Homemade vanilla extract is one of the most impressive and unique foodie gifts you can give is also one of the easiest to make. Vanilla extract requires only two ingredients-vodka and vanilla beans-and about 5 minutes of prep. Just follow these step-by-step instructions.

12 whole vanilla beans, we used Tahitian vanilla beans from Tahiti but Madagascar Vanilla beans work great too
3 cups (24 ounces) flavorless vodka
(6) 4-ounce amber (or other dark glass) bottles

Steps:

Split the vanilla beans lengthwise to reveal the seeds (if the beans are taller than the bottles, cut in half to fit).
Place 2 beans in each bottle, fill with the vodka and cap to seal.
Place bottles in a dark cupboard for a month or longer, shaking every few days or so.

6 vanilla beans, split lengthwise
2 cups vodka

Steps:

Place vanilla beans in a tall jar; cover with vodka. Seal jar tightly. Let stand in a cool dark place at least 6 weeks, gently shaking jar once a week.

Using a sharp knife, split the vanilla beans lengthwise from end to end. Place the split vanilla beans in a swing-top bottle or a small canning jar.
Pour the grain alcohol over the beans. Close the lid, and shake well. Place in a cool, dark spot to infuse for at least 8 weeks, but preferably up to 6-12 months. Shake daily (or as often as you remember).
The vanilla is ready to use when it is dark in color and strong in flavor. As you use the vanilla, top off the bottle with more grain alcohol to continuously brew more vanilla. Discard the beans and add new ones when the vanilla starts to taste weak.
