Steps:
- Preheat the oil in a deep-fryer until sizzling, about 360 degrees F.
- Peel and slice the vegetables into very thin slices, preferably on a mandoline. Fry the chips in batches, stirring them a bit when you add them so they don't stick together. When crisp, after about 2 to 3 minutes, remove with tongs or a spider to a tray lined with paper towels to drain the excess oil. Season the chips immediately with salt, and pepper. Serve.

Steps:
- Preheat the oven to 300*F. Line 2 baking sheets with parchment paper.
- With a sharp knife, very carefully slice the bagels one at a time as thinly as possible, for 8 to 10 thin slices per bagel. Spread in 1 layer on the prepared sheets.
- Heat the oil in a small saucepan over medium heat. When oil starts to get warm, about 1 minute, remove from the heat and add the garlic and Essence. Let sit until the garlic perfumes the oil, about 10 minutes. Remove the garlic from the oil.
- With a pastry brush, lightly brush the oil on the bagel chips. Bake until golden brown. Turn and bake on the second side until just crisp, about 5 minutes. Remove from the oven and cool on wire racks.
- To serve, arrange the bagel chips on a platter with the creamy garlic and vegetable spread.

- Combine all ingredients thoroughly and store in an airtight jar or container. Yield: about 2/3 cup
- Creamy Garlic and Vegetable Spread:.
- In a bowl, cream together the cream cheese and sour cream. Add the remaining ingredients and mix well. Adjust the seasoning, to taste.
- Serve immediately, or cover and refrigerate until ready to serve. Bring to room temperature before serving. (The spread will keep for 3 days refrigerated.)
- Yield: about 1 1/4 cups.

VEGETABLE OR CHIP DIP
A tasty dip for veggies, potato chips, crackers, bread sticks, or chunks of a good homemade style bread. This dip is a standard at all our family and friend gatherings. It is hard to stop eating it once you start, addictive! You can make it a day ahead because the flavor is best after chilling overnight, or chill for a couple hours and eat it immediately. The yield is an estimate only.

Steps:
- Fry bacon pieces until crisp. Drain well on paper towels. Cool.
- Finely chop green onions.
- Cream the cream cheese by hand or with an electric mixer.
- Add sour cream and salad dressing. Mix well with a spoon.
- Add bacon and green onions with a spoon.
- Refrigerate a couple of hours at least, or better yet overnight, before serving.

- Using a mandoline, or a sharp knife, slice the vegetables 1/8th of an inch thick. Slice them in order from lightest colour to darkest and keep the slices separate so that the colours do not mix.
- In the meantime, add the oil to a large, wide, heavy bottomed pot or pan. Bring the temperature of the oil to 350 degrees. This is the best frying temperature.
- Drain the water from the parsnips and carefully add a few slices to the oil. Do not over crowd the oil. Add only enough slices to create a single layer.
