Honey Baked Hams are basted in fruit juices and then glazed with a mixture of brown sugar and honey. Here is a copy cat recipe from Family Circle Magazine. Have to say, I love Honey Baked Hams. Makes 1 7 lb. ham.

0.5 (7 lb) spiral cut smoked ham (about 7 lbs. fully cooked)
1/2 cup pear juice
1/2 cup orange juice
1/2 cup firmly packed brown sugar
1/2 cup honey

Steps:

  • Preheat oven to 375°F.
  • Place ham, cut end down, in a large baking pan.
  • Mix pear nectar and orange juice in a bowl.
  • Bake ham for 15 minutes per pound basting frequently with juices.
  • Mix brown sugar and honey together in a small bowl.
  • Brush mixture over ham and bake for another hour or until internal temperature reads 140°F.
  • Honey Baked Ham corporation uses a butane torch to caramelize the glaze to a crust.
  • The ham is placed on top of a huge metal drum covered with foil and caramelized.

1 semi-boneless half ham (apprx 8 lb)
1 cup brown sugar
1 (15 ounce) can pineapple slices (reserve juice)
1 reynolds oven cooking bag (turkey size)
2 tablespoons flour

Steps:

  • Preheat oven to 350 degrees.
  • Rub ham with brown sugar.
  • Secure pineapple rings onto ham, fat side up, using toothpicks.
  • Add 2 tbls flour to cooking bag, and shake it to coat.
  • Place bag in roaster and place ham fat side up in the bag.
  • Pour reserved pineapple juice gently over ham.
  • Close bag with nylon tie included with bag.
  • Cut six 1" slits in top of bag for steam escape.
  • Place in oven, being careful not to let bag touch sides of oven.
  • Bake 2 hours for an 8 lb ham.
  • Cool before slicing to retain juices.

1/2-1 cup brown sugar

Steps:

  • Preheat oven to 325.
  • Rinse ham and place in large baking pan.
  • Pour honey over ham. Using your hands, pack the brown sugar evenly over the ham, pressing firmly so that the sugar will stick.
  • Cover and place in oven. Bake for 1 1/2 to 2 hours depending on size of ham. (Since it is fully cooked, all you are doing is warming it up.) Baste with juices.

I got this recipe from "Top Secret Recipes" and it is the HoneyBaked Store recipe (or duplicate) that they use at the store. The hams are delivered at the stores already smoked and cooked; they are then sliced with the signature cut and then this recipe is used to caramelize them using a blow-torch. "Top Secret Recipes" only keeps this recipe up for two weeks on their site a year. The spices are ordinary pumpkin pie spices and you may substitute that for the first three spices. To get the coating just right, you must use a blowtorch. If you don't have one, you can find a small one in the hardware stores for around $15. Oh, Eleventhletter - I loved your suggestion to put it in a can of cola and baste it with that! Wonderful! THEN, when it's done - put on the sugar crust!

1 fully-cooked shank half ham, bone in (pre-sliced is best)
1 cup sugar (I like to use 1/2 brown sugar and 1/2 white)
1/4 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1/8 teaspoon paprika
1 dash ground ginger
1 dash ground allspice

Steps:

  • First you must slice your ham, if it is not already sliced.
  • Use a very sharp knife to cut the ham into very thin slices around the bone.
  • Do not cut all the way to the bone or the meat may not hold together properly as it is being glazed.
  • You want the slices to be quite thin, but not so thin that they begin to fall apart of off the bone.
  • You may wish to turn the ham onto its flat end and cut around it starting at the bottom.
  • You can then spin the ham as you slice around and work your way up.
  • Mix the ingredients together in a small bowl.
  • (I like to make double this recipe for a nice large ham).
  • Lay down a couple sheets of wax paper onto a flat surface, such as your kitchen counter.
  • Pour the sugar mixture onto the wax paper and spread it around evenly.
  • Pick up the ham and roll it over the sugar mixture so that it is well coated.
  • Do not coat the flat end of the ham, just the outer surface which you have sliced through.
  • Again, I like to stuff some of the sugar mixture INSIDE the slices.
  • Turn the ham onto its flat end on a plate.
  • Use a blow torch with a medium-size flame to caramelize the sugar.
  • Wave the torch over the sugar with rapid movements, so that the sugar bubbles and browns, but does not burn.
  • Spin the plate so that you can torch the entire surface of the ham.
  • Repeat the coating and caramelizing process until the ham has been well-glazed (don't expect to use all of the sugar mixture).
  • Serve the ham cold (don't put the sugar between the slices if you plan on doing this) or re-heat (THEN put the sugar between the slices BEFORE you caramelize it) just like the real thing!
  • Don't be frightened to use the torch!
  • You can to it outside, if you wish.
  • Just set it on something fire proof and have fun blazing away!

1 pre-cooked/smoked boneless ham
2 tablespoons McCormick® black pepper
1 teaspoon kosher salt
2 tablespoons ground nutmeg
1 orange, quartered and sliced into ¼-inch-thick pieces
¼ cup whole clove
2 cups orange juice
8 cloves garlic, crushed
½ cup honey
1 ½ cups brown sugar
1 teaspoon kosher salt
½ teaspoon McCormick Black Pepper

Steps:

  • Place the ham on a cutting board, cut-side down, and score the surface in a crosshatch pattern about 1 inch wide and ½ inch deep.
  • In a small bowl, combine the McCormick® Black Pepper, salt, and nutmeg. Rub the spice mixture all over the ham.
  • Use the cloves to pierce the orange slices into each crosshatch section of the ham. Pierce the ham with any remaining cloves and reserve any remaining orange slices.
  • Place the ham in a large bowl and cover with orange juice and garlic cloves. Cover the bowl and marinate in the refrigerator for at least 2 hours, or overnight.
  • Preheat the oven to 400°F (200°C).
  • Place the ham cut-side down in a roasting pan and pour the marinade around the ham to reach a depth of 2 inches. Cover with foil.
  • Bake the ham for 90 minutes, or until an instant read thermometer inserted into the thickest part of the ham reads 160°F.
  • Meanwhile, make the glaze. In a small saucepan, combine the honey and brown sugar and let foam and thicken into a syrup, 6-8 minutes. Whisk in the salt and McCormick Black Pepper.
  • Remove the ham from the oven. Place the ham on a wire rack on top of an aluminum-foil covered sheet tray. Remove the orange slices and cloves.
  • Reduce the oven temperature to 350°F (180°C). Pour the glaze over the ham and return to the oven to bake uncovered for 45-60 minutes, until the top is crispy and brown.
  • Remove the ham from the oven and serve warm with your favorite holiday sides.
  • Enjoy!
