HOMEMADE STRAWBERRY JELLO RECIPE
If you love jello but not the congealed red #40 & artificial flavorings found in boxed versions, you're going to love this healthy strawberry jello recipe.

Steps:
- Place the strawberries, water, honey, and lemon juice in a blender and puree until smooth.
- Scoop out 1/4 cup of the puree and place it in a small bowl. Sprinkle the gelatin over the bowl and mix it with the puree until well-combined.
- While the gelatin is blooming, place the remaining puree in a small pot and heat over medium high heat. When the puree is hot but not yet boiling, remove it from heat.
- Immediately add the bloomed gelatin and whisk until thoroughly combined.
- Divide the jello mixture between 3-4 small glass jars. I use either 4 ounce mason jars or 7 ounce tulip jars.
- Refrigerate for 2-3 hours, or until the strawberry jello has set.

- Stir boiling water into dry gelatin in medium bowl at least 2 min. until completely dissolved. Add enough ice cubes to cold water to measure 1-1/4 cups. Add to gelatin; stir until slightly thickened. Remove any unmelted ice. Refrigerate 10 min. or until slightly thickened.
- Stir in fruit. Pour evenly into 6 dessert dishes.
- Refrigerate 2 hours or until firm.

- Remove Jello from cup and put in a large custard cup (any med. size bowl will work).
- Mash up Jell-O with a fork.
- Mix in cut up strawberries.
- Sprinkle with crushed pretzel and then add a dollop of whipped cream (cool whip would work too, I prefer Reddi Wip).
FLUFFY STRAWBERRY JELLO

- Preheat oven to 350 degrees. Spray a 9x11-inch glass baking dish with cooking spray. In a large bowl, combine pretzel crumbs, 1/3 cup sugar and melted butter. Press into baking dish in an even layer. Bake until slightly firm, about 12-15 minutes. Set on a wire rack to cool completely.
- In the bowl of a stand mixer fitted with the paddle attachment, beat the cream cheese and 3/4 cup sugar on medium speed until smooth and fluffy, about 2 minutes. Remove from the stand and fold in 1 1/2 cups Cool Whip topping. Spread in an even layer over the pretzel crust and refrigerate.
- Place Jello in a medium bowl and pour over boiling water. Whisk until jello has dissolved, about 2 minutes. Stir in the cold water and vodka. Let cool to room temperature, then pour over the cream cheese layer. Add the sliced strawberries on top. Refrigerate until jello is set, about 6-8 hours.
- Cut into 1-inch squares. Place remaining 1 cup Cool Whip is a pastry bag fitted with a large star tip. Pipe dollops on the squares and top with chopped strawberries.

STRAWBERRY JELLO SALAD
This is a recipe that I adopted. I have been making this salad for years, but we always called it "Sorority Salad" for reasons unknown to anyone! I add 1/2 to 3/4 cups chopped pecans or walnuts. This is a very refreshing salad and is good to take to covered dish dinners.

- Disolve/stir Jello in 2 cups of boiling water for 2 minutes.
- Add thawed berries and blend with hand mixer until fruit is chopped/blended well.
- Place in refrigerator for 2-3 hours or until 1/2 hardened/set.
- After 1/2 set, lightly fold in sour cream and Cool Whip.
- Place in serving dish and return to refrigerator until set (apprx. 2 hours).

- You will be using a 9x13 pan.
- Pour boiling water into gelatin, stir till completely dissolved.
- Add the pineapple, juice and all and the thawed strawberries. Stir.
- Sprinkle marshmallows on top till they cover the gelatin mixture.
