This is a super easy recipe to throw together and, with the addition of different vegetables, can make lots of variations.

Steps:
- Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain and reserve.
- In a large skillet, heat oil and sausage; cook through until no longer pink. During the last 5 minutes of cooking, add onion and garlic to skillet. Add broth, basil and tomatoes with liquid.
- Cook over medium heat for 5 minutes to slightly reduce. Add chopped spinach; cover skillet and simmer on reduced heat until spinach is tender.
- Add pasta to skillet and mix together. Sprinkle with cheese and serve immediately.

ITALIAN SAUSAGE PASTA
A rich and flavorful homemade sauce full of Italian sausage, herbs and Parmesan cheese is tossed with tender pasta for an easy dinner that the whole family will love!

Steps:
- Heat olive oil in a large Dutch oven over medium heat. Add the onions and bell peppers; sauté for about 5-7 minutes (or until tender). Add the sausage and cook for 7-8 more minutes, until browned. Add garlic, 2 teaspoons kosher salt, ½ teaspoon black pepper, and crushed red pepper. Cook, stirring constantly, for 1 minute.
- Add wine; bring to a boil, scraping bits from the bottom of the pan. Add crushed tomatoes, cream and tomato paste. Bring back to a boil; reduce heat to low, and simmer for 20-25 minutes (until sauce thickens). Remove from heat; stir in parsley, basil and Parmesan.
- Meanwhile, cook pasta in a large pot of salted boiling water according to package instructions for al dente. Drain. Transfer pasta to the sauce, stir to combine. Let the pasta continue to cook in the sauce for another minute or two so that it absorbs all of that great flavor. Serve in individual bowls and garnish with additional herbs or grated Parmesan, if desired.

- Cook pasta according to package directions. Meanwhile, in a large nonstick skillet, saute the sausage, mushrooms, garlic and basil in oil until mushrooms are tender. HOMEMADE SAUSAGE WITH PASTA

- Clean and wash the broccoli rabe. Bring 2 quarts of water to a boil, add 1 teaspoon salt and put the broccoli rabe in to cook for 4 to 5 minutes. Strain the broccoli rabe and submerge in cold

- water to cool quickly. Drain the rabe. Place the sausage links in a skillet and begin to brown slowly, over low heat, partially covered with a lid. They should cook in about 20 minutes. Put 6 quarts of water in a pot to cook the pasta. Bring the water to a boil and add 2 tablespoon of salt. Add the pasta and cook according to package directions. When the pasta is nearly cooked add the rabe to the sausage along with the red pepper flakes. Toss the rabe and sausage together and cover the pan again. Drain the pasta, reserving 1 cup of the cooking water, and put the pasta back into the pot along with the olive oil Set it over low heat and cook for a moment before pouring the pasta into a serving bowl. Top with the sausage and rabe and plenty of grated cheese and ground black pepper. The reserved water may be used to moisten the dish if necessary.
- Trim the meat of all gristle but remember to not trim too much fat as the mixture should be approximately 80 percent lean to 20 percent fat. Cut the meat into chunks and pass through a meat grinder using the largest die. Pass the meat through again, this time using the medium die. Pass the sausage meat through one more time on this medium die. In a large bowl mix the ground meat with the water, salt, pepper, fennel seed, cheese and parsley. Wash the casing well under cold running water and allow water to run through the casing so that any holes may be detected. Fit the grinder with the sausage stuffing attachment and place the casing over the stuffing tube by feeding it on and bunching it up on the tube.. Place the meat in the hopper on top and begin to push the sausage meat down into the hopper so that it begins to feed into the casing. As the meat feeds into the casing, allow the casing to slide into your open hand. Catch the stuffed sausage as it comes out of the machine. Go at a slow and steady pace so that the sausage is fully, evenly, stuffed and without air pockets. To make individual links, twist the sausage every few inches as it is stuffed and let the finished ring of sausage lay on the work space as you finish the process. Continue until the meat is finished. Keep refrigerated and use with in one week or freeze for later use.

PASTA WITH WHITE SAUSAGE SAUCE
Pasta and sausage are a combination that usually suggests a dense, heavy tomato sauce. But it can also mean the very opposite. Sausage, used in small amounts, can contribute to a relatively light, almost delicate pasta sauce. In fact, sausage is a gift to the minimalist cook: it comes already seasoned, and its seasoning can be used to flavor whatever goes with it. The technique is simple. It's easiest to start with bulk sausage, or patties, because then there's no need to remove the meat from a casing. (Though that is easy to do: Just slit the casing with a sharp knife and peel it off.) You crumble the sausage into a little melted butter, which adds smoothness to the final sauce (omit it if you prefer), add water or other liquid and finish with grated Parmesan.

- Bring a large pot of salted water to a boil for the pasta.
- Put the butter in a medium skillet over medium-low heat. As it melts, crumble the sausage meat into it, making the bits quite small, 1/2 inch or less. Add the liquid, and adjust the heat so that the mixture simmers gently.
- Cook the pasta until it is tender but not at all mushy. Reserve about 1/2 cup of the pasta cooking water.
- Drain the pasta, and dress with the sauce, adding a little of the reserved cooking liquid if necessary. Toss with salt, pepper and Parmesan, and serve.

- Preheat oven to 350 degrees F (175 degrees C). Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
- Heat oil in a large, deep skillet. Place sausage and onion in the skillet and cook over medium high heat until evenly brown. Drain excess fat. Pour in wine, and cook for 1 minute, stirring, to deglaze the pan. Stir in tomato sauce, diced tomatoes and tomato paste. Simmer for 10 minutes, stirring occasionally. - Heat the olive oil in a heavy-based pan (preferably not non-stick) and add the sausages. Fry for about 8 mins until golden and cooked through. Tip in the garlic and fry for 1 min. Pour in the white wine and boil until it has reduced by half.
- Stir in the tomato purée and tomatoes, and season to taste. Simmer for 15 mins until the sauce is rich and thick.
- While the sauce cooks, boil the pasta according to pack instructions and drain. Stir in the basil if using, and cooked pasta into the sauce, then serve in bowls with grated or shaved Parmesan.

- Put a large pan of water on to boil.
- Heat 1 tbsp olive oil in a large frying pan and fry chunky pieces of 8 pork sausages on a fairly high heat until they are golden brown all over.
- Now turn the heat down and add 1 large chopped onion and 2 crushed garlic cloves, cooking them until they have softened.
- Stir in 1 tsp chilli powder and 400g chopped tomatoes with the sausages, bring the sauce to the boil then turn the heat down and let it bubble for about 10 minutes while you cook the pasta.
- Drop 300g pasta into the pan of boiling water and cook according to the pack instructions.
- Drain the pasta, then tip it into the frying pan with the sausage sauce, mixing well to coat. Dish up immediately with crusty bread.
