Ingredients

1 teaspoon sesame oil
2 cups carrots, thinly sliced
1 1/2 teaspoons fresh ginger, grated
1 teaspoon sesame seeds, toasted and chopped
1 clove garlic, chopped
salt

Steps:

Saute carrots, garlic and ginger in sesame oil, over medium heat for about 5 minutes.
Add sesame seeds.
Cover and saute for another 3 minutes or until carrots are heated but still crisp.
Serve.

Ingredients

1 tablespoon vegetable oil
1 tablespoon peeled and grated ginger
1 medium carrot, peeled and sliced into thin rounds
12 ounces haricot vert or standard green beans, trimmed
1 tablespoon light soy sauce
1 teaspoon rice vinegar
Toasted sesame oil, for drizzling
Toasted black sesame seeds, for garnish

Steps:

Heat a wok over high heat, and then add the vegetable oil. Add the ginger and cook for 30 seconds. Add the carrots and green beans and stir-fry for 2 minutes (adding a splash of water if necessary to facilitate cooking). Season the vegetables with the light soy, rice vinegar and a drizzle of toasted sesame oil. Garnish with a sprinkling of the toasted white and black sesame seeds.

Ingredients

1 (12 ounce) package peeled baby carrots or 2 medium regular carrots, julienned
2 cups broccoli florets
1 tablespoon light margarine
1/2 cup diagonally sliced celery
1/4 cup chopped sweet red pepper
1 tablespoon sesame seeds
2 teaspoons minced fresh ginger
salt & freshly ground black pepper

Steps:

In a medium saucepan of boiling water, simmer carrots, partially covered, for 5 minutes.
Add broccoli and continue cooking 3 minutes or until veggies are tender.
Drain well.
Meanwhile, in a large frypan, melt margarine over medium heat.
Saute celery, red pepper, sesame seeds and ginger, 3 minutes or until tender.
Add carrots and broccoli to frypan and stir fry until heated through.
Season with salt and pepper.
