HONEY BAKED APPLES
These baked apples are stuffed with cranberries and glazed with a mixture of honey and brown sugar for an extra-special treat that makes the house smell great too!

- Preheat the oven to 350 degrees F (175 degrees C).
- Core the apples, and remove the peel from the top third of each one. Place them in a baking dish, and fill the core holes with as many cranberries as you can fit.
- Meanwhile, stir together the water, brown sugar and honey in a small saucepan. Bring to a boil, stirring occasionally to dissolve the sugar and honey if necessary. Once it comes to a boil, pour the mixture over the apples.
- Bake for 1 hour in the preheated oven, basting with the juices every 15 to 20 minutes. Serve with vanilla ice cream.

- In a small bowl mix the oats, brown sugar, and pecans until well combined. Add the butter, stirring until mixed.

- In a medium saucepan, combine the apple cider, brown sugar, honey, cinnamon, salt, and pepper. Bring to a boil, reduce heat, and simmer for about 25 minutes or so, or until mixture is syrupy and reduced to about 2 2/3 cups.
- Preheat the oven to 350 degrees F. Put the apples, cut side down, in a 12-inch baking pan. Distribute the raisins, apricots, cloves, star anise, and cinnamon sticks, if using, over the apples. Pour the hot syrup over the apples. Cover the pan with aluminum foil.
- Bake 25 to 30 minutes, or until the apples are almost tender when pierced with the tip of a sharp knife. Remove from the oven, turn the apples over, add the brandy. Baste apples with the apple cider and apple brandy many times, allowing the apples to absorb the flavor. Let the pan stand, covered, for 15 minutes. Serve baked apples with the liquid and dried fruits spooned over them in a bowl. Served with whipped heavy cream or ice cream and a sprinkle of powdered sugar.

- Soften cream cheese.
- In a bowl, mix cranberry, apple and pumpkin puree. (Bistro 1896 uses locally grown apples and pie pumpkins.).
- Lay out wonton wrappers.
- Place a dollop of cream cheese and the pumpkin, cranberry and apple mixture in the center of each wonton.
- Sprinkle cinnamon and brown sugar to taste.
- Lightly moisten the edges of each wonton wrapper and fold into triangles, then fold back the long ends of the triangle and pinch together.
- Fry wontons in 350 degree oil for 5-6 minutes.
- Take out of oil carefully and drain excess oil from wontons.
- Let wontons rest a minute or two before serving.
- Create honey-orange sauce by combining honey and orange slices. Cook over medium heat until thickened, stirring often.

BAKED CRANBERRY APPLES

- Preheat oven to temperature 350°F. Cut 1/2" top off the stem end of the apples. Remove the stems, leaving a small hole into which you can insert a cinnamon stick. Core the apples with a melon baller. Discard cores. Scoop out the inside of the apples, being careful not to pierce the skin. Chop the flesh. Set aside.
- Combine the cranberries, raisins, chopped apple flesh, orange juice, honey, margarine, nutmeg, vanilla, and orange peel in a medium bowl. Stuff this mixture inside the hollowed-out apples and place in lightly greased oven-proof dish. Replace cap on each apple, with a cinnamon stick through the stem opening.

- Chop marzipan into small chunks and mix with the cranberries, flaked almonds and honey.
- Core apples and mark a line around the circumference of each using a sharp knife. Set the apples in a shallow ovenproof dish that fits them snugly and stuff the cavities with the cranberry mix.
- Pour the water into the dish. Bake at fan 170C/conventional 190C/gas 5 for 30-40 minutes until the apples are tender. Cool for 10 minutes before serving with custard or clotted cream.
