the days when I was a child every time my mother made this dish it was considered a treat among me & my siblings. Besides potatoes & peas, okra/ladyfinger is another all time favorite vegetable among the Pakistani population. It is usually served with roti/chapatti & yogurt or sometimes with Masoor Dal (lentil) here is the recipe of a basic okra curry that was passed down from my grandmother to my mom & down to me. It's the tomatoes that give it a different taste compared to the other recipes posted so far. Note if you want to make "Bhindi Gosht" (Okra curry with mutton) after frying the onions add mutton, let it cook on medium low heat for 20 minutes, then follow the rest of the recipe. You can also add 1/2 cup water to make it a little saucy.

700 g frozen cut okra (you can also use fresh okra)
1/4 cup oil
1 medium onion (sliced)
1 tomatoes (chopped)
1 teaspoon ginger-garlic paste
1 teaspoon salt
1 teaspoon red chili powder
1 teaspoon coriander powder
1/4 teaspoon turmeric powder
1/4 cup water
1 green chili pepper (optional)

Steps:

  • Heat oil in a pan. Fry onions in it till they turn golden brown.
  • Add tomatoes, ginger garlic paste, salt, red chili powder, coriander powder, turmeric powder & water. Cover & let the tomatoes cook on medium heat for about 15 minutes or till they become tender & the oil seperates.
  • Next add okra/ladyfinger in the same pan. Cover & cook for 20-30 minutes on medium low heat.
  • Once the okra is cooked thouroughly. Add the green chilli, lower the heat & simmer for another 10 minutes.
  • Once the oil seperates your "bhindi" is done.
  • Enjoy with yogurt, roti & sliced cucumber.

  • Heat oil in pan and add onions and beef and sauté until onions are golden and translucent - around 5 minutes.
  • Add tomatoes, garlic, ginger, turmeric, cinnamon, coriander, cumin, and curry powder, garam masala and chili peppers if using any.

  • Heat ghee in a pressure cooker. Add half teaspoon cumin seeds, cinnamon, black cardamoms, black peppercorns and onions and sauté till lightly browned.
  • Add mutton and green chillies and continue to sauté. Add ginger paste, garlic paste, salt, turmeric powder and coriander powder and stir.
  • Heat oil in another pan. Add the remaining cumin seeds. Make a slit one side of the ladyfingers and add to the pan and sauté till lightly browned.
  • Add two cups of water to the mutton and mix. Add tomato puree and stir. Add red chilli powder and garam masala powder and mix well. Add coriander leaves and the sautéed ladyfingers. Mix and adjust salt.
